I just had to share my favorite dessert of all time, in the hopes of keeping the Valentine's Day fire on: the Mexican churro with cinnamon-cardamom sugar and dark chocolate dip. Plus a fragrant spin with cardamom and star anise in the mix--familiar with a heady hint of exotic! Crunchy on the outside and soft on the inside, all smothered with a sinfully dark chocolate sauce.

½ cup water
2 ½ tablespoons vegetable oil
1 tablespoon white sugar
½ tablespoon salt
½ cup all-purpose flour
1 ½ cups grapeseed oil for frying, or as needed
4 tablespoons heavy cream
1 (2 ounce) bar dark chocolate (70%)
2 tablespoons chocolate-hazelnut spread (such as Nutella®)
1 tablespoon unsalted butter
1 tablespoon white sugar
½ teaspoon ground coffee beans
8 cardamom pods, seeded and hulls discarded
1 (2 inch) piece cinnamon stick
1 star anise pod
½ cup white sugar

Steps:

  • Bring water to a boil in a medium-sized pot. Add vegetable oil, sugar, and salt. Stir to combine. Add flour and turn off heat. Stir continuously and vigorously with a wooden spoon until dough balls up and follows your spoon around the pan, 1 to 2 minutes. Set aside to cool when dough feels firm and supple.
  • Heat 3/4- to 1 inch of grapeseed oil in a medium-sized pot over medium heat.
  • While oil heats, combine heavy cream, dark chocolate, chocolate-hazelnut spread, butter, sugar, and ground coffee in a pan set over lowest heat. Stir often to ensure even melting, 3 to 5 minutes.
  • Grease the inside of a piping bag fitted with a star tip. Insert dough and squeeze it all the way to the bottom of the bag.
  • Insert the handle of a wooden spoon into the oil heating in the pot; if it bubbles steadily, the oil is ready. Carefully squeeze dough out of the bag directly into the hot oil, cutting it off at 6-inch lengths. You can also pipe lengths of dough onto parchment paper and transfer them to the oil by hand. Do not crowd the pot.
  • Fry churros, turning every minute, for 2 to 3 minutes total. Transfer fried churros to a dish lined with paper towels.
  • Place cardamom seeds, cinnamon stick, and star anise in a spice grinder and blend to a fine powder. Transfer to a wide dish and add sugar. Mix well to combine.
  • Toss warm churros into the cinnamon-cardamom sugar. Serve alongside a dipping cup of the chocolate sauce.

All it takes is five ingredients and 15 minutes for DIY churros paired with quick and easy chocolate sauce for dipping.

1/2 cup white sugar
1 1/2 teaspoons ground cinnamon
1 1/2 Tablespoons white sugar
1 cup water
1/2 teaspoon salt
2 Tablespoons vegetable oil, plus more for frying
1 cup all-purpose flour
3 1/2 ounces dark chocolate, chopped
1/2 cup heavy cream
a deep-fry thermometer; a cloth pastry bag or heavy-duty plastic pastry bag; a large star pastry tip (such as Wilton #2110; optional)

Steps:

  • In a small, shallow bowl, stir together the sugar and cinnamon.
  • In a small saucepan over medium heat, whisk together the water, sugar, salt and vegetable oil. Bring the mixture to a boil then remove it from the heat. Stir in the flour, mixing until it forms a smooth ball.
  • Heat 3 to 4 inches of vegetable oil in a large, heavy-bottomed stockpot set over medium-high heat until it reaches 375ºF. (There should be a minimum of 3 inches above the oil to prevent it from bubbling over.) Line a plate with paper towels.
  • Transfer the dough to a cloth pastry bag or heavy-duty plastic bag fitted with a large star tip (optional).
  • Pipe the dough over the pot of oil to a length of about 4 inches, then using scissors or a sharp knife, cut it so it releases into the oil. (Stand back to avoid any splatters.) Pipe two to three churros into the oil at a time, frying them until they're golden brown and cooked through.
  • Transfer the churros to the paper towel-lined plate to drain for 2 minutes, then while they are still hot, roll them in the cinnamon-sugar mixture. Repeat the frying and coating process with the remaining dough.
  • Place the chopped chocolate in a small bowl.
  • Warm the heavy cream in small saucepan. (Do not let it boil.) Pour the heavy cream over the chopped chocolate. Let it sit for 1 minute then stir to combine.
  • It's important to use a cloth or heavy-duty plastic pastry bag, as a regular resealable plastic bag is not thick enough and will split open if you try to pipe the churro dough through it.
  • The chocolate sauce will thicken as it cools, so it's best to make it right before you're ready to serve it with the churros.
  • A pastry tip isn't essential, however using the large star-shaped tip will give the churros the textured lines characteristic of classic churros.
  • This churro recipe can be easily doubled.

