DULCE DE LECHE BARS
A creamy center fills a shortbread-like buttery crust with a crumble-pecan coconut topping. This is a favorite with my family, boyfriend and at my workplace (a bakery!). Best served cool or room temperature.

- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking pan thoroughly.
- Blend butter and sugar with an electric mixer until combined and creamy. Add egg and vanilla extract; beat until incorporated. Scrape down the sides of the bowl and beat again. Combine flour and salt. Add to the butter mixture and mix until a ball of dough forms.
- Press 2/3 of the dough into the bottom of the baking pan.
- Bake in the preheated oven until set and light brown, about 20 minutes.
- Pour dulce de leche over the crust, trying to keep the edges mostly bare.
- Add coconut and pecans to the remaining dough and mix until incorporated. Crumble mixture over the dulce de leche, pressing it lightly over the top.
- Bake until lightly browned, about 15 minutes. Let cool completely before cutting into bars.

TWIX LOVER'S CAKE
Take your favorite candy bar to the next level with this mousse cake that really revels in its signature elements: milk chocolate, caramel and cookie crunch.

- Preheat the oven to 350 degrees F. Spray a 9-inch springform pan with cooking spray.
- Prepare the cake according to the package directions and bake in the prepared pan until a toothpick inserted in the center comes out clean, about 35 minutes. Let cool for 10 minutes in the pan, release the clasp on the collar and remove the cake to a cooling rack to cool completely, about 1 hour. Cut the cake in half horizontally so you have two 9-inch round cakes. Place the bottom half back in the springform pan and close the clasp on the collar. Wrap the other half in plastic wrap and set aside to use later.
- Meanwhile, make the mousse: Add the gelatin to a small bowl. Stir in 1/4 cup warm water and let sit for 5 minutes. Whisk the sugar, egg yolks and 1/2 cup heavy cream in a large heatproof bowl set over a pot of simmering water (do not let the bowl touch the water). Cook, whisking constantly, until pale yellow and thickened, 6 to 8 minutes. Add the gelatin and whisk until completely dissolved. Add 1 cup chocolate chips and whisk until melted. Remove the pan from the heat.
- Beat 1 cup heavy cream in a large bowl with an electric mixer on medium speed until stiff peaks form, 2 to 3 minutes. Fold into the chocolate mixture and pour over the top of the cake in the springform pan. Refrigerate until the mousse is set, 2 hours and up to overnight.
- Microwave the remaining 1/4 cup heavy cream in a small microwave-safe bowl until hot and bubbling, 1 minute 30 seconds. Place the remaining 3/4 cup chocolate chips in a medium heatproof bowl and pour the hot cream over the top. Let sit for 5 minutes, then stir until smooth. Reserve 1/4 cup of the ganache and pour the rest over the top of the mousse. Smooth out with a silicone spatula and refrigerate until hardened, about 15 minutes. Top with the second cake.
- Cut 1 inch off each Twix bar, then cut the 1-inch pieces in half crosswise and set aside. Remove the cake from the pan and place on a cake stand or plate. Re-melt the reserved ganache in 30-second intervals in the microwave if needed (you want it to be thick and spreadable). Spread the backs of the large Twix pieces with 2 tablespoons of the ganache and attach them around the outside of the cake like a fence. Drizzle the remaining 2 tablespoons ganache over the tops of the Twix pieces on the cake. Refrigerate until the ganache is hard and the bars are set, about 15 minutes.
- Spread the dulce de leche on top of the cake and arrange the shortbread and remaining Twix pieces in a bulls-eye pattern. Refrigerate until ready to serve.
DULCE DE LECHE COOKIE BARS
Steps:
- Preheat the oven to 350 degrees F. Line a 9-inch-square baking dish with foil, leaving a 2-inch overhang on two sides; coat the foil with cooking spray. Pulse 2 cups flour, the butter, confectioners' sugar, 1 teaspoon vanilla and the salt in a food processor until the mixture starts clumping together, about 1 minute. Press firmly and evenly in the bottom and 1/4 inch up the sides of the prepared pan. Bake until firm and lightly browned, 25 to 30 minutes. Transfer to a rack and let cool 5 minutes.
- Meanwhile, combine the dulce de leche, heavy cream, egg yolks and the remaining 1 tablespoon flour and 2 teaspoons vanilla in a medium bowl and whisk until smooth. Pour the mixture over the crust and sprinkle with the chocolate chips and pecans. Return to the oven and bake until set around the edge but slightly jiggly in the center, 20 to 25 minutes.
- Transfer to the rack and let cool completely. Lift out of the pan using the overhanging foil. Remove the foil and cut into pieces.
DULCE DE LECHE BARS
Oatmeal-Caramel Bars. My husband loves these (and he is not a dessert eater!) Very yummy and better if you make ahead and serve 1 or 2 days later.

