Crisp and flaky cheese straws specked with fresh herbs make a delicious and fun hors d'oeuvre.

Number Of Ingredients 7

8 ounces (2 packed cups) grated extra-sharp cheddar cheese
1½ cups all-purpose flour, spooned into measuring cup and leveled-off with knife, plus more for dusting
1 teaspoon kosher salt
Scant teaspoon crushed red pepper flakes
1½ tablespoons roughly chopped fresh herbs, such as rosemary and/or thyme
1 stick (½ cup) cold unsalted butter
6 tablespoons heavy cream

Steps:

  • Preheat the oven to 400°F. Set two oven racks in the center of the oven. Line two baking sheets with parchment paper.
  • In the bowl of a food processor, combine the cheese, flour, salt, red pepper flakes and herbs. Pulse until the mixture resembles coarse crumbs.
  • Cut the butter into ½-inch chunks and add to the flour/cheese mixture. Pulse until the mixture resembles coarse crumbs, with some pea-size clumps of butter within. Add the heavy cream and pulse until the mixture starts to clump together into a mass.
  • Lightly flour a work surface and dump the dough on top. Dust the top of the dough with flour and use your hands to shape into a rectangle about 1-inch high. Cut the rectangle in half.
  • Dust the work surface with more flour and roll each block of dough into a 8 x 10-inch rectangle about ⅛-inch thick (turn the dough as you go and add more flour as necessary so it doesn't stick). Using a pizza cutter or sharp knife, trim the edges straight without sacrificing too much dough, then cut the dough into thin strips about ¼-inch wide. Transfer the strips to the prepared baking sheets, leaving about a ¼-inch of space between them. Bake the straws for 10-12 minutes, or until lightly golden on top and a rich golden color on the bottom, rotating the pans from top to bottom and front to back midway through. Remove from the pans from the oven and set on a rack to cool. Carefully transfer the cheese straws to a plate and serve.
  • Note: The cheese straws will keep well in a covered container for a few days.
  • Freezer-Friendly Instructions: The Dough can be Frozen for up to 3 Months: Shape the dough into 2 rectangles, about 1 inch thick, wrap each securely in plastic wrap, and place them in a sealable bag. When ready to bake, remove the dough from the freezer, thaw it until pliable, and then proceed with recipe. To Freeze After Baking: Let the cheese straws cool completely and store in an airtight container separating layers with parchment paper or aluminum foil. Before serving, remove them from the container and let them come to room temperature.

2oz margarine
3oz mature cheddar or Red Leicester cheese, grated
1 medium egg, beaten

Steps:

  • Heat oven to 180c/350f/gas mark 4. Grease a baking tray
  • Mix together the flour, salt and mustard. Rub in the margarine.
  • Stir in the cheese and add the egg to make stiff dough.

  • heat oven to 220c/fan 200c/gas 7. Unroll a puff pastry, scatter over a couple of handfuls of grated Parmesan, then fold in half. On a lightly floured surface, roll out to the thickness of a £1 coin. Cut into 1cm strips, then twist the strips 3-4 times. Lay on a baking sheet, scatter over more cheese and bake for 12 mins, or until golden. Leave to cool, then keep in an airtight container for up to 2 days. 2 sheets (1 box) frozen puff pastry (such as Pepperidge Farm), defrosted overnight in the refrigerator
Flour, for dusting
1 extra-large egg
1 tablespoon water
1/2 cup freshly grated Parmesan
1 cup finely grated Gruyère cheese
1 teaspoon minced fresh thyme leaves
1 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Roll out each sheet of puff pastry on a lightly floured board until it is 10- by 12-inches. Beat the egg with 1 tablespoon of water and brush the surface of the pastry. Sprinkle each sheet evenly with 1¿4 cup of the Parmesan, 1¿2 cup of the Gruyère, 1¿2 teaspoon of the thyme, 1¿2 teaspoon of the salt, and some pepper. With the rolling pin, lightly press the flavorings into the puff pastry. Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips. Twist each strip and lay on baking sheets lined with parchment paper.
  • Bake for 10 to 15 minutes, or until lightly browned and puffed. Turn each straw and bake for another 2 minutes. Don't over bake or the cheese will burn. Cool and serve at room temperature.

