1 15-oz. can Garbanzo Beans (rinsed and drained)
1 Tablespoon Lemon Juice
1/2 Tablespoon Olive Oil
1 clove Garlic (minced)
2 Tablespoons raw Sunflower Seeds (substitute sesame seeds)
2 Tablespoons Red Wine Vinegar
1 teaspoon Dijon Mustard
2 Tablespoons Water
1 Tablespoon Dried Basil
1 teaspoon Dried Thyme
1/2 teaspoon Salt

Steps:

  • Blend all ingredients in a high-powered blender or food processor until smooth.
  • Serve with celery sticks or other vegetables.

Homemade Hummus with Herbs image

It's worth making hummus from scratch! If you're bored with the basic flavor of hummus, jazz it up easily with this recipe. Learn how to make delicious, creamy homemade hummus, seasoned with fresh basil, cilantro and cumin.

1 cup dried chickpeas or 2 15-ounce cans chickpeas (drained)
1 plump garlic clove
Fine sea salt
½ cup tahini
¼ cup lemon juice (plus more if needed)
1 cup fresh herbs - I like a mix of cilantro, basil and parsley
2 tablespoons extra-virgin olive oil
1½ teaspoons ground cumin (optional)
Ice cold water (as needed)
Cooked chickpeas
Paprika, smoked or sweet
Extra virgin olive oil

Steps:

  • Soak chickpeas in cold water 4 hours or overnight. Put them in a saucepan with the garlic, 2 teaspoons salt and 3 quarts water. Cook until tender. Depending on the freshness of your chickpeas, this can take 30-90 minutes. Drain. Pull out the garlic and discard. * Skip this step if using canned chickpeas.
  • Measure out 2 cups (save some of the remaining chickpeas are for garnishing the hummus) and put into a food processor, or add your canned chickpeas instead. Process with the tahini, lemon juice, herbs, olive oil, cumin and 1½ teaspoons salt.
  • Puree the mixture at least 3 minutes, dribbling in cold water 2 tablespoons at a time until velvety smooth.
  • To serve, scoop some hummus onto a shallow bowl or plate and spread it out with the back of a spoon. To garnish, dust with paprika, drizzle with olive oil, and top with some chickpeas and a few herb sprigs.

3 cups cooked garbanzo beans
1 roasted shallot, see note
3 tablespoons tahini
zest and juice of one lemon
1 teaspoon sea salt
1 teaspoon fresh ground pepper
1 pinch red pepper flakes
1/3 cup extra virgin olive oil
3 tablespoons fresh parsley
3 tablespoons fresh dill
3 tablespoons basil leaves
1/2 an English cucumber, sliced thin
1 tablespoon fresh parsley, finely chopped
1 tablespoon champagne vinegar
1/3 cup crumbled feta cheese (optional)

Steps:

  • In a food processor, combine the beans, roasted shallot, tahini, lemon zest and juice, salt, pepper and red pepper flakes and pulse to combine. With the motor running, stream in the olive oil and stop at desired smoothness (I like mine a bit textured). Tear the herbs up a bit with your fingers and add to the hummus, pulse a few times until combined. Add more if you'd like. Taste for salt and pepper; and, if you'd like, thin it out with a few tablespoons of water or more lemon juice.
  • Note: For the roasted shallot, peel and cut it into quarters. Rub a bit of olive oil on the surface and roast at 400 F for about 20 minutes. This is quickest in a toaster oven, and can be done in advance. If you are short on time, 2 cloves of garlic make a fine alternative.
  • The following is an optional garnish for the hummus plate. It is not completely necessary, but adds a little something different. Slice the cucumber paper thin and toss it with the chopped parsley and vinegar. Put the hummus on a serving plate, top with the cucumber mix, feta cheese and fresh herbs for garnish.