- Preheat over to 350. In a big bowl mix flour, oatmeal, brown sugar and salt. Cut in softened butter with pastry blender until crumbly. Save out 1 cup of mixture, press rest in a 13x9 pan. Do not grease the pan.
- Bake 10 minutes. Empty dulce de leche into microwave bowl. Heat dulce de leche in microwave on medium power until it is soft enough to spread. 2-4 minutes total- I microwave for 45 seconds, stir, then zap again on med power.
- Spread dulce de leche over baked crust. Sprinkle toffee bits and the 1 cup of oats mixture over that. Bake 20-25 minutes or until golden brown. Cool 15 minutes.
- Run a knife around the edge of pan to loosen. Cool completely another 30 minutes. Makes 32 bars.
DULCE DE LECHE
There are several ways to make this sweet, caramel spread. Some traditionalists favor boiling an unopened can of sweetened condensed milk on the stovetop. If you go this route, make sure there is always enough water circulating around the can. Others prefer the ease of the oven method, which is slightly faster, too.

- For the stovetop method: Remove the label from the can of sweetened condensed milk. Place 3 to 4 forks upside down on the bottom of a large 6- to 8-quart pot. Place the unopened can on top of the forks and cover with water by a few inches. (The forks help to prevent a vacuum between the bottom of the can and the pot.) Place the pot over high heat until it reaches a simmer, then lower the heat to medium-low or low to maintain a steady simmer for about 3 hours. Add more water to the pot if necessary to ensure that the can is submerged at all times. Let the can cool to room temperature in the water before removing. Open the can and scoop out the contents. The dulce de leche should be dark and caramelized.
- For the oven method: Preheat the oven to 425 degrees F. Place a shallow baking dish in a roasting pan. Pour the sweetened condensed milk into the baking dish and cover the dish with foil. Transfer the roasting pan to the oven and add enough hot water to reach halfway up the sides of the baking dish. Bake until the dulce de leche is dark and caramelized, 60 to 75 minutes, checking the water level occasionally and adding more if needed. Let cool, then whisk until smooth.
- Transfer the dulce de leche to an airtight container, put plastic wrap directly on the surface and refrigerate for up to 2 weeks.
HOMEMADE DULCE DE LECHE
Below are two different ways to make this delicious caramel spread: One is more classic-cooking down milk and sugar-but it requires a fair amount of attention and stirring. The other uses sweetened condensed milk and a long, though mostly unattended, time in the oven.

- Classic menthod:
- Stir together 4 cups milk, 1 1/4 cups sugar, and 1/4 teaspoon baking soda in a 3- to 4-quart heavy saucepan. Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until caramelized and thickened, about 1 1/2 to 1 3/4 hours. (After about an hour, stir more often as milk caramelizes, to avoid burning.) Stir in 1 teaspoon vanilla. Transfer to a bowl to cool. Makes about 1 1/2 cups.
- Sweetened condensed milk method:
- Heat oven to 425°F with rack in middle. Pour the contents of 1 (14-ounce) can sweetened condensed milk into a 9-inch deep-dish pie plate and cover tightly with foil. Set plate in a roasting pan and add enough hot water to pan to reach halfway up pie plate. Bake milk in middle of oven 45 minutes. Check water level and add additional, if necessary, then continue to bake 45 minutes more, or until milk is thick and brown. Remove pie plate from water bath and cool, uncovered. Makes about 1 1/4 cups.

DULCE DE LECHE BARS
These bars are so very delicious! A little is a lot - if you get my drift? Found this one on the Pillsbury site, as well. We tried these because we were able to do a lot of experimenting during all the Holidays and we are now settling back to normal, with a bunch of new recipes added to our repertoire. This was prepared at the Pillsbury test kitchens and they named these very, very rich Mexican-inspired bars as a favorite. I did not include the cooling time of 2 hours & 15 minutes.