A favorite for Christmas gifts and cocktail parties. The rice flour helps the texture of the straws, it gives them a nice sandy texture, like a good shortbread. If you cannot find rice flour, you can use just regular all purpose flour. You can either use margarine or butter to make these - I use Land O Lakes 80% Margarine because it results in a better product. Please see the notes below for a discussion re: butter vs. margarine and why I use margarine in this recipe.

1 cup all-purpose flour
2 tablespoons all-purpose flour
1/3 cup rice flour
1 1/4 teaspoons colman's dry mustard
1/2 teaspoon salt
1/4-1 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1 (10 ounce) package cracker barrel extra-sharp cheddar cheese, grated
4 ounces margarine or 4 ounces butter, softened to room temperature

Steps:

  • NOTES: These freeze well, but you must re-heat them for 3 to 4 minutes in a 350 degree oven before serving or they will not be crispy.
  • If you want the straws to be mild, just use 1/4 teaspoon of cayenne; 1/2 teaspoon for regular (slightly spicy), or you can add more if you like them really spicy - 1 teaspoon will make them very spicy, and probably too hot for kids. I usually use 1/2 teaspoon of cayenne.
  • The rice flour helps the texture of the straws, it gives them a nice sandy texture, like a good shortbread. If you cannot find rice flour, you can use just regular all purpose flour.
  • I find that I get a better final product if I use margarine - I use Land O Lakes 80% Vegetable Oil Margarine in this recipe. The straws made using margarine hold their shape better, are crispier, and are less fragile once baked. Also, the dough made with margarine is much easier to press out of the cookie press. On a health note, margarine has trans fats in it (2.5g per tablespoon), and butter has a lot of saturated fat (7g per tablespoon), so make your decision accordingly - these are a special occasion treat which I make infrequently, so I don't worry too much about using margarine here.
  • DO NOT use the kind of margarine which comes in a tub, or any margarine with less than 80% vegetable oil - these types of margarine have a lot of water in them, and they will ruin the consistency of the straws.
  • The dough for this is pretty stiff and thick - when it is done it will be like a shortbread dough - it will not be a squishy, stretchy mass that sticks together in one uniform ball. I have posted a photo of the dough when it is done being mixed so you can see what it should look like.
  • You can make the dough ahead of time and keep it in the fridge for a couple of weeks or freeze it for up to 3 months.
  • If you refrigerate the dough, it will be very hard when you take the dough out of the fridge (this is especially true if you have made the dough with butter), and will need to sit out on the counter for at least 8 hours before you will be able to put it through a cookie press, so plan ahead!
  • You can either use a cookie press to press out "straws", or you can roll out the dough and cut it into strips.
  • RECIPE:.
  • Preheat the oven to 375ºF.
  • If you cannot find rice flour and are using just all-purpose flour, make sure to use a total of 1 1/3 cups plus 2 tablespoons of all-purpose flour.
  • Sift the 1 cup plus 2 tablespoons of flour, rice flour, dry mustard, salt, cayenne & garlic powder together into a bowl.
  • In a Kitchen Aid mixer, mix together the cheese and the butter on low, mixing for 10 minutes to cream together.
  • Using the dough hook, gradually add in the flour mixture, mixing on medium-low. Mix well between each addition and scrape down the sides of the bowl so the flour is incorporated into the dough (I add the flour in 4 portions).
  • Mix until the dough comes together - see the posted photo in the "photos" section of this recipe to see what it should look like. It doesn't have to form one single ball, but it does need to come together, and most of the dough should have come off the sides of the mixing bowl.
  • You can either use a cookie press using the star disk to form strips, or roll the dough out to a 1/4 inch thickness and Use a pizza wheel or a knife to cut the dough into 1/2" by 4" strips.
  • Place a sheet of parchment paper on a cookie sheet, place the straws on the parchment with 1/2" of space between them. If you have rolled and cut the dough, pierce each straw with the tines of a fork.
  • Bake at 375ºF on the middle rack of the oven for around 10 to 12 minutes. The cheese straws should be barely beginning to brown when you remove them from the oven. Everyone's oven is different - some run hotter than others because many ovens are not calibrated properly. Start checking the straws at 8 minutes. In my oven they usually take 11 minutes.
  • Let the straws cool on the cookie sheet for 5 minutes, then place the straws on a rack to cool. If you try to put the straws on a cooling rack immediately after you take them out of the oven, they may break while you're trying to transfer them from the sheet to the rack.
  • These can be kept in an air-tight container for up to a week, or you can freeze them for up to 3 months. If you do freeze them, return to room temperature and heat for 3 to 4 minutes in a 350ºF oven before serving.

