OLD WORLD CHICAGO-STYLE THIN CRUST PIZZA

Old World Chicago-Style Thin Crust Pizza image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 3h10m

Yield two 14-inch pizzas

Number Of Ingredients 14

1/2 cup warm skim milk (about 110 degrees F)
1/4 cup warm water (about 110 degrees F)
3/4 teaspoon active dry yeast
1/2 teaspoon sugar
2 teaspoons corn or vegetable oil, plus more for the bowl
2 1/4 cups all-purpose flour, plus more for the work surface
1/2 teaspoon kosher salt
Semolina flour, for sprinkling
1/2 cup pizza sauce
4 ounces sliced pepperoni
1 1/4 cups freshly grated skim-milk low-moisture mozzarella
1 1/4 cups freshly grated whole-milk low-moisture mozzarella
1 cup giardiniera, roughly chopped if large pieces
8 ounces bulk sweet Italian sausage, broken up into small pieces

Steps:

  • In a small bowl, combine the milk, water, yeast and sugar. Lightly whisk and let sit until bubbly and the yeast is bloomed, about 5 minutes. Add the oil.
  • Mix the all-purpose flour and salt in a stand mixer fitted with a dough hook. Set the mixer to medium-low speed and slowly add the yeast mixture until entirely incorporated, scraping down the sides of the bowl to get everything homogenous. Knead on medium low until the dough is glossy and forms a rough ball, about 5 minutes. Place the dough in a lightly oiled bowl and cover with plastic wrap. Set it in a warm part of the kitchen until doubled in size, about 2 hours.
  • Place a pizza stone on the bottom rack of the oven and preheat to 450 degrees F.
  • Split the dough into 2 balls. On a lightly floured surface, roll one of the balls of dough as THIN as possible with a rolling pin. To get an even "trimmed" circle, use a large round lid to trim a rim around the dough. Sprinkle some semolina flour on a pizza peel. Carefully transfer the round of dough to the peel. Dock the crust with a fork or docker, poking holes all over the surface to keep it thin and crispy.
  • Working quickly, add half of the pizza sauce almost all of the way to the edge of the crust, leaving about a 1-inch border. For the pepperoni side, place an even layer of pepperoni directly on top of the sauce on half of the pizza. Combine the skim- and whole-milk mozzarella in a large bowl and top the entire pizza with half of the cheese. Top the pepperoni side with some more scattered rounds of pepperoni. For the sausage side, spread half of the giardiniera on top of the cheese, then dollop with hunks of the Italian sausage on top. Transfer to the pizza stone in the oven and bake until golden and bubbly, 12 to 15 minutes. Transfer the pizza to a cutting board with the pizza peel. Make another pizza with the remaining ingredients.
  • Let the pizza rest for 4 or 5 minutes, then cut into small squares--never triangles. This is called the party cut. Why? Because no matter what's going on, when you're eating Chicago thin crust, it's always a big ol' party.

HOMEMADE CHICAGO THIN CRUST PIZZA DOUGH

Homemade Chicago Thin Crust Pizza Dough image

Craig's world famous Chicago pizza dough. makes 8-10 medium thin crust pizzas can add a handful of basil, chiffonade with 1 C Parmesan cheese instead of garlic for added fragrance and flavor. Garlic in the dough does not add a lot of flavor but adds incredible aroma as it's rising and cooking.

Categories     European

Time 2h10m

Yield 8-10 medium pizzas, 10 serving(s)

Number Of Ingredients 8

7 cups flour
1/2 teaspoon salt
1/2 cup olive oil
2 cups warm water
4 teaspoons yeast
12 ounces beer (warm or warm water)
8 -10 garlic cloves, very finely minced (optional)
cornmeal, for rolling out (or polenta)

Steps:

  • Mix yeast with warm water and salt and stir.
  • Combine wet ingredients (water with yeast, oil, beer/water) with garlic or basil and Parmesan cheese if using.
  • Add flour 1/2 cup at a time, stirring well until dough pulls together.
  • Knead until dough is silky smooth, adding flour until it does not stick to your hands. You want the dough to be moist and pliable but not too sticky.
  • Let dough rise until nearly doubled in size and punch down. Ideally do this several times to increase the pliability of the dough and flavor of the crust.
  • When you are ready to make pizzas, preheat the oven to 500 (550 ideally if possible) with baking stone on bottom rack (any floor tile will do well).
  • Punch down the dough and pull off a piece of dough about the size of your fist. Sprinkle the area you will roll out the dough with cornmeal and a small amount of flour and roll out the dough until it is about 1/8 inch thick. If you have the skills for it--toss the dough in the air.
  • Prick holes in the pizza with a fork all over.
  • Add toppings and slide into oven, making sure pizza peel (back of a cookie sheet will work) is very well covered in cornmeal so the pizza will easily slide off onto the baking stone.
  • Bake for 5-7 minutes until cheese is bubbling and edges are crispy.

