HOME MADE FARMER'S CHEESE
My Polish friend's mother gave me this recipe years ago. She has been making this cheese forever in her house and also ate it while growing up in Poland. This is an easy home made farmer's cheese. It doesn't age well, so be sure you eat it within a week after it's made - well, if you can let it last that long. If you bake with it, it melts very beautifully. It makes a perfect soft cheese for snacking.

Steps:
- Pour the milk into a large pot, and stir in a pinch of salt. Bring to a boil over medium heat, stirring occasionally to prevent the milk from scorching on the bottom of the pot.
- When the milk begins to boil (small bubbles will first appear at the edges), turn off the heat. Stir lemon juice into the milk, and the milk will curdle. You may need to wait 5 or 10 minutes.
- Line a sieve or colander with a cheesecloth, and pour the milk through the cloth to catch the curds. What is left in the cheesecloth is the Farmer's Cheese. The liquid is the whey. Some people keep the whey and drink it, but I throw it away. Gather the cloth around the cheese, and squeeze out as much of the whey as you can. Wrap in plastic, or place in an airtight container. Store in the refrigerator.

EASY FARMER'S CHEESE RECIPE

- In a large pot, bring the milk to a boil over medium heat. Make sure to stir it occasionally so it doesn't stick or burn to the bottom.
- As soon as the milk begins to boil, turn off the heat. Using a spatula or slotted spoon, stir in the lemon juice and white vinegar. Within 5 minutes, the milk should begin to curdle.
- Line a colander with a cheesecloth and pour the milk through to strain out the curdles.
- Bundle the cloth around the cheese like a coin purse and bring out as much of the whey as you can.
- Place the wrapped cheese on a plate and weigh it down with a heavy pot or pan. Leave it to press overnight.
- Keep the farmer's cheese stored in an airtight container in the refrigerator and use it in your favorite recipes and baked goods. Enjoy!

- Heat 1 gallon milk over medium-low until you see hundreds little bubbles appear, but do not bring to a boil. (it would take 30-40 minutes). Stir occasionally to prevent the milk from scorching at the bottom of the pot.
- Once you see lots of bubbles popping, slowly add 1/2 cup distilled white vinegar, give it a gentle stir and wait for 30-60 seconds. Then stir again. The cheese will curdle (become crumbly) and the water should be lime/yellow-ish color. If it doesn’t, add a bit more vinegar until you do see that color of water. Remove from heat to cool to room temperature.
- Line a sieve or a colander with a flour sack towel. Slowly pour the cheese into the cloth to catch the curds. Gather the cloth around cheese and squeeze it as much as you can to get all the whey out. When you start seeing white-ish liquid coming out instead of lime color, you can stop there. *If saving whey (the lime water), drain the cheese into a bowl. People use whey for bread, different cooking and gardening.

- Gently heat whole milk in a large heavy-bottomed saucepan over medium to about 170°F, 12 to 15 minutes, stirring often so bottom doesn’t scorch. Stir in buttermilk; cook, gently stirring, until mixture starts to become opaque and white curds start to come together, 1 to 2 minutes. Turn off heat, and let stand on hot burner, undisturbed, 10 minutes.
- Line a fine wire-mesh strainer with 3 layers of damp cheesecloth; set strainer over a medium bowl. Using a slotted spoon, skim warm curds into cheesecloth-lined strainer. Reserve 2 tablespoons whey from pan; discard remaining whey. Let curds stand 10 minutes to allow excess whey to drain off; discard excess whey. Bring corners of cheesecloth together, and twist together tightly to remove as much whey as possible; discard whey.
- Tie loose ends of cheesecloth around the handle of a wooden spoon, creating a bundle. Suspend bundle over a bowl deep enough to allow at least 1 inch between bottom of cheesecloth bundle and base of bowl. Let drain 45 minutes; discard whey.
