1 cup sugar

Steps:

  • Heat sugar and 1 cup water in a heavy-bottomed saucepan. Place over medium heat and cook, stirring occasionally, until the sugar dissolves and comes to a boil. Continue cooking, brushing down the sides of the pan with a wet pastry brush but without stirring, until mixture becomes golden amber in color.
  • Immediately remove from heat and add 1 cup water. Return to heat and continue stirring until mixture becomes liquid. Transfer to a heatproof container and let cool completely before using.

1/2 cup water (divided)
1 teaspoon vanilla extract
Pinch of kosher salt

Steps:

  • Gather the ingredients.
  • In a small saucepan over low heat, combine the sugar and 1/4 cup of water.
  • Stir constantly until the sugar dissolves, 8 to 10 minutes.
  • Turn up the heat to medium-high, cover, and boil for 3 minutes.
  • Remove from heat. Add the remaining 1/4 cup of water in a slow stream, stirring constantly.
  • Stir in the vanilla extract and salt.
  • Let the syrup cool completely, then transfer to a sealed container and store in the refrigerator for up to two weeks.
  • Use the caramel syrup in beverages or over food and enjoy.

1/2 cup half-and-half
4 tablespoons butter
Pinch salt

Steps:

  • Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.

While this syrup was created by the pastry chef Daniel Skurnick to pour over his Franco-Chinese steamed ginger-milk custard, it's a good recipe to have handy when you want something to pour over cooked fruit, ice cream or pudding - I like it paired with vanilla, chocolate or butterscotch. It's a quickly made syrup flavored with peppercorns, cloves, nutmeg and ginger. Mr. Skurnick says you should cook the caramel until its color is "Irish-setter red" before adding the spices - it's a perfect description of what you're looking for.

1/2 cup (100 grams) sugar
10 black peppercorns
4 whole cloves
1 slice nutmeg (about 1/4 of a whole nutmeg)
1 1-inch piece fresh ginger, peeled
1/4 cup (60 milliliters) water

Steps:

  • Pour the sugar into a heavy-bottomed medium saucepan set over medium-high heat. Once the sugar starts to color, swirl the pan so that it melts and colors evenly.
  • When the caramel is a light reddish-brown color, or as Mr. Skurnick says, "Irish-setter red" (it takes about 5 minutes to reach this stage), drop in the spices and, standing away from the pan, carefully pour in the water. When it boils, reduce the heat to very low and cook for 2 minutes.
  • Strain the caramel into a heatproof container (discard the spices or use them for tea), and cool completely. You can keep the syrup covered in the refrigerator for up to 1 week. It will thicken; warm gently to reliquefy.

  • Tip the sugar into a heavy-based frying pan, stir in 4 tbsp water, then place over a medium heat until the sugar has dissolved. Turn up the heat and bubble for 4-5 mins until you have caramel. Take off the heat, then carefully stir in the cream and butter. Leave the sauce to cool, then tip into a squeezy bottle.

For Creme Caramel or Creme Brulee For Creme Caramel: Pour the syrup (carefully! Its HOT!) into individual custard cups and swirl the cups around to line with the syrup, which will immediately harden. Or, line a larger baking dish. Pour the custard over and bake in the oven according to your traditional recipe. (I have cooked the custards themselves in the microwave as well without problem, but I seem to prefer the oven method.) For Creme Brulee: Pour the syrup slowly over the top of a baked custard so that it makes a thin smooth layer of hardened caramel. (This is a non-traditional way to get the "burned" sugar topping, but its a lot easier than all the other complicated ways I have tried with varied results. I love tapping the hard caramel with a spoon when I eat it. It crackles and shatters, making a wonderful contrast with the rich and smooth custard underneath -- my favorite dessert!)