LOU MALNATI'S CHICAGO STYLEPIZZA CRUST - DOUGH

Lou Malnati's Chicago Stylepizza Crust - Dough image

From FoodTv, one of the Malnati brother's gives this recipe. I use it for both deep dish and thin crust pizza. Makes a lot. I make the recipe, split into 4 pieces, freeze three then use one. The cornmeal makes it special and it is very very close to a real Lou Malnati's pizza. Sometimes I put the cornmeal on the bottom of the pan before putting in the dough, sometimes I mix it right into the dough. * I just noticed a 1 star review, the only review, complaining there was no corneal in the recipe written by someone who must not have read the last ingredient in the recipe...cornmeal. Please don't let the one star review stop you from trying this pizza crust.

Time 45m

Yield 4 pizzas, 4 serving(s)

Number Of Ingredients 6

16 ounces water
1/8 ounce yeast
1/2 ounce salt
2 lbs flour
1/4 cup olive oil
1/4 cup cornmeal

Steps:

  • In a mixer combine the water and the yeast and allow the yeast to dissolve.
  • Add the remaining ingredients except for the cornmeal and begin to mix the dough using a dough hook on low speed.
  • Once a ball is formed mix on medium speed for 1 to 2 minutes until the dough becomes elastic and smooth.
  • Remove from the mixer and place in a bowl coated with olive oil. Allow the dough to rest for approximately 4 hours.
  • Once the dough is rested, place on flat surface and dust with some flour.
  • Preheat oven to 425 degrees F. In a deep baking dish or deep dish pizza pan, or cookie sheet for a thin crust pizza, oïl the bottom and sides of the pan with your fingers, spread in the cornmeal and spread the dough using your fingers at the bottom of the pan and make sure to have enough dough to come up the sides of the pan approximately 1/2-inch high.
  • Begin by placing a layer of the mozzarella cheese on the bottom of the crust. Cheese goes first on a Chicago Style pizza. Add the tomato sauce and all of the toppings. Place in the oven for 30 to 40 minutes until golden and crispy. If you want a regular pizza, use toppings of your cjhoice in the order of your choice.
  • Serve pizza straight from the oven to the table.
  • Good cold for breakfast too!

Time 27m

Yield 2 pizzas, 16 serving(s)

Number Of Ingredients 15

16 1/2 ounces approx 3 . 9 cups bread flour, plus more for work surface
2 teaspoons sugar
1/2 teaspoon fast rising yeast
1 1/3 cups ice water
1 tablespoon vegetable oil, plus more for work surface
1 1/2 teaspoons salt
1 (28 ounce) can whole canned tomatoes, drained and liquid discarded
1 tablespoon extra virgin olive oil
1 teaspoon red wine vinegar
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon dried oregano
1/4 teaspoon black pepper
1 ounce parmesan cheese, finely grated
8 ounces whole milk mozzarella, shredded

Steps:

  • In food processor fitted with metal blade, process flour, sugar and yeast until combined, about 2 seconds. With machine running, slowly add water through feed tube; process until dough is just combined and no dry flour remains, about 10 seconds. Let dough stand for 10 minutes.
  • Add oil and salt to dough and process until dough forms a satiny, sticky ball that clears sides of workbowl, 30-60 seconds. Remove dough and knead briefly on lightly oiled countertop until smooth, about 1 minutes. Shape dough into tight ball and place in large lightly oiled bowl. Cover tightly with plastic wrap and refrigerate for at least 24 hours and up to 3 days.
  • Process tomatoes, oil, vinegar, garlic, salt, oregano and pepper in food processor until smooth, about 30 seconds. Transfer to medium bowl and refrigerate until ready to use.
  • One hour before baking pizza, adjust rack in oven to second highest position, about 4-5 inches below broiler. Set pizza stone on rack and heat oven to 500 degrees. Remove dough from refrigerator and divide in half. Shape each half into smooth, tight ball. Place on lightly oiled baking sheet, spacing them at least 3" apart. Cover loosely with plastic wrap coated with non-stick spray; let stand for 1 hour.
  • Coat 1 ball of dough generously with flour and place on well floured countertop. Using fingers gently flatten into 8" disk, leaving 1" of outer edge slightly thicker than center. Using hands, gently stretch dough disk into 12" round, working along edges and giving disk quarter turns as you stretch. Transfer dough to a well floured peel and stretch into 13" round. Using back of spoon or ladle, spread 1/2 c tomato sauce in a thin layer over the surface of dough, leaving 1/4" border around edge. Sprinkle 1/4 c Parmesan evenly over sauce, followed by 1 c mozzarella. Slide pizza carefully onto stone and bake until crust is well browned and cheese is bubbly and beginning to brown, 10-12 minutes, rotating pizza halfway through. Remove pizza and place on wire rack for 5 minutes before slicing and serving. Repeat this with second ball of dough.

