This is a super quick batter bread that is wonderfully moist and yummy!

⅓ cup white sugar
2 teaspoons ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 cup white sugar
1 egg, beaten
1 cup milk
⅓ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
  • In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
  • Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.
  • Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely. Wrap in foil and let sit overnight before slicing.

3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon plus 1-1/2 teaspoons ground cinnamon, divided
1/4 teaspoon salt
1 large egg, room temperature
1 cup reduced-fat plain yogurt
1/4 cup canola oil
1 teaspoon vanilla extract
1/4 cup packed brown sugar

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, sugar, baking soda, 1/2 teaspoon cinnamon and salt. In a small bowl, whisk egg, yogurt, oil and vanilla. Stir into dry ingredients just until moistened. In a small bowl, combine brown sugar and remaining cinnamon., Spoon a third of the batter into an 8x4-in. loaf pan coated with cooking spray. Top with a third of the brown sugar mixture. Repeat layers twice. Cut through batter with a knife to swirl the brown sugar mixture., Bake 45-55 minutes or until a toothpick inserted in the center comes out clean. 1/4 cup butter, softened
1 1/3 cups sugar, divided
1 egg
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl, beat together butter, 1 cup sugar, and egg.
  • Combine the flour, baking powder, baking soda, and salt.
  • Add the flour mixture to the egg mixture alternately with the buttermilk.
  • In a small bowl, combine the cinnamon and remaining 1/3 cup sugar.
  • Pour a third of the batter into a greased 8X4X2-inch loaf pan.
  • Sprinkle a third of the cinnamon sugar on top of batter.
  • Repeat layers twice.
  • Bake for 45-50 minutes, until a toothpick inserted near the center comes out clean.
  • Cool in pan for 10 minutes.
  • Remove from pan to a wire rack to cool completely.

2 (1/4 ounce) packages active dry yeast
1/3 cup water, warm
1 cup milk, warm
1 cup granulated sugar, divided
2 eggs, lightly beaten
6 tablespoons unsalted butter, softened
1 1/2 teaspoons salt
6 cups all-purpose flour
2 tablespoons ground cinnamon

Steps:

  • In a large bowl, dissolve yeast in warm water, then add the milk, 1/2 cup of the sugar, eggs, butter, salt & 2 1/2 cups of the flour, beating until smooth. Stir in enough of the remaining flour to form a soft dough.
  • Turn onto a floured surface, then knead for 6 to 8 minutes or until smooth & elastic.
  • Place in a greased bowl, turning once to grease the top, then cover & let rise in a warm place about 1 hour or until doubled.
  • Grease two 9"x5" loaf pans.
  • Punch dough down, then divide in half. Roll each half into an 18"x8" rectangle.
  • In a small bowl, combine cinnamon & remaining 1/2 cup of sugar, then sprinkle this cinnamon mixture over the dough, before rolling each rectangle up from a short side. Pinch the seam to seal the dough.
  • Place seam side down in the prepared loaf pans, then cover them & let rise until doubled, about 1 1/2 hours.
  • Preheat the oven to 350 degrees F & bake the loaves for 30-35 minutes or until golden brown.
  • Remove from pans & cool on wire racks.

1-1/2 to 2 teaspoons whole milk

1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup sour cream
1/4 cup milk
2 cups sifted flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda

1/4 cup sugar
2 teaspoons ground cinnamon
1 1/2 teaspoons orange peel

Steps:

  • Cream together shortening and sugar.
  • Beat in eggs and vanilla.
  • Blend in sour cream and milk.
  • Combine dry ingredients and add to creamed mixture.
  • Spread 1/2 batter in greased 9x5x3 pan.

1/3 cup warm water (110° to 115°)

6 tablespoons butter, softened

3 teaspoons yeast
1 cup warm skim milk (or any other milks really)
5 tablespoons water, that is warm
1/3 cup sugar
1 egg
1/2 cup melted butter
3 1/2-4 cups flour (or more or less as needed)
1/4 teaspoon salt
extra melted butter
cinnamon
sugar
nutmeg

Steps:

  • Mix both yeast and water together and proof.
  • mix together sugar, butter, eggs, milk, and proofed yeast.
  • Add 1 1/2 cups of flour and mix well.
  • add the rest of the dough until a stiffish dough forms, cover and let rest for a few minutes then knead for about 5-10 minutes until soft.
  • Cover and let rise until doubled in a greased bowl, punch down and let rise again.
  • Then roll dough out into a rectangle then brush with a little bit of butter.
  • Sprinkle with sugar cinnamon and nutmeg to taste then roll up jelly roll style.
  • Place in a greased bread pan, or cookie tray and bake for 30-45 minutes at 375 F or until when tapped it sounds hollow.
  • Cover if the top is browning too fast, when you take it out of the oven you may brush the top with extra butter to make a softer crust. Also you may freeze the cooked loaf and re heat in oven covered in foil until thawed and it taste just as good.

  • Place the dough in a lightly oiled bowl and brush the top with a little extra oil (I typically just use olive oil for this). Cover the bowl with a damp towel and let the dough rise in a warm place for 1 hour. It should be very puffy. Divide the dough in half and punch it down.
  • Preheat the oven to 350 degrees. Roll each half into a large rectangle. For more tight rolls in the bread, roll the dough thinner. For thicker softer rolls in the bread, roll thicker. It’s up to you and it tastes great either way. Mix the cinnamon and sugar in a small bowl and sprinkle over each loaf. Be generous. Roll up the loaves tightly and let rest for a few minutes before putting in the oven.
  • Bake on a cookie sheet or baking stone for 30 minutes, or until it sounds hollow. When in doubt, overbake this one. It might look brown on the outside, but that’s okay because the inside really needs to bake all the way to get the layers filled out. And it’s really really helpful to let the bread cool before cutting into it, otherwise it has a tendency to sink down where you cut it. Slice diagonally and eat plain, toasted, or as French Toast.
