ROMANTIC CHICKEN MUSHROOM ROLLUPS

Steps:
- Marinate chicken in wine for a minimum of ½ hour.
- Then, remove the chicken from the marinade and pound it as flat as you can.
- Preheat oven to 350 degrees.
- Place butter and mushrooms in a frying pan.
- Heat mushrooms thru.
- Add cleaned, stemmed spinach, stir and cover.
- Turn off heat.
- Three minutes later, check the mushroom mixture and add some salt and 1 tbsp coriander, adjusting to taste.
- Place ½ of mushroom mixture on one end of a flattened chicken breast.
- Roll the chicken breast up.
- Try to tuck in the ends.
- Repeat with 2nd chicken breast.
- On a plate, mix flour, 2 tbsp coriander and ¼ tsp salt.
- Carefully dredge the chicken rolls in the flour mixture.
- Brush off any excess flour.
- Place the chicken in a small baking dish and bake for about 40 min, or until the chicken reaches an interior temperature of 188 degrees or juices stop running.
- The outside of the rolls should by golden brown.
- Slice carefully and arrange on a plate.
- Serve with the remainder of the wine you chilled after using 3 c for a marinade, (you did chill it, didn't you?) a side of rice pilaf, and a small loaf of fresh brown bread with flavored butter.

CHICKEN-AND-MUSHROOM ROLLS
This recipe takes inspiration from Chinese-style cabbage rolls. The filling is made of a savory mix of mushrooms, chicken and ham.

- Soak the mushrooms in hot water for 30 minutes; drain. Remove the stems, then dice the caps and place in a food processor. Add the chicken, ham, ginger, 2 teaspoons salt, rice wine, sesame oil, soy sauce, cornstarch and egg white; pulse 3 or 4 times to form a coarse paste. Stir in the scallions and jicama. Cover and chill for 30 minutes.
- Cut the top 3 or 4 inches off the cabbage and separate the leaves (reserve the bottom for another use). Place a heaping tablespoon of filling in the center of each leaf and roll up to enclose the filling. Place seam-side down on a plate.
- Heat 1/4 inch of oil in a large skillet over medium heat. Add the rolls and fry until the chicken is cooked through and the cabbage is golden, about 2 minutes per side. Drain on paper towels, then serve with soy sauce.

Steps:
- Season chicken with salt and pepper. Heat oil and butter in a large skillet over medium heat. Brown chicken in oil and butter for 5 to 7 minutes per side; remove from skillet, and set aside.
- Place artichoke hearts and mushrooms in the skillet, and saute until mushrooms are brown and tender. Return chicken to skillet, and pour in reserved artichoke liquid and wine. Reduce heat to low, and simmer for about 10 to 15 minutes, until chicken is no longer pink and juices run clear.
- Stir in capers, and simmer for another 5 minutes. Remove from heat; serve immediately.

- mix together the ricotta cheese, mozzarella (reserving 1/2), olives, and the herbs.
- place the pieces of chicken on a lined cookie sheet (with foil) flat.
- scoop a table spoon of the cheese mixture onto each of the chicken pieces and roll them.
- cover the chicken with tomato sauce and mozzarella cheese once rolled.
- bake for 35-40 minutes at 350 degrees.

MUSHROOM-STUFFING CHICKEN ROLL-UPS
These Mushroom-Stuffing Chicken Roll-Ups are prepared like enchiladas-only with flattened chicken instead of tortillas!

Steps:
- Heat oven to 400ºF.
- Whisk dressing and flour in medium microwaveable bowl until blended. Gradually stir in milk. Microwave on HIGH 3 to 4 min. or until thickened, stirring every 2 min.
- Prepare stuffing as directed on package; set aside. Cook and stir mushrooms in butter in skillet until tender. Add to stuffing; mix well.
- Place chicken, top sides down, on work surface; spread with stuffing to within 1/2 inch of edges. Starting at one short end, roll up each breast; place, seam side down, in 13x9-inch baking dish sprayed with cooking spray. Top with sauce and cheese; cover.
- Bake 35 to 40 min. or until chicken is done (165ºF), uncovering for the last 5 min.

LOW CARB CHICKEN ROLLUPS
I created this out of necessity when looking for a low carb version of chicken cordon swiss. It's also a modification of one I saw Tyler make on Tyler's Ultimate. He used a breading for the coating but I needed something lower in carbs. My husband thought the taste was a bit "strong" but I loved it. I hope you do as well.

Steps:
- Place chicken breast between 2 layers of clingwrap. Use a meat mallet to pound breast to a usable thickness. Repeat with each chicken breast.
- Lay slice of proscuitto ham on each breast and top with 1/2 cup of the cheese. Using the clingwrap, roll the chicken breast up keeping it contained in the wrap. Twist the clingwrap at the sides of the rolled up breast to tighten and form the roll into a compressed roll. Refrigerate an hour for so it will keep it's form.
- Melt the butter in one container.
- Combine the other breading ingredients in another container.
- Take each rollup and first dip in the butter and then in the parmesan cheese mixture. Press the cheese mixture lightly into the roll to help hold it in place.
- Bake in a 350 degree oven for about 45 minutes until chicken is cooked through.
- Preparation time does not include time in the refrigerator.
