GRANDMA'S PERFECT HOMEMADE BREAD
Steps:
- In a stand mixer add the warm water, sugar, salt and yeast. Let the yeast proof until it bubbles for about 5 minutes. Using the dough hook start adding the flour one cup at a time until the dough combines and forms a soft dough.
- On a floured surface knead the dough until smooth and elastic and form a ball. Add the oil to the large bowl and add the dough to the bowl and cover. Let rise until it has doubled 1- 1 1/2 hours.
- Grease and flour 2 9x5 inch pans. Punch the dough to release the air. Lay the dough onto a flat surface and cut into two loaves. Roll each loaf up and place into the loaf pans. Let rise until it doubles another 1-1 1/2 hours.
- Bake in a preheated 350 degree oven for 30-35 minutes or until golden brown on the tops. Remove from the oven and let cool for 10 minutes before slicing.

Steps:
- Prepare the dough: In a large bowl or stand mixer add the yeast, water and a pinch of the sugar or honey. Allow to rest for 5-10 minutes until foaming and bubbly. (This is called "proofing" the yeast, to make sure it is active. If it doesn't foam, the yeast is no good, and you need to start over with fresh yeast).
- Add remaining sugar or honey, salt, oil, and 3 cups of flour. Mix to combine.
- Add another cup of flour and mix to combine. With the mixer running add more flour, ½ cup at a time, until the dough begins to pull away from the sides of the bowl. The dough should be smooth and elastic, and slightly stick to a clean finger, but not be overly sticky. Add a little more flour, if needed.
- Knead the dough: Mix the dough for 4-5 minutes on medium speed (or knead with your hands on a lightly floured surface, for 5-8 minutes).
- First Rise: Grease a large bowl with oil or cooking spray and place the dough inside, turning to coat. Cover with a dish towel or plastic wrap and allow to rise in a warm place* until doubled in size, about 1 1/2 hours.
- Spray two 9x5'' bread pans generously with cooking spray on all sides. (I also like to line the bottom of the pans with a small piece of parchment or wax paper, but this is optional.)
- Punch the dough down well to remove air bubbles. Divide into two equal portions. Shape each ball into long logs and place into greased loaf pans.
- Second rise: Spray two pieces of plastic wrap with cooking spray and lay them gently over the pans. Allow dough to rise again for about 45 minutes to one hour, or until risen about 1 inch above the loaf pans. Gently removing covering.
- Bake: Preheat oven to 350 F. Bake bread for about 30-33 minutes, or until golden brown on top. Give the top of a loaf a gentle tap; it should sound hollow.
- Invert the loaves onto a wire cooling rack. Brush the tops with butter and allow to cool for at least 10 minutes before slicing.
- Once cool, store in an airtight container or bag for 2-3 days at room temperature, or up to 5 days in the refrigerator.

- In a large bowl, dissolve yeast in warm water. Stir in milk, butter, sugar, salt and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a stiff dough. , Turn out onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down and divide in half. Shape into two loaves and place in greased 8x4-in. loaf pans. Cover and let rise until doubled, about 30 min. , Preheat oven to 400°. Bake 20-25 minutes or until golden brown, covering with foil during last 5 minutes to prevent overbrowning if necessary.

This is my favorite Italian bread recipe. It tastes so good and smells wonderful. **NOTE Prep time has been recalculated due to the first two reviews.

