Steps:
- Add 2 scoops of ice cream to 4 bowls. Drizzle each with some of the Homemade Chocolate Sauce and creme de menthe syrup. Top with a few of the raspberries. Serve immediately.
- Put 3/4 cup water and the honey in a saucepan and bring to a boil over medium heat, stirring so that the honey dissolves; remove from the heat.
- Add the cocoa powder and salt to a heatproof bowl. Add a few tablespoons of the honey-water mixture to the cocoa powder. Whisk to create a thick but smooth liquid. Add the cocoa mixture back to the remaining honey-water mixture in the pan. Bring the whole mixture up to a simmer and let cook until slightly thickened, about 3 more minutes. Stir in the vanilla. Let cool completely, then refrigerate (the sauce thickens as it cools and chills).

CREME DE MENTHE GELATO
This gelato recipe is made the old fashioned way but you can use an ice cream freezer if you have one. Use green creme de menthe for the lovely green color. Allow up to 7 hours for freezing. You can add 2/3 cup chocolate chips at the freezing stage for mint chocolate chip gelato if desired.

- Set aside a large bowl of ice water.
- In a saucepan, bring milk and half of sugar to a simmer, stirring until sugar is dissolved. Add crème de menthe.
- In another bowl, mix or whisk yolks and remaining sugar until thick and pale. To this add hot milk slowly, whisking, and pour mixture back into saucepan when finished.
- Cook over moderately low heat, stirring constantly, for approx 20 minutes. (170F) Do not allow mixture to boil!
- Pour custard through a fine sieve into a freezer container, stir in cream and set in the bowl of ice water to cool.
- Chill in refrigerator until cold (1 to 4 hours).
- Press plastic wrap to the surface of the mixture and cover container with a lid. Put in the freezer until frozen, (1.5 to 3 hours).
- Remove from freezer and whisk with a hand blender to break up any ice crystals.
- Return to freezer.
- Repeat process one to three more times until it reaches desired smoothness.
- Garnish with mint leaves or shaved chocolate.
HOMEMADE CREME DE MENTHE
I was making all kinds of liquers last summer for Christmas gifts and stumbled across this recipe, but I don't remember where I found it. Very yummy- make sure you use a high-quality vodka for a really smooth finish(I found Seagram's Silver to be good quality for a great price). The lower-grade vodkas tend to give it too much of a bite. T

This is from one of those Pillsbury cookbooks they sell by the supermarket cashiers; I bought the booklet specifically because this recipe sounded so good. Haven't tried it yet, though!

- Preheat oven to 300F; have ready an ungreased 9-inch springform pan.
- In a mixing bowl, combine the two crust ingredients; mix well.
- Press in the bottom and up the sides of the pan; set aside.
- In a large mixing bowl, with electric mixer, beat cream cheese until it is fluffy; slowly beat in sugar, beating until smooth.
- Add eggs, one at a time, beating well after each addition.
- Stir in the cream and liqueur until well blended, then pour into the crust-lined springform pan.
- Bake in preheated oven for 60 to 70 minutes or until the edges are set, but the centre jiggles ever so slightly when the pan is gently shaken.
- Turn oven off and leave the oven door open at least four inches; let the cheesecake sit in the oven for 30 minutes, or until the centre now appears set.
- Remove from oven and place on a wire rack on your counter for one hour, or until completely cooled.
- Cover, then refrigerate for at least three hours before serving.
- Just before serving, carefully run a table knife around the edges of the crust to loosen, then carefully remove the sides of the pan.
- If desired, garnish individual servings with whipped cream and a crumbled or chopped chocolate mint (the kind that has the green stripe).

- Melt the 1/2 cup butter and cocoa, let cool. Then add the 1/2 cup powdered sugar, beaten egg, vanilla, graham cracker crumbs, nuts and coconut. Put in 9 x 13 pan and refrigerate.
- Melt 1 1/2 cup butter, creme de menthe, pudding, 2 cups powdered sugar. Beat until smooth and spread over crust. Refrigerate until set.
- Melt the 1/4 cup butter and chocolate chips. Spread on top. Refrigerate until firm. Cut into small bars and enjoy!

- Bottom Layer: In a small saucepan, combine 1/2 cup butter and cocoa powder. Over low heat, mix until will blended.
- Remove from heat and add 1/2 cup powdered sugar, egg and vanilla.
- Stir in graham crackers and mix well.
- Press graham cracker mixture into 9/13 glass or metal pan. (If you would like them thicker you can make in 8x8)

One of the most popular liqueurs & quite easy to make at home for about 1/3 of the cost. 30% alcohol by volume. No refrigeration needed. Use in drinks such as Flying Grasshoppers, Mexican Grasshoppers, Glacier Mints, Mint Sandwich shots, Mint Chocolate shots, Mint Choc Chip Mind Fucks, Fuzzy Ethans, Eskimo Joes, Everybody's Irish and the Drunken Elf. This recipe calls for either peppermint or spearmint, but I think you actually need a combination of both. Spearmint masks the peppermint somewhat while sweetening and smoothing out the composition, but if you use too much the whole thing tastes like toothpaste.

CREME DE MENTHE BROWNIES
Steps:
- Lightly spray a 1 1/2-quart souffle dish with butter-flavored cooking spray.
- Make a foil ring, 1-inch thick, for souffle dish to sit on inside a 5-quart slow cooker.
- In a medium bowl, combine brownie mix, 2 eggs, vegetable oil, and 1/4 cup creme de menthe. Stir using 50 strokes or use a hand blender on medium speed for 1 minute to combine. Fold in chopped mint thins. Transfer to prepared souffle dish and set aside.
- In a medium bowl, combine cream cheese, remaining egg, sugar, and 2 teaspoons creme de menthe. Using an electric mixer beat on low speed until smooth. Spread over brownie mixture. Use a butter knife to cut cream cheese mixture into brownie mixture for a marble effect.
- Place souffle dish on top of foil ring in slow cooker. Lay 8 paper towels over top of slow cooker bowl and secure with lid. (This helps to trap steam.)
- Cook on LOW setting for 4 1/2 to 6 hours. (Do not lift lid to check brownies for the first 3 hours.)
- Allow brownies to cool completely before cutting.
HOMEMADE CRèME DE MENTHE RECIPE

- Gather the ingredients.
- In a one-quart jar, pour the vodka and tear the mint leaves as you add them. Shake well to immerse the herbs. Let infuse for 48 hours, shaking once a day.
- Bring the water to a boil in a small or medium saucepan. Add the sugar and stir until completely dissolved, then reduce to a simmer. After 5 minutes, remove the simple syrup from the heat and let cool completely. If making ahead, refrigerate in a sealed container until ready to blend the liqueur.
- After 2 days, add the cooled simple syrup to the mint-infused liquor. Shake and infuse for another 24 hours.
- Strain out the mint using a fine-mesh strainer lined with cheesecloth. Discard the mint and strain one or two more times to remove extra sediment.
- Funnel the crème de menthe into a 750-milliliter bottle or several smaller bottles.
- To color the liqueur, add 3 to 5 drops of green food coloring and shake well to incorporate.
