PINK LEMONADE CAKE FROM SCRATCH

Steps:

• Preheat the oven to 350 degrees
• Grease and flour two 8 x 2 inch round pans
• In the bowl of your mixer add the dry ingredients, flour, sugar, salt and baking powder. Whisk to combine dry ingredients for 30 seconds.
• In a separate bowl, add the eggs, Pink Lemonade concentrate, lemon extract, zest & milk.
• With the mixer on low speed, add the slices of butter a few pieces at a time to the dry ingredients. Increase the mixer to medium speed and beat until the dry ingredients look crumbly like coarse sand. Scrape sides and bottom of the bowl.
• Method is important when using Reverse Creaming. With the mixer on low speed SLOWLY ADD 1/2 of the egg mixture, increase to medium speed for 1 1/2 minutes. The batter will become thick and fluffy. Scrape the bottom and sides of the bowl. ADD THE PINK GEL COLOR, Add the remaining egg mixture in 2 pourings, beating for 20 seconds after each addition.
• Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted into the center comes out clean or with just a few crumbs attached.
• Let the cakes cool in the pan 10 minutes, then turn out.
• Works well for cupcakes
• Makes 7 cups batter
• Cut butter into 1/2 inch slices and add to the bowl of your mixer, beat until smooth.
• Cut the cream cheese into pieces and add to the butter, beating until blended.
• Add the lemon juice and lemon zest. 1 teaspoon lemon extract, optional for a stronger lemon flavor.
• Gradually add powdered sugar and beat until well blended.

PINK LADY COCKTAIL

Steps:

• Pour the egg white, grenadine syrup, half-and-half, and gin into a cocktail shaker over ice. Cover, and shake like crazy until the outside of the shaker has frosted. Strain into a chilled glass to serve.

PRETTY IN PINK PUNCH

Steps:

• 1. The night before, I usually make an ice ring and ice cubes with the juice to keep the punch cold for the party.
• 2. Add the frozen five alive, 1/2 the bottle of 7-UP, Red Grape Juice and mix up. Smash the five alive juice if need be till it is slushy. Next spoon your raspberry sherbert into the punch, pour the rest of the pineapple juice. Top it with the ice ring and ice cubes if you made them. Add remaining 7-UP.

PINKY LADY LEMONADE COCKTAIL

Steps:

• Prepare pink lemonade by diluting with water per the instructions on container.
• In a glass 3/4 filled with ice,pour schnapps & vodka.
• Add lemonade and a splash of ginger ale, stir.
• Garnish with orange slice if desired.

THE COSMO (& MORE PINK COCKTAILS!)

Steps:

• Place the vodka, cranberry juice, Cointreau, lemon juice, and syrup in a cocktail shaker with ice. Shake 15 seconds until cold. Strain the liquid into a martini glass.
• Squeeze with the lime wedge and serve, garnished with a lime wheel if desired.

PINK LADY COCKTAIL

Steps:

• Put two coupe or cocktail glasses in the fridge to chill. Pour the gin and grenadine into a cocktail shaker, then fill with ice. Shake until the outside of the shaker feels ice-cold. Strain the mixture into a jug, discarding the ice.
• Tip the egg white into the shaker and pour in the gin mixture. Shake well until the egg white is frothy - you can also do this in a food processor or using a hand blender, if you like. Pour the cocktail into the prepared glasses. Skewer the cherries onto cocktail sticks, if using, then use to garnish the glasses along with the pared lemon zest, if you like.