  • In a mixing bowl combine cheese, fennel seeds, mustard seeds, poppy seeds, caraway seeds, black and white sesame seeds, garlic powder, pepper, salt, turmeric, paprika and cayenne pepper. Set aside. In a small bowl beat together egg and water.

¾ cups butter (room temperature)
8 ounce block sharp cheddar cheese (grated)
½ teaspoon sea salt
¼ teaspoon ground cayenne pepper*¼
¼ teaspoon paprika
2 cups all-purpose flour

Steps:

  • Preheat the oven to 350°F. Prepare a large baking pan by lining with parchment paper. Set aside.
  • In the bowl of a stand mixer, or using a hand mixer, beat together butter, cheese, sea salt, cayenne and paprika until fully incorporated. Scrape down the bowl and beat for another 10 seconds.
  • With the mixer on low, mix in the flour slowly until just incorpoated. You should have a soft, crumbly dough.
  • Load the dough into the cookie press (according to manufacturer's directions) fitted with a star-shaped disc. Hold the cookie press over the prepared baking pan and click the repeatedly to extrude long ropes of dough. Cut the ropes into desired size (about 2 inch bites are a good size) and carefully arrange on baking pan, leaving an inch or two between pieces.
  • Bake for about 12 minutes or until the dough has set and is lightly browning around the bottom.
  • Remove from oven and allow to cool (they will harden and crisp up as they cool). Serve or store once cooled.

1/2 lb sharp cheddar cheese
1/4 tsp salt
1/4 - 1/2 tsp cayenne pepper
2 cups flour

Steps:

  • Preheat oven to 350 F
  • Grate sharp cheddar cheese with the fine side of the grater.
  • In a stand mixer cream together the butter and grated cheese, until the mixture is well mixed and fluffy.
  • In a another bowl combine the flour, salt, and cayenne pepper -1/4 tsp if you don't like it too spicy, or up to a 1/2 tsp if you like a lot of heat. Using a whisk, whisk together the flour, salt, and pepper. Then slowly add the flour mixture to the butter and cheese mixture in the stand mixer.
  • Beat the dough on high for about 5 min. until the dough is very creamy. Be sure to scrape down the sides and bottom of the bowl occasionally.
  • Put your dough in a cookie press, and pipe about 3 inch straws onto an uncreased cookie sheet.
  • Bake 12-15 minutes until slightly browed. Cool and store in an airtight container.

2 sticks unsalted butter, diced
1/2-1 teaspoon Cayenne pepper

Steps:

  • Preheat oven to 375. Butter two large baking sheets. Grate cheese in bowl of food processor and remove to another bowl.
  • Place flour and Cayenne pepper in food processor and pulse to combine. Add cheese and butter to food processor and run until well mixed and a ball of dough forms. If you don't have a food processor, just use a fork and stir until well mixed.
  • Press dough through cookie press onto cookie sheets. Bake at 375 for about 14 minutes or until golden brown.
  • You can also wrap the dough in wax paper and chill for thirty minutes, then slice thinly (about 1/4 inch) into cookies and bake. Or you can freeze the dough until needed.

Ever since her catering days, Martha has been baking these light-as-air cheese straws. You can buy versions, but nothing rivals cheese straws fresh out of the oven. For a variation, try rolling the puff pastry in poppy seeds, paprika, or sesame seeds.