1/2 vanilla bean, split lengthwise
1 1/2 cups heavy cream
1/2 cup packed dark brown sugar
1 tablespoon unsweetened Dutch-process cocoa powder
1/4 teaspoon ground cinnamon, preferably Ceylon
1/8 teaspoon kosher salt
3 ounces unsweetened chocolate, chopped
1 teaspoon ground cinnamon, preferably Ceylon
1 cup plus 1 tablespoon organic raw cane sugar or granulated sugar
1/2 vanilla bean, split lengthwise
1 cup milk
5 tablespoons unsalted butter
1 teaspoon kosher salt
1 cup all-purpose flour
3 large eggs
Vegetable oil, for frying

Steps:

  • For the chocolate sauce: Scrape the vanilla seeds into a small saucepan; add the vanilla bean, cream, brown sugar, cocoa powder, cinnamon and salt and cook over medium-high heat, whisking occasionally, until the sugar is dissolved, no lumps of cocoa powder remain and the mixture is simmering, about 4 minutes. Remove from the heat, discard the vanilla bean and add the chocolate, stirring to melt. Let sit until ready to serve (the sauce will thicken as it sits).
  • For the churros: Whisk together the cinnamon and 1 cup of the organic sugar in a medium bowl; set aside.
  • Scrape the vanilla seeds into a medium saucepan; add the vanilla bean, milk, butter, salt and remaining tablespoon organic sugar and bring to a simmer over medium-high heat. Remove and discard the vanilla bean, add the flour and use a wooden spoon to vigorously mix until the dough comes together, about 30 seconds. Transfer to the bowl of a stand mixer and let cool slightly, about 5 minutes.
  • Fit the stand mixer with the paddle attachment and beat the mixture on medium-low speed. Add the eggs to the dough one at a time, making sure to incorporate each egg before adding the next. (The dough will look broken at first.) Continue to beat, scraping the bowl occasionally, until the dough is smooth, glossy and somewhat stretchy (pull off a small piece of dough and stretch it--it shouldn't break). Spoon the dough into a pastry bag fitted with a large closed star tip.
  • Line a baking sheet with paper towels. Pour the oil into a large pot until it comes halfway up the sides. Fit the pot with a deep-frying thermometer and heat the oil over medium-high heat until the thermometer registers 350 degrees F.
  • Holding the pastry bag at an angle so the tip is a few inches above the surface of the oil, squeeze out the dough, moving the bag as you squeeze so the dough is piped in a 6-inch length into the oil (use a paring knife to cut off the dough at the tip to release it into the oil). Repeat the process to make 4 more churros. Fry the churros, turning once and adjusting the heat as needed to maintain the oil temperature, until deep golden brown on all sides, 2 to 3 minutes per side. Transfer to the lined baking sheet for a moment, then toss in the reserved cinnamon-sugar mixture. Repeat with the remaining dough.
  • Serve the churros with the warm chocolate sauce.

