Make your next holiday celebration extra special with homemade eggnog. Your guests will absolutely notice the difference. This version is kid-friendly but can be spiked with a little rum or vodka for adults.

Number Of Ingredients 8

3 large eggs plus 2 large egg yolks
3/4 cup sugar
Kosher salt
3 1/2 cups whole milk
1 1/2 cups heavy cream
1 teaspoon pure vanilla extract
1/4 teaspoon freshly ground nutmeg, plus more for sprinkling
Finely grated lemon zest, for serving, optional

Steps:

  • Whisk together the eggs, egg yolks, sugar and a pinch of salt in a medium bowl.
  • Heat the milk and 3/4 cup of the cream in a medium saucepan over medium heat until the liquid starts to steam; remove from the heat.
  • Whisk about 1 cup of the hot milk mixture into the egg mixture, then pour the milk-egg mixture back into the saucepan. Return the saucepan to medium heat, and cook, stirring constantly with a wooden spoon, until the mixture is thick enough to coat the back of the spoon and a thermometer reads 165 degrees F, about 5 minutes.
  • Remove the saucepan from the heat, and stir in the vanilla and nutmeg. Strain the liquid through a fine mesh strainer into a medium bowl, and let it cool at room temperature until it is no longer hot, about 1 hour. Refrigerate until cold, about 2 hours up to 3 days.
  • When ready to serve, whip the remaining 3/4 cup cream with an electric mixer in a large bowl to medium peaks. Then, while whisking, slowly pour in the cold milk-egg mixture. The eggnog should be creamy and thicker than heavy cream. Serve with a light sprinkle of nutmeg and lemon zest if using.

6 large eggs
2/3 cup sugar
1 1⁄2 tablespoons cornstarch
5 cups whole milk
1 vanilla bean, split and seeds removed (reserve the seeds)
4 whole cloves
1 cinnamon stick
1 pinch salt
1 teaspoon vanilla extract
Reserved vanilla bean seeds
Fresh nutmeg gratings

Steps:

  • Set up a double-boiler with 2-inches of water in the bottom pan, not touching the bottom of the top pan. Bring the water to a boil, then reduce to low and simmer while making the eggnog.
  • Add the eggs to a mixing bowl and beat well. Add the sugar, cornstarch and milk, mix on low speed to combine.
  • Pour the mixture into the top portion of the double-boiler and add the scraped pod of the vanilla bean, the whole cloves, cinnamon stick and the pinch of salt. Cook, stirring constantly, until the mixture thickens slightly, it should barely coat the back of a spoon, about 20-25 minutes.
  • Remove the top portion of the double-boiler to the counter-top, remove and discard the vanilla bean pod, cloves and cinnamon stick and add the vanilla extract.
  • In a small dish, combine 1/4 cup of the eggnog mixture and the reserved vanilla bean seeds. Whisk to break up the seeds, then stir into the eggnog mixture, stirring to combine well. Transfer the eggnog to a pitcher or jar and allow it to cool for 15 minutes then refrigerate until cold. Serve with a grating of nutmeg.

6 eggs
3/4 cup sugar
1/4 teaspoon salt
4 cups milk, divided
1 tablespoon vanilla extract
1 teaspoon ground nutmeg
1 cup heavy whipping cream
Additional whipped cream and ground nutmeg, optional

Steps:

  • In a large heavy saucepan, whisk together the eggs, sugar and salt. Gradually add 2 cups milk. Cook over low heat, stirring constantly, until a thermometer reads 160°, about 25 minutes., Pour into a large bowl; stir in the vanilla, nutmeg and remaining milk. Place the bowl in an ice-water bath; stir frequently until mixture is cool. If mixture separates, process in a blender until smooth. Cover and refrigerate for at least 3 hours. , When ready to serve, in a small bowl, beat cream on high speed until soft peaks form; whisk gently into cooled mixture. Pour into a chilled punch bowl. If desired, top with dollops of whipped cream and sprinkle with nutmeg.

2 egg yolks
1/2 cup plus 2 tablespoons sugar
1/4 teaspoon salt
4 cups whole milk
1 tablespoon vanilla extract
1/2 teaspoon grated nutmeg
1/4 cup heavy cream
Garnish: additional grated nutmeg

Steps:

  • Gather the ingredients.
  • Combine the eggs, egg yolks, sugar, and salt in a heavy 3-or 4-quart pan, whisking until well-combined.
  • Continue whisking while pouring the milk in a slow, steady stream until completely incorporated.
  • Place the pan over the lowest possible heat setting; stir the mixture continuously until an ​ instant-read thermometer reaches 160 F and the mixture thickens enough to coat the back of a spoon. Be patient-this should take about 45 to 60 minutes.
  • Once the mixture has thickened, strain it through a fine sieve into a large bowl to remove any possible small cooked bits of egg.
  • Add the vanilla extract and nutmeg, stirring to combine.
  • Carefully pour the mixture into a glass pitcher, decanter, or container and cover with a lid or plastic wrap. Refrigerate the egg custard mixture to fully chill the eggnog, at least 4 hours or up to 3 days.
  • When ready to serve, pour the heavy cream into a bowl and whip until it forms soft peaks. Fold the whipped cream into the cold custard mixture until combined.
  • Serve the eggnog in chilled cups or glasses and garnish with a sprinkle of nutmeg. If anyone is adding alcohol to their glass, make sure to leave some room.

1 cup eggnog, warmed
1/2 cup thawed whipped topping

Steps:

  • Place coffee in filter in brew basket of coffee maker; sprinkle with nutmeg.
  • Place sugar in empty pot of coffee maker.
  • Add 2-1/2 cups cold water to coffee maker; brew.
  • When brewing is complete, stir in eggnog.
  • Pour into 4 cups.
  • Serve immediately, topped with dollops of the whipped topping.

I got this recipe from my mother's Southern Living Cookbook that she has had for at least 15 years or so. This eggnog is so creamy and delicious and the nutmeg gives it that bit of spice that makes this creamy holiday treat the perfect touch. I made this in my teen years a few times for Thanksgiving and Christmas and my family loved it. I haven't made it in awhile but i'm pretty sure I will be making it for my husband and I this year. Enjoy!

6 large eggs, separated
3/4 cup(s) sugar
1/2 teaspoon(s) vanilla extract
1/4 teaspoon(s) ground nutmeg
3 cup(s) whipping cream
2 cup(s) milk
1/4 cup(s) sugar
- ***ground nutmeg, for sprinkling

Steps:

  • Beat egg yolks until thick and lemon-colored; gradually add 3/4 cup sugar, vanilla and 1/4 tsp nutmeg, beating well at medium speed of an electric mixer. Cover & chill for 8 hours.
  • Place chilled mixture in a punch bowl. Gradually stir in cream & milk. Beat egg whites (at room temperature) in a large mixing bowl until soft peaks form. Gradually add 1/4 cup sugar and beat until stiff. Fold whites into chilled mixture. Sprinkle with nutmeg.
  • Feel free to add cinnamon sticks or candy canes into your glass of eggnog for added flavor. You can also top with whip cream.

Steps:

  • Put the vanilla seeds in a large bowl. Add the egg yolks and sugar syrup, and beat with an electric whisk until pale, about 2-3 mins. Add the cream and milk, and beat again until just combined.
  • Fill a large jug with ice, then strain in the eggnog mixture. Stir gently until the outside of the jug feels cold, then pour the eggnog into tumblers to serve.
