HOMEMADE GRAVY
Ina Garten's Homemade Gravy recipe, from Barefoot Contessa on Food Network, gets its flavor from leftover turkey drippings and a touch of cognac.

Steps:
- In a large (10 to 12-inch) saute pan, cook the butter and onions over medium-low heat for 12 to 15 minutes, until the onions are lightly browned. Don't rush this step; it makes all the difference when the onions are well-cooked.
- Sprinkle the flour into the pan, whisk in, then add the salt and pepper. Cook for 2 to 3 minutes. Add the hot chicken stock mixture and Cognac, and cook uncovered for 4 to 5 minutes until thickened. Add the wine and cream, if desired. Season, to taste, and serve.
HOMEMADE GRAVY
Steps:
- In a large (10- to 12-inch) saute pan, heat the chicken drippings on medium-low heat. Add the onions and cook for 12 to 15 minutes, until the onions are caramelized.
- Whisk the flour, 1 teaspoon salt and 1/2 teaspoon pepper into the pan and cook for 2 to 3 minutes. Add the hot chicken stock and brandy, and cook uncovered for 4 to 5 minutes, until thickened. Add the cream and serve immediately or refrigerate and reheat before serving.

- In a small bowl, combine the bouillon, flour and pepper. Store in an airtight container in a cool dry place for up to 6 months.
- To prepare gravy: In a small saucepan, melt butter. Add 2 Table gravy mix.
- Cook and stir until lightly browned, about 1 minute.
- Whisk in water until smooth. Bring to a boil, cook and stir for 2 minutes or until thickened.
- Variations: On the Internet I have seen some variations to this by adding a little sage and thyme, or poultry seasoning (chicken gravy only), and/or garlic powder, and/or onion powder, or using milk instead of water.

READY GRAVY MIX
I got it from Pinching Your Pennies. The recipe calls for Additional Ingredients for each batch. As this is not my recipe I'm unsure what the additional ingredients are. I'm gonna guess things such as onions or mushrooms. When I made this I used the chicken bouillon and I cut the recipe in half. I added 1/4 teaspoon more black pepper, 1/4 teaspoon salt and 1/4 teaspoon onion powder to suit my family's taste. My family thought it was really good gravy.

- Melt butter in a saucepan over medium heat. Add flour and whisk together, making sure to get all visible lumps.
- Add salt and pepper.
- Cook over medium heat for 5 minutes or until mixture starts to turn light brown, be sure to stir constantly.
- Turn heat to low and SLOWLY add broth, stirring constantly.
- It will spit & bubble so be careful.
- Add Kitchen Bouquet.
- Turn heat back up to medium.
