CHUY'S STYLE SALSA FRESCO
This is a copy of the salsa found at chuy's restaurants. It's pretty spot on! BE CAREFUL with the salt and garlic salt! Do to taste!

Steps:
- Wash vegetables well. Stem and chop coarsely Serrano pepper. Peel and coarsely chop onion. Squeeze fresh lime juice Core and coarsely chop tomatoes Place Serrano, cilantro, onion, lime juice, salt, and garlic salt in food processor, or blender and pulse on low for five seconds. Add tomatoes and pulse on low until desired consistency. (Chuys is pretty chunky) makes 1 quart. Serve with tortilla chips and enjoy!

CHUY'S SALSA COPYCAT RECIPE | SALSA FRESCA
Fresh tomatoes, onions, cilantro, and jalapenos blended together to make pure salsa fresca perfection. No need to go to Chuy's Tex Mex Restaurant just for salsa any more!

Steps:
- Step 1 Coarsely chop the tomatoes, onion, and jalapenos. Remember to take the seeds out of the jalapeno if you are spice sensitive.
- Step 2 Combine all ingredients in blender and blend until you achieve puree consistency.
- Step 3 Taste and adjust salt and spice. Add more salt for a more salty salsa and more jalapeno for more spice.
- Step 4 Serve with chips, over nachos, in a burrito or taco.
- Step 5 Store leftovers in a glass jar in the refrigerator for up to 5 days.
- Step 6 Enjoy!
FRESH SALSA FRESCA
Simple and flavorful fresh salsa. Adjust the individual amounts as desired. Serve as a topper for tacos, burritos, etc or just eat with chips.

- Mix all ingredients and let sit for 15 minutes or so, to let flavors meld.
- Try to use kosher salt rather than table salt. It's milder and sweeter.
- Note: To make ahead, do your chopping the day before and combine ingredients 20 minutes before serving.

SALSA FRESCA
This quick fresh tomato salsa will always be best when tomatoes are in season. But you can pump up the flavor with a little lime juice if the flavor of your tomatoes is a little dull. Juicy tomatoes will yield a more watery salsa than pulpy roma tomatoes.

- Place minced onion in a bowl and cover with cold water. Add vinegar and let sit for 5 minutes or longer. Drain and rinse with cold water.
- In a medium bowl, combine remaining ingredients and stir in onions. (If your tomatoes are full of flavor, you won't need lime juice.) Ideally, let stand at room temperature for 15 to 30 minutes before eating so that flavors will blend and ripen.

CHEVY'S SALSA - ORIGINAL RECIPE
My buen amigo Pablo works at Chevy's and was nice enough to share this with me. He said you can adjust the number of peppers to you "heat" liking. There is no liquid smoke added like other knock offs claim. The key to the smokey flavor is the char-grilling that takes place first.

Steps:
- Grill on open flame tomatoes, onion and jalapeno pepper.
- Remove when slightly chared and tomatoes soften and split.
- Remove from grill and let cool.
- Drain accumulated liquid.
- Remove stems from jalapenos and end core ends of tomatoes.
- Place tomatoes, onions, jalapeno pepper, and all remaining ingredients into blender.
- Blend until desired consistancy (approx 10 seconds).
- Pour into container and chill.
- Serve and enjoy with your favorite chips.
