FETTUCCINE ALFREDO

Fettuccine Alfredo image

This marvelous recipe is one I got off this newsgroup some months back, but am reposting for the Alfredo request since I have no idea if the original poster is still around to see the new request. Since it isn't mine, I've also included the original poster's notes and attribution. Yummy stuff! Introduction: This is the real thing. You will not find a better Fettuccine Alfredo other than at Alfredo's in Rome, Italy. The secret to his sauce is in the Parmigiano-Reggiano cheese (don't even try this recipe without it), the balance of the pepper and nutmeg. For some reason restaurants never get it right. Be warned that the sauce is heavy. This recipe serves 2. Recipe by Ricardo Batista Fettuccine Alfredo

CHICKEN FETTUCCINE ALFREDO

Chicken Fettuccine Alfredo image

Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 8

Kosher salt and freshly ground black pepper
12 ounces fettuccine
Olive oil, for tossing
12 ounces boneless, skinless chicken breast (about 2)
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
  • Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
  • Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.

CLASSIC FETTUCCINE ALFREDO

FETTUCCINE ALFREDO

Fettuccine alfredo image

Hankering for a comforting bowl of pasta in creamy sauce? This sumptuous Italian dish is for you. It takes just 25 minutes so it's an easy midweek meal

Provided by Orlando Murrin

Categories     Dinner, Lunch, Main course, Supper

Time 25m

Number Of Ingredients 7

227g tub clotted cream
25g butter (about 2 tbsp)
1 tsp cornflour
100g parmesan, grated
freshly grated nutmeg
250g fresh fettuccine or tagliatelle
snipped chives or chopped parsley, to serve (optional)

Steps:

  • In a medium saucepan, stir the clotted cream, butter and cornflour over a low-ish heat and bring to a low simmer. Turn off the heat and keep warm.
  • Meanwhile, put the cheese and nutmeg in a small bowl and add a good grinding of black pepper, then stir everything together (don't add any salt at this stage).
  • Put the pasta in another pan with 2 tsp salt, pour over some boiling water and cook following pack instructions (usually 3-4 mins). When cooked, scoop some of the cooking water into a heatproof jug or mug and drain the pasta, but not too thoroughly.
  • Add the pasta to the pan with the clotted cream mixture, then sprinkle over the cheese and gently fold everything together over a low heat using a rubber spatula. When combined, splash in 3 tbsp of the cooking water. At first, the pasta will look wet and sloppy: keep stirring until the water is absorbed and the sauce is glossy. Check the seasoning before transferring to heated bowls. Sprinkle over some chives or parsley, then serve immediately.

FETTUCCINE ALFREDO

Fettuccine Alfredo image

I can't remember where I came across this recipe but it was on the web somewhere. There isn't another exactly like it here at recipezaar. I like it because it doesn't use cream cheese which I think is cheating a bit. I don't think you would find cream cheese in the traditional italian dish. This dish requires constant attention so be advised!

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 8

1/2 cup butter, no substitutes
1 pint heavy whipping cream
1 teaspoon garlic powder
salt and pepper
1 dash cayenne pepper
2/3 cup grated parmesan cheese
16 ounces fettuccine
chopped parsley (to garnish)

Steps:

  • In a 2 quart saucepan over medium-low heat melt butter; add cream, garlic powder, salt, and peppers; simmer for 20-30 minutes stirring constantly, until thick.
  • Meanwhile, cook fettuccine noodles according to package directions, coordinating so that the sauce and noodles are done about the same time. This is important because if the sauce cooks too long it will separate and though it will still taste great it won't look pretty!
  • Remove sauce from heat and stir in cheese. Do not heat sauce after cheese has been added.
  • Serve sauce over hot fettuccine noodles and sprinkle with parsley if desired.

EASY CHICKEN FETTUCCINE ALFREDO RECIPE

Easy Chicken Fettuccine Alfredo Recipe image

Classic comfort food fettuccine alfredo that is ready to eat in about 30 minutes.

Provided by Joe Boyle

Categories     Main Course

Number Of Ingredients 10

2 chicken breasts, boneless and skinless (20 oz.)
1 tbsp olive oil
1 tsp sweet paprika
8 oz fettuccini pasta
4 tbsp salted butter
1 tbsp minced fresh garlic, 3 cloves (or 2 teaspoons garlic powder)
1 1/2 cups heavy cream
1 1/4 cups grated fresh Parmesan cheese
Kosher salt and black pepper to taste
chopped parsley for garnish

Steps:

  • Start a large pot of water with 2 teaspoons of salt to boil. Cook the fettuccine according to package instructions until al dente. Drain the pasta with a strainer, then place it back in the pot, covered with a lid to keep warm.
  • Slice each chicken breast into two pieces by cutting through the center of the breast similar to a butterfly cut. Season all sides of the chicken by sprinkling with kosher salt, black pepper, and sweet paprika. Heat a large skillet to medium-high heat and add 1 tablespoon of olive oil. Place all 4 chicken pieces into the skillet and cook for 4 minutes. The chicken should be a nice golden brown. Turn the chicken to the second side and cook for 4 more minutes. The interior temperature should be at least 140 degrees F. Remove the chicken from the skillet and let it rest on a plate tented with aluminum foil.
  • In a separate large skillet add the butter to melt on medium temperature. Once the butter has melted, add in the minced garlic and cook it for 30 seconds.
  • Pour in the cream and stir it occasionally so it doesn't scorch and bring it to a slow boil. Turn off the heat and add in the grated Parmesan a little at a time and stir it to melt. Continue until all the cheese has been incorporated and melted. You may have to turn the heat on low if the sauce cools too much. Taste the sauce and add salt and black pepper as desired.
  • Then add all of the pasta to the sauce and stir it to coat. Cut the chicken into bite sized pieces and place them into the skillet. Serve the chicken fettuccine alfredo hot, right out of the skillet.