All-purpose flour, for work surface
Puff Pastry, made through the fourth turn
12 ounces Parmigiano-Reggiano cheese, grated medium-fine (about 4 cups)
1 large egg, lightly beaten
Coarse salt

Steps:

  • On a lightly floured surface, roll out pastry dough to a 9-by-20-inch rectangle. Sprinkle 3/4 cup cheese over center of dough. Starting at the near short end, fold dough into thirds, enclosing cheese. Wrap in plastic; refrigerate 1 hour. Repeat. Wrap in plastic; refrigerate at least 4 hours or overnight.
  • Cut dough in half; wrap half in plastic, and refrigerate. On a lightly floured surface, roll out half the dough to a 12-by-15-inch rectangle about 1/8 inch thick. (Do not press too hard on edges.)
  • Using a pastry brush, dust off excess flour; brush beaten egg over dough until well moistened. Sprinkle 1/2 cup plus 2 tablespoons cheese and a pinch of salt over lower half of dough. Fold top half over cheese-covered half. Gently press to seal. Brush top of dough with beaten egg; sprinkle with remaining 1/2 cup plus 2 tablespoons cheese and a pinch of salt.
  • Trim dough to 12 by 6 1/2 inches with a pastry wheel or knife. Transfer to a baking sheet lined with parchment paper. Refrigerate 30 minutes. Repeat with remaining dough, cheese, and salt.
  • Preheat oven to 375 degrees. Using a pastry wheel, cut dough into 3/8-by-12-inch strips; twist into spirals. Space 1/2 inch apart on baking sheets. Press ends onto sheets to prevent straws from straightening. Cover with plastic wrap; refrigerate 30 minutes.
  • Bake until golden and cooked through, about 18 minutes. Loosen straws from sheets with a thin spatula; transfer to a wire rack to cool. Store in airtight containers at room temperature up to 1 day.

2 cups all-purpose flour
2 cups shredded sharp Cheddar cheese or extra sharp cheddar
3/4 cup cold unsalted butter (cubed)
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground red pepper
1/4 teaspoon smoked paprika
1/4 cup plus 1 tablespoon whole milk
1/4 teaspoon cayenne pepper (Optional)

Steps:

  • Pre-heat over to 350 degrees and line a large baking sheet with parchment paper.
  • In the food processor, combine flour, shredded cheese, butter salt, pepper, and paprika. With the processor running, slowly add in the whole milk until a dough forms.
  • Method 1: If you have a cookie press, attach the star tip and pipe the dough into straight lines on the pan. Cut into 4 inch pieces.
  • Method 2: Put the dough into a gallon size ziplock bag. Cut a small hole in the corner of the bag. Gently squeeze the dough into straight lines on your baking sheet. Cut into 4 inch pieces.
  • Method 3: Roll the dough out to 1/4 inch thickness on the baking sheet. Chill in the fridge for one hour. After chilling, cut the dough into 4 inch pieces.
  • Bake the cheese straws for 18-20 minutes, or until golden brown. Cool, then store in an airtight container.

1 sheet store-bought puff pastry (preferably 100%butter), defrosted if frozen
1 large egg yolk, lightly beaten
¼ cup finely grated Gruyère, Comté, or any other hard, flavorful cheese (aged Cheddar, Parmesan, Swiss, and so on)
2 tbsp very finely chopped or ground walnuts (optional-see clever tip)
Freshly ground black pepper

