Our version of the popular spiced tea is more flavorful and far healthier than what you'd get at a coffee house.

Number Of Ingredients 9

2 green cardamom pods, lightly crushed
1/8 teaspoon black peppercorns
2 cloves
1 cinnamon stick
1 1 1/2-inch piece fresh ginger, peeled and thinly sliced
2 cups water
2 tablespoons brown sugar
2 bags black tea, such as Assam or Darjeeling
3/4 cup reduced-fat milk

Steps:

  • Bring spices, ginger, and water to a boil. Reduce to a simmer until liquid becomes aromatic, about 15 minutes. Whisk in sugar, then add tea bags; turn off heat and let steep 3 minutes.
  • While tea is steeping, warm a serving pot by rinsing several times with very hot water. Strain tea mixture through a fine strainer or a coffee filter into pot. Heat milk over medium heat until just simmering. Whisk until frothy. Pour into serving pot, stirring well to combine.

1 1/2 cups water
1 1/2 tbsp black tea leaves
3/4 cup organic whole milk
2 green cardamom pods
2 cloves
1/4 tsp fennel seeds
2 tsp granulated sugar

Steps:

  • Gather the tea leaves, milk, water and spices, if using, to make the chai.
  • Start by bringing the water to a boil over medium-high heat.
  • Crush any spices that you are using for the chai.
  • Reduce the heat to medium and add the tea leaves to boiling water. Let it boil for a minute.
  • Add the organic whole milk and increase the heat to medium-heat. Keep a close watch on the saucepan at this time, as the milk may boil over.
  • As the milk is about to boil, add the chai masala spice mix, if using. Mix it in well, with a spoon.
  • Bring the tea to a boil, and reduce heat to medium-low or whichever heat point where the chai keeps dubbing and simmering but does not rise so it can overflow.
  • Let it simmer for 2-3 minutes. You can let it simmer for just a minute or so, if you are in a hurry. The simmering is what concentrates all that flavor for the chai. You can simmer it for as long as even 5-10 mins. It may reduce the quantity of chai a little but it will keep it nice and hot as you wait for company.
  • Turn off heat and strain the chai into tea cups. Add sugar to taste and mix well. Enjoy it hot.

1 cup coarsely ground Italian roast, French roast or espresso coffee (2 to 2 1/2 ounces)
1 tablespoon ground cardamom
1 tablespoon ground cinnamon
1 1/2 teaspoons ground ginger
1 teaspoon ground allspice
1/2 teaspoon finely grated fresh peeled ginger
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cloves
Large pinch kosher salt
4 cups hot (not boiling) water
1 1/2 cups nonfat milk
1/2 cup sweetened condensed milk
1 tablespoon sugar
1 teaspoon ground cinnamon

Steps:

  • For the chai: In a 48-ounce French press coffee maker, combine the coffee, cardamom, cinnamon, ground ginger, allspice, grated ginger, pepper, cloves, salt and water. Place the lid on the coffee press with the plunger extended. Let the mixture brew for 4 minutes. Press down the plunger.
  • While the coffee mixture is brewing, whisk the nonfat milk in a heavy medium saucepan over medium-high heat until very thick and foamy, 5 to 6 minutes.
  • For the cinnamon sugar: In a small bowl, mix together the sugar and cinnamon until combined. Set aside.
  • Pour the coffee mixture into a medium saucepan and rewarm over medium heat. Stir in the condensed milk. Divide the chai among 4 cups and spoon large dollops of the whisked nonfat milk on top. Sprinkle with the cinnamon sugar and serve.

This chai recipe-inspired by versions in India-combines black tea, spices, and milk. The savory notes from black pepper and cardamom in this version give it a wonderful aromatic complexity.

2-inch piece fresh ginger, cut into thin rounds
2 cinnamon sticks
2 teaspoons black peppercorns
10 whole cloves
6 cardamom pods
6 cups cold water
6 bags of black tea (preferably Darjeeling)
2 cups whole milk
1/2 cup (packed) golden brown sugar

Steps:

  • Combine first 5 ingredients in medium saucepan. Using mallet or back of large spoon, lightly crush or bruise spices. Add 6 cups water; bring to boil over high heat. Reduce heat to medium-low, partially cover pan, and simmer gently 10 minutes. Remove from heat. Add tea bags and steep 5 minutes. Discard tea bags. Add milk and sugar. Bring tea just to simmer over high heat, whisking until sugar dissolves. Strain chai into teapot and serve hot.

2 mugs milk (or use almond milk)
2 English Breakfast tea bags
6 cracked cardamom pods
½ cinnamon stick
a grating of fresh nutmeg
2 cloves
2-4 tsp light brown soft sugar

Steps:

  • Heat the milk in a saucepan over a very low heat. Empty the contents of the tea bags into the pan, then add the cracked cardamom pods, cinnamon stick, nutmeg and cloves.
  • Sweeten with light brown soft sugar to taste (chai tea should be sweet, but use less if you like), then leave to infuse, but not boil, for 10 mins. Strain into mugs and enjoy.
