HOW TO MAKE AND FREEZE PIZZA DOUGH
Steps:
- In the bowl of a stand mixer, combine yeast, warm water, and sugar, and let sit for 10 minutes. The liquid should be foamy and bubbly, indicating that the yeast is alive.
- Add the bread flour, olive oil, and salt. Stir using the dough hook or a wooden spoon, until roughly combined. Fit the bowl and the dough hook onto the stand mixer and knead on medium-low speed for 10 minutes, until smooth. Cover the bowl with plastic wrap and let rise for about 30 minutes, until the dough has doubled in size.
- Remove the dough to a lightly floured surface and divide into four even pieces. Shape each piece of dough into a ball.
- The dough is now ready to be rolled out and baked, or ready to be frozen.
- To freeze the pizza dough: place the pizza dough balls into resealable plastic bags. Make sure that if you put multiple balls of dough in one bag, you use parchment paper or wax paper to keep them separated.
- To thaw: place the pizza dough in the refrigerator the morning before you want to make dinner, then roll and bake as usual.
- To bake: preheat the oven to 500˚. Roll the thawed (or freshly made) dough and bake each pizza about 10 to 15 minutes.

- When the butter is really soft, tip it into a bowl along with the sugar. Using an electric hand whisk or exercising some arm muscle, beat together until the sugar is mixed through. Beat in the eggs, one at a time, followed by the vanilla extract and a pinch of salt, if you like. Stir in the flour and oats. The mixture will be quite stiff at this point. Now decide what else you would like to add - any or all of the flavours are delicious - and stir through.
- Tear off an A4-size sheet of greaseproof paper. Pile up half the mixture in the middle of the sheet, then use a spoon to thickly spread the mixture along the centre of the paper. Pull over one edge of paper and roll up until you get a tight cylinder. If you have problems getting it smooth, then roll as you would a rolling pin along a kitchen surface. You'll need it to be about the width of a teacup. When it is tightly wrapped, twist up the ends and then place in the freezer. Can be frozen for up to 3 months.
- To cook, heat oven to 180C/fan 160C/gas 4 and unwrap the frozen biscuit mix. Using a sharp knife, cut off a disk about ½cm wide. If you have difficulty slicing through, dip the knife into a cup of hot water. Cut off as many biscuits as you need, then pop the mix back into the freezer for another time. Place on a baking sheet, spacing them widely apart as the mixture will spread when cooking, then cook for 15 mins until the tops are golden brown. Leave to cool for at least 5 mins before eating.

- I sprinkle the yeast on the 4 cups water and add the 1/2 cup sugar and let the yeast work.
- In a large bowl or bread mixer mix powdered milk, 4 cups flour, salt and butter.
- Add the yeast water and mix (you can use an electric mixer) as you keep adding flour you will need to knead by hand (or use a bread mixer) Add flour until you get a stiff dough (you might not need all of flour, it depends on the moisture content of your flour) Knead for 15 minutes and then cover with a towel and let rest for 15 minutes.
- Divide dough into 4 equal balls.
- Smooth balls and place on a cookie sheet and cover with plastic wrap.
- Freeze balls until firm and then transfer to freezer bags and store in freezer.
- Recommended storage time 1 month.
- To Bake: remove frozen dough from freezer, open freezer bag and leave dough in bag to thaw or place on a cookie sheet and cover with plastic wrap to thaw.
- It is very important to have a plastic covering over dough to thaw (dough really dries out without the plastic covering).
- (It usually takes about 4 hours to thaw) Shape into loaves or leave round or make pizza crust or rolls or whatever you do with freezer dough.
- Let rise until doubled (1 1/2 hours) Bake regular bread loaves at 350 for 35 minutes.
- I like to brush the bread loaf with 1 beaten egg and return it to the oven for 5 minutes.
HOMEMADE FREEZER PIZZA
Instead of buying one of those freezer pizza's that you can't really choose the toppings on why not make a few yourself and have ready in the freezer! This tried-and-true method preserves a fresh, crisp crust even through the freezing process! The secret's in the cheese; when applied to the crust before any toppings or sauce, the cheese seals the crust against the moisture in the sauce. Do not thaw before baking!

- Put in automatic bread machine: place ingredients in container in following order: water, olive oil, flour, sugar, salt and yeast.
- Select Dough setting and press Start.
- Spray pizza pan with non-stick cooking spray or brush with olive oil.
- Gently stretch pizza crust to fit pan, forming raised edge at lip.
- Sprinkle crust with grated mozzarella cheese.
- Dot with browned sausage, ground beef, pepperoni and chopped and sautéed onion.
- Gently spread marinara sauce to cover cheese and toppings.
- Sprinkle with parmesan cheese and salt to taste.
- To freeze: flash freeze pizza in pan.
- When frozen, wrap in aluminum foil.
- To prepare: do not thaw pizza.
- Heat oven to 400°.
- Bake frozen pizza for 20 to 25 minutes, until crust is browned, sauce bubbles and cheese is fully melted.