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • On a clean working surface, roll out the sheet of puff pastry. Gently press the puff pastry flat, keeping the wrapping paper at the back to prevent the pastry from sticking to your working surface.
  • Brush the pastry all over with the egg yolk. Sprinkle with the cheese and walnuts, then generously season with black pepper. Gently press the garnishes down onto the pastry.
  • Using a pizza wheel or a very sharp knife, slice the sheet into two rectangles, then slice each rectangle into thin ½-in (1 cm) strips. Gently pick up 1 strip and transfer it to the prepared baking sheet. As you set the strips down, twist the ends in opposite directions to tightly spiral the straws. Repeat to create all straws. Pick up the garnishes that have fallen off the straws during the process and carefully sprinkle them back over the twisted straws.
  • Bake for 15 to 20 minutes. The cheese straws are ready when they are puffed, deep golden brown, and dry to the touch.
  • Transfer the sheet to a rack and cool for 15 minutes.
  • SERVING: Serve the cheese straws cool or warm.
  • STORAGE: Cheese straws are best enjoyed the day they're made, but you can store them in an airtight container at room temperature for up to 2 days. Warming up the straws in a 300°F (150°C) oven for 5 minutes will make them super crispy again.
  • CLEVER TIP: Don't want to or can't use nuts? You can substitute finely chopped, pitted olives, fresh or dried herbs, or seeds such as poppy or sesame seeds. Sprinkle a pinch of smoked paprika or cayenne pepper for a delightful flavor punch!

Three 10-ounce bricks sharp Cheddar cheese, shredded cold then left at room temperature
1 cup (2 sticks) butter, softened
4 cups sifted all-purpose flour
2 teaspoons salt
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
Dash of garlic powder
Cooking spray

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the softened cheese and butter in the bowl of a heavy-duty electric mixer. Using the heaviest mixer paddle attachment, beat until the mixture has the consistency of whipped cream, 15 to 30 minutes.
  • In a large bowl, sift 3 cups of the flour with the salt, black pepper, cayenne pepper and garlic powder. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the remaining 1 cup unseasoned flour incrementally until the dough is somewhat stiff but still soft enough to be pushed through a cookie press; you may not need to add all the flour.
  • Lightly spray 4 cookie sheets with cooking spray. Put a portion of the dough into a cookie press fitted with the star tube and press the dough onto a cookie sheet in long strips that run the length of the pan. Repeat until the pan is full. Bake until straws are golden brown and crisp, about 20 minutes.
  • With your hands or a sharp knife, break or cut the long strips into 3-inch lengths. Use a flat, thin spatula or an egg turner to remove the cheese strips from the pan. Allow them to cool on a wire rack. When they are completely cool, serve or store in a tightly covered container.

1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a cookie sheet.
  • In a large bowl cream butter and cheese. Stir in flour and salt; mix well. On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into 2 inch strips and sprinkle with ground red pepper. Place strips on prepared cookie sheet(s) 1 1/2 inches apart.
  • Bake in preheated oven for 10 to 15 minutes, or until crisp.

2 cups self rising flour
1/4 teaspoon salt
2 cups shredded (1/2 lb) at room temperature sharp cheddar cheese
1 cup (2 sticks) at room temperature butter

Steps:

  • Preheat the oven to 350 °F.
  • Sift together the flour, cayenne and salt and set aside. Using an electric mixer, cream together the butter and cheese until blended. Add the flour mixture slowly, beating at low speed, then continue to beat for 5 minutes, until very creamy, scraping down the sides of the bowl several times.
  • Using a cookie press with a star tip, make 3-inch-long cheese straws, leaving at least 1/2 inch between each on an ungreased cookie sheet.
  • Bake for 10 to 15 minutes or until lightly browned. Remove to racks to cool. Makes approximately 5 dozen cheese straws.

375g/13oz plain flour
pinch salt
225g/8oz butter, diced
150g/5½oz mature cheddar cheese
50g/1¾oz freshly grated parmesan cheese (or a similar vegetarian hard cheese)
pinch English mustard powder
small pinch cayenne pepper
2 free-range eggs, yolks only

Steps:

  • Sift the flour and a pinch of salt into a bowl. Using your fingertips, rub in the butter until all the lumps are gone and the texture is like fine breadcrumbs. Stir in the cheese, mustard powder, cayenne, and egg yolks. Add 4-5 tablespoons of cold water and mix to a firm dough. Wrap in cling film and chill in the fridge for 30 minutes.
  • Preheat the oven to 190C/375F/Gas 5. Line a baking sheet with baking parchment. Roll out the dough to a square, roughly the thickness of a £2 coin. Cut the square in half, then cut each half into 1cm/½in strips. Transfer carefully onto the lined baking sheet and bake for 10-15 minutes, until crisp, then leave to cool on the tray.