Steps:
- In large mixer bowl, combine 3 c of flour and the yeast.
- Combine the water and salt.
- Add to the dry mixture.
- Beat at low speed for 30 seconds, scrapping the sides constantly.
- Beat at high for 3 minutes.
- By hand, stir in enough of the remaining flour to make a very stiff dough.
- Turn out onto a lightly floured surface and knead until smooth and very elastic (15-25 minutes).
- Shape into a ball.
- Place dough in a lightly oiled bowl, turning once to coat the surface of the dough.
- Cover and let rise in a warm place till double (about 1 hour).
- Punch down and turn out onto a lightly floured surface.
- Divide the dough in half.
- Cover with the bowl and let rest for 10 minutes.
- Roll each half into a 15x12 inch rectangle.
- Beginning at the long side of the rectangle, roll the dough up tightly, sealing as you roll.
- Taper the ends of the loaf.
- Grease 2 baking sheets and sprinkle them each with cornmeal.
- Place each loaf diagonally seam side down, on baking sheets.
- Make diagonal cuts 2 ½ inches apart (1/8 to ¼ inch deep) on the tops of the loaves.
- Add tablespoon of water to the beaten egg white and brush over the top and sides of the loaves.
- Cover and let rise in a warm place till double (about 20-45 minutes).
- When ready to bake, place a large shallow pan on the lower rack of the oven and fill with boiling water.
- Bake at 375° for 20 minutes, brush with the egg white mixture.
- Bake 20 minutes longer.
- Cool on a rack.
- Tips: Raising tip: In a cold oven, place the dough on the top rack.
- On the rack beneath, place a pan filled with very hot water then close the door.
- This will create a warm, draftless environment for raising your dough.
- Temp: be sure to use a thermometer to test the temp of the liquids before adding to the yeast.
- Temperature is very critical- too cold and the yeast won't activate, too hot and they die- either way the bread will not raise.

- Pour 1/2 cup warm water in tall glass, add yeast and 2 rounded tsp sugar. Let stand 10 minutes.
- As yeast mixture is working, pour 4 cups of water in sauce pan, add 2 tbsp sugar, 2 tbsp salt and 3 tbsp bacon drippings. Stir until bacon drippings are melted. Shortening can be used, but the flavour is not as good.
- Pour 6 cups flour in large bowl, make a well in the middle, pour in saucepan mixture. Mix yeast well and pour into flour mixture. Add 3 more cups of flour and mix top to bottom until formed.
- Pour extra flour on counter and knead dough until smooth and elastic and no longer sticky (about 10 minutes). Place in a large greased (bacon Fat)glass bowl. Cover with clean towel and let stand for 1-½ hours in a draft free place. (Inside oven with light on is ideal).
- Remove from bowl and punch down dough on lightly floured counter. Return to bowl and cover with towel and let stand for one more hour.
- Remove from bowl and punch down dough on lightly floured counter.
- Cut into four equal parts and roll like a baby blanket. Place in 4-greased (bacon drippings) loaf pans and cover with towel. Let stand 21/2 hours then bake in a preheated 350-degree oven for 35 to 45 minutes (Until golden brown).
- Remove from oven and turn loaves over on countertop (Taking them out of the pans). Let cool completely before bagging the loaves. They cool faster if you turn them around every ten minutes or so.

MOM'S DELICIOUS HOMEMADE BREAD
This is my Mom's recipe. It is so good, very light and fluffy with a crispy crust on the bottom. Very simple too. Can be used to make rolls, or loaves. You can easily double it. You can also add 1c. raisins and/or slivered almonds,orange/lemon zest and vanilla extract to a loaf for a festive holiday bread. The options are endless!

- Combine warm water, yeast, oil and honey in a large bowl, let sit for 5 minutes then add the salt and egg. Stir all together.
- Add the flour one cup at a time, stirring together after each cup. Around the 5th cup your dough will begin to come together pulling away from the sides of the bowl and forming a ball.
- Empty the dough onto a clean, floured surface and begin kneading the dough adding a little more flour as it becomes sticky. It should be slightly sticky. Knead for 3-5 minutes until smooth, firm and elastic.
- Set aside to rise until double.
- Divide dough into 2 loaves or 1 loaf and 12 rolls or all rolls if you like. Place in well greased loaf pan or rolls on a greased cookie sheet.
- Preheat oven to 375°F
- Set aside to rise until almost double once more.
- Bake loaves for 25-30 minutes, or rolls for 15 minutes. They should be golden brown on top and bottom when done.