1 tablespoon canola oil
1/4 teaspoon salt
1 cup all-purpose flour
1 large egg, room temperature
1/4 teaspoon grated lemon zest
Additional oil for frying
1/2 cup sugar
1/4 teaspoon ground cinnamon

Steps:

  • In a large saucepan, bring the water, milk, oil and salt to a boil. Add flour all at once and stir until a smooth ball forms. Transfer to a large bowl; let stand for 5 minutes. , Beat on medium-high speed for 1 minute or until the dough softens. Add egg and lemon zest; beat for 1-2 minutes. Set aside to cool. , In a deep cast-iron or heavy skillet, heat 1 in. oil to 375°. Insert a large star tip in a pastry bag; fill with dough. On a baking sheet, pipe dough into 4-in. strips. , Transfer strips to skillet and fry until golden brown on both sides. Drain on paper towels. Combine the sugar and cinnamon; sprinkle over churros. Serve warm.

1 cup water
1 1/2 tablespoons sugar, plus more for dredging
Pinch kosher salt
1 cup self-rising flour
2 eggs, plus 1 egg yolk
Peanut oil, for frying
6 ounces specialty flavored chocolate, chopped

Steps:

  • Special equipment: Piping bag fitted with a large star decorating tip
  • Make the dough by heating water, sugar and salt in saucepan over medium heat until hot. Add the flour all at once and stir vigorously for 1 minute on the heat to dry the mixture out. Remove from heat and transfer the dough to a stand mixer bowl; mix on low speed until there is no longer steam escaping from the dough. With the mixer running on medium, add the eggs, 1 at a time, incorporating completely until a shiny, smooth texture forms before adding the next egg, and then the egg yolk. Scrape down the mixer bowl with a rubber spatula between each addition. Transfer the dough to the piping bag.
  • Pour oil into a large heavy bottomed pot to a depth of 4 inches; heat over medium-high heat to 375 degrees F.
  • To fry the churros, carefully squeeze the dough from the piping bag directly over the oil in 3 to 4-inch lengths, cutting the dough at the tip with a butter knife and gently dropping them into the oil. Turn frequently with a Chinese strainer or tongs until golden brown, about 3 minutes. Work in batches to prevent overcrowding the pan and allowing the oil to reheat to 375 degrees F between each batch. Drain the churros on a paper towels and then toss in sugar to coat while still warm.
  • Melt the chocolate in a glass bowl set over a pan of barely simmering water. Arrange the curros on a serving platter and serve the chocolate sauce alongside. Enjoy!
  • Cook's Note: Self-rising flour makes the churros a bit lighter and fluffier, but all-purpose flour works just fine. Pick your favorite flavored chocolate; I love the flavor of orange and chocolate or even bacon chocolate with these churros!

1 cup milk
1/2 stick unsalted butter
Pinch kosher salt
1 cup flour
4 eggs
3 cups peanut or veggie oil, for frying
9 ounces Mexican chocolate
1/2 cup heavy cream
3 tablespoons butter
2 tablespoons light corn syrup
1 cup sugar
1 tablespoon ground cinnamon
Pinch salt

Steps:

  • For the dough: In a small saucepan, combine the milk, butter and salt and bring to a medium heat. When the butter has melted, add the flour and whisk to combine. Switch over to a wooden spoon and cook the dough until it pulls away from the sides of the pan and it has a slightly sweaty sheen on it, 3 to 4 minutes.
  • Transfer the dough to a mixing bowl and let cool for 2 to 3 minutes. Using an electric mixer beat in the eggs 1 at a time. Do not add the next egg until the last one is completely combined.
  • Place the batter in a pastry bag outfitted with a large star tip. Reserve.
  • To make the chocolate sauce: Place 1-inch of water in a small saucepan and bring to a boil.
  • In a heatproof mixing bowl, combine the chocolate, heavy cream, butter and corn syrup. Heat, stirring occasionally, until the chocolate is melted and all the ingredients are well combined.
  • Cover the bowl with plastic wrap and remove the saucepan from the heat. Reserve.
  • For the cinnamon sugar: In a bag or large mixing bowl, combine the sugar and cinnamon
  • In a large saucepan heat the oil to 325 degrees F.
  • Pipe the dough into the hot oil in sticks or desired shapes (I kinda like to make mine a little curly). This might be a little tricky at first, but you'll get the hang of it. Fry the dough until it is brown and crispy on all sides, 60 to 90 seconds total, turning frequently. Fry in batches.
  • Remove the churros from the oil, blot on paper towels for a second and then toss in the cinnamon sugar. Be sure to do this while the churros are still hot. Serve immediately, while churros and melted chocolate are warm.