- Prehaet oven to 350°F.
- Break up 1 roll of cookie dough into large bowl.
- Add 3/4 cup of the oats, 1/3 cup brown sugar, and 1 teaspoon vanilla; mix well.
- With floured fingers, press dough mixture evenly in bottom of ungreased 15x10x1" baking pan to form crust.
- Bake 13-18 minutes or until lightly browned.
- Meanwhile, break up remaining cookie dough into same bowl.

- Put the sugar in a large saucepan. Turn the heat to a medium temperature and carefully melt the sugar. Gently tilt the pan as the sugar melts, rather than stirring, as it will adhere to a spoon or spatula.
- When the sugar is melted, add the butter and stir into the sugar. It will bubble, so take care. Next, add the milk a little at a time, stirring continuously.
- Finally, add the can of condensed milk and stir well until it is fully incorporated. Keep stirring as the dulce de leche bubbles and thickens over a medium heat. It will need a further 5-10 mins of cooking. It will turn a darker shade of brown and take on a slight orange-red hue as it darkens. It should be thick enough to leave a clear channel in the pan when a spoon is run through and then add a pinch of salt. It will firm up as it cools. The dulce de leche can be stored in a jar in the fridge and will keep for up to a month. If not storing in a jar ensure it's covered so a skin doesn't form.

- Make shortbread crust:
- Preheat oven to 375°F with rack in middle. Butter a shallow 9- to 9 1/2-inch square baking pan (1 to 1 1/2 inches deep). Line bottom and 2 sides with parchment paper, leaving an overhang. Butter parchment.
- Blend together butter, brown sugar, vanilla, and salt in a bowl with a fork. Sift in flour and blend with fork until a soft dough forms.
- Spread dough evenly in baking pan using an offset spatula or back of a spoon, then prick all over with fork.
- Bake until golden, 15 to 20 minutes, then cool completely in pan on a rack, about 30 minutes.
- Make chocolate dulce de leche:
- Bring cream and dulce de leche to a simmer in a small heavy saucepan, stirring with a wooden spoon until dulce de leche has dissolved.
- Whisk together yolks in a bowl, then slowly whisk in hot cream mixture. Return to pan and cook over medium heat, stirring constantly, until pan is visible in tracks of spoon and mixture registers 170°F on an instant-read thermometer. Remove from heat and whisk in chocolate until melted.
- Make bars:
- Pour chocolate mixture over cooled shortbread and chill, uncovered, until cold and set, about 2 hours.
- Run a small knife around edges to loosen, then transfer to a cutting board using parchment. Cut with a hot clean knife (dip in hot water and wipe clean between cuts) into 24 bars. Chill until ready to serve.

- Plan the Dulce de Leche: If you can find dulce de leche at the store, you may use that instead, but usually you have to cook your own from cans of sweetened condensed milk. The safest way: Place the sweetened condensed milk in a double boiler setup, by setting a glass heatproof bowl on top of a saucepan with two inches of simmering water. Make sure the water doesn't touch the bottom of the bowl. Cook for 3 hours, until thick and butterscotch colored, stirring every hour. You may need to refill the water once or twice. Let cool.The impatient, riskier way: You can cook the sweetened condensed milk in a nonstick saucepan over medium heat for about 15-20 minutes until thick and caramelized, but you MUST stir constantly with a spatula, or it will burn. Let cool.
- For the shortbread: it is best to use a stand mixer if you have one, but this may all be done with a hand mixer as well. In a stand mixer fitted with the paddle attachment, spread the butter around the bowl by mixing for about 10 seconds on medium. With the mixer still on, pour in the sugar, and beat until the sugar and butter are blended. Briefly beat in the egg yolk until incorporated, then mix in the flour, scraping down the sides of the bowl as needed, until a crumbly dough forms.
- Line a 9×13 inch metal baking pan with parchment paper, then press the dough out evenly using your fingertips. Prick the dough all over with a fork, and bake for 20-22 minutes, until lightly golden brown. Let the shortbread cool completely on a wire rack, about 15 minutes.