FLAKY THIN CRUST CHICAGO INSPIRED PIZZA

Flaky Thin Crust Chicago Inspired Pizza image

This recipe is one i have tweaked and re-tweaked over time to ultimately perfect my favorite 2 components in a pizza. A deliciously flaky thin crust, and a tomato sauce similar to that of a traditional Chicago deep dish pizza. Rich and sweet. Being from Chicago, it's only natural.

Provided by Iris Best

Categories     Low Protein

Time 1h20m

Yield 2 12-inch pizzas, 4-6 serving(s)

Number Of Ingredients 17

2 cups all-purpose flour
1 tablespoon granulated sugar
1 teaspoon salt
1 tablespoon finely chopped garlic
1/2 cup butter, cubed and chilled
2/3 cup warm water
1/2 teaspoon instant yeast
2 tablespoons olive oil
1 tablespoon chopped garlic
2 teaspoons chopped basil
1 teaspoon chopped oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon red pepper flakes
1 (28 ounce) can of coarsely crushed tomatoes
1 tablespoon dry red wine
2 teaspoons sugar

Steps:

  • Whisk together the flour, sugar and salt in a large bowl. Add the cubed, chilled butter and using your fingers, work the butter into the flour mixture until it is mostly incorporated, you want to have small butter lumps. Add the chopped garlic. In a large measuring cup, combine the warm water and instant yeast. Add to the flour mixture and, using a fork, combine until the mixture is evenly moistened. Knead the dough in your hands or on a lightly floured surface for one minute or so until the dough is smooth. Divide the dough in two, shape into balls, cover with a damp kitchen towel, and let rest for at least 30 minutes.
  • While the dough sits, you can start on the tomato sauce. In a medium saucepan, heat the oil over medium-high heat. Add the garlic and cook, stirring for about 30 seconds. Add the herbs, salt, and both black and red peppers, and cook, stirring, for another 30 seconds. Add the tomatoes, wine and sugar, and bring it all to a boil. Lower the heat and simmer, stirring occasionally, until it thickens, usually 20 to 30 minutes. Remove from the heat and let sauce cool before using.
  • Preheat oven to 500 degrees F (or as hot as your oven will get). Seriously, the hotter the oven, the better. If using a pizza stone, preheat it along with the oven.
  • It's time to shape the dough. Take one piece of dough and shape into a 12-inch circle on a lightly floured surface. I use a rolling pin to make it completely even, but you can also just use your hands (use a light touch). With a fork, prick the entire surface of the dough and bake for approximately 8-10 minutes.
  • Remove from the oven, and let it cool for 5 minutes. Top with tomato sauce, and add your favorite toppings. Going TOO thick on toppings may result in a soggy crust so be careful. Return to the oven and bake for another 8-12 minutes, or until the cheese is melted and begins to brown. Repeat with the second half of dough or store it in your fridge for later!

PIZZA DOUGH FOR THIN CRUST PIZZA

Pizza Dough for Thin Crust Pizza image

Note:This is one of the recipes I adopted in the Great 'Zaar Ophan Adoption of 2005. I hope you enjoy it.

Provided by UnknownChef86

Categories     Yeast Breads

Time 1h15m

Yield 2 pizzas

Number Of Ingredients 6

2 1/2 cups all-purpose flour (may substitute whole wheat flour for 1 cup of the all-purpose)
1 (1/4 ounce) package active dry yeast
1/4 teaspoon salt
1 cup warm water
1/2-1 tablespoon olive oil
cornmeal, for sprinkling

Steps:

  • Mix a little sugar into the warm water.
  • Sprinkle yeast on top.
  • Wait for 10 minutes or until it gets all foamy.
  • Pour into a large bowl.
  • Add flour, salt, olive oil.
  • Combine.
  • Knead for 6-8 minutes until you have a moderately stiff dough that is smooth and elastic (add a bit more flour if you need to).
  • Cover and let rest for 20-30 minutes.
  • Lightly grease two 12-inch pizza pans.
  • Sprinkle with a little bit of cornmeal.
  • Divide dough in half.
  • Place each half on a pizza pan and pat it with your fingers until it stretches over the whole pan.
  • Try to make it thicker around the edge.
  • If desired, pre-bake at 425 F for 10 minutes (I don't always do this).
  • Then spread with pizza sauce and use the toppings of your choice.
  • Bake at 425 F for 10-20 minutes longer or until bubbly and hot.
  • Makes 2 12-inch pizzas.
  • If you don't want to use all the dough, you can freeze it.
  • Take a portion of dough, form into a ball, rub olive oil over it and place it in a freezer bag (the oil makes it easier to take out of the bag).
  • When you want to make a pizza, take dough out of freezer and allow to thaw before using.