These Mexican fritters are very common at fairs. In my border hometown, the line at this stand is always overwhelming. People wait hours in line just to get a taste of these churros. I have run across several recipes but this is the best one by far.

2 tablespoons vegetable oil
1 cup all-purpose flour
2 quarts oil for frying
½ cup white sugar, or to taste

  • In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.

the original churros of Italy's just really flour and water. The first time I tried this when I was a kid, I fell in love with it. Just got to love the smell when cooking! Serving size varies depending on the appetite, width and length. This serving alone's enough for DH and me and is so filling!

1 cup water
1/3 cup oil
1 piece lemon rind
1 teaspoon salt
1 cup flour
oil (for frying)
sugar, for dusting
200 g good-quality dark chocolate, coarsely chopped
1 cup milk
1 tablespoon sugar

Steps:

  • For the Churros: In a saucepan, combine first 4 ingredients (water,oil,rind,salt) and bring to a boil.
  • Skim out the rind, add flour and beat mixture with a wooden spoon on low flame until the batter becomes smooth and then congeals into a ball.
  • Remove from flame and put batter in a pastry bag and pipe long strips or rings of it into deep, hot oil.
  • Fry in deep oil until golden brown, remove and drain.
  • Cut into short strips and dust with sugar.
  • For the chocolate: combine the chocolate, sugar and milk in a medium saucepan over medium heat. Cook, stirring, for 5 minutes or until chocolate melts and the mixture is smooth. If you like your chocolate thicker, lessen the milk a bit.
  • Pour in a cup. Dunk the churros in it and eat! Enjoy!

Try a fresh spin on doughnuts by piping them Spanish-style and serving with a thick and indulgent homemade dark chocolate sauce.

50g butter, melted
½ tsp vanilla extract
250g plain flour, from a new bag (essential for absorbing the liquid)
1 tsp baking powder
about 1 litre sunflower oil
a few chunks of bread
200g dark chocolate, not too bitter, broken into chunks
100ml double cream
100ml whole milk
3 tbsp golden syrup
½ tsp vanilla extract, if you have some
100g caster sugar
2 tsp cinnamon

Steps:

  • Boil the kettle, then measure 300ml boiling water into a jug and add the melted butter and vanilla extract. Sift the flour and baking powder into a big mixing bowl with a big pinch of salt. Make a well in the centre, then pour in the contents of the jug and very quickly beat into the flour with a wooden spoon until lump-free. Rest for 10-15 mins while you make the sauce.
  • Put all the sauce ingredients into a pan and gently melt together, stirring occasionally until you have a smooth shiny sauce. Keep warm on a low heat.
  • Fill a large deep saucepan one-third full of oil. Cooking with hot oil can be dangerous - before you start, read up on how to deep-fry safely to avoid accidents in the kitchen. Heat until a cube of bread browns in 45 seconds to 1 min. Cover a tray with kitchen paper and mix the caster sugar and cinnamon together.
  • Fit a star nozzle to a piping bag - 1.5-2cm wide is a good size. Fill with the rested dough, then pipe 2-3 strips directly into the pan, snipping off each dough strip with a pair of kitchen scissors. Fry until golden brown and crisp. Be very careful here - if air bubbles form in the churros they can explode, especially if the oil overheats or you use old flour. Cooking with hot oil can be dangerous - before you start, read up on how to deep-fry safely to avoid accidents in the kitchen. Keep children out of the kitchen and protect yourself by wearing long sleeves and eye protection, and keeping your face away from the pan.
  • Once the churros are crisp and golden brown, remove them from the oil with a slotted spoon and drain on the kitchen paper-lined tray. Carry on cooking the rest of the dough in batches, sprinkling the cooked churros with some cinnamon sugar as you go.
