Homemade bouillon powder is a great idea for all sorts of reasons. Let's talk about how to make a version that is better than store-bought with no artificial flavors or ingredients.

1/2 cup nutritional yeast
1/2 tablespoon fine grain sea salt
3 tablespoons dried minced onion or 1 tablespoon onion powder
1/2 teaspoon ground turmeric
3/4 teaspoon dried oregano
3/4 teaspoon dried thyme
1 tablespoon garlic powder
1/2 teaspoon freshly ground black pepper
2 tablespoons coconut milk powder (optional)

Steps:

  • Combine all the ingredients in a blender. Pulse until everything is finely ground and powdery, a minute or so.
  • Transfer to a jar and keep in a cool and dark place for up to a couple of months. Use 1 tablespoon of bouillon powder in place of one bouillon cube.

A substitute for commercial broth powders or bouillon granules or cubes. This has far less sodium. To use this to replace commercial product. 2 teaspoons of this mix plus 1/2 teaspoon salt = 1 bouillon cube. This comes from the Miserly Meals cookbook. Nutritional yeast is available at the health food store. It is also known as Brewer's yeast.

1 teaspoon celery seed
2 tablespoons italian seasoning

1 teaspoon dried marjoram
1 teaspoon dried tarragon
1 teaspoon paprika (regular or smoked)

Steps:

  • Put all ingredients in a blender or food processor. Pulse until well blended.
  • Place in an airtight container and store for up to 6 months.
  • Add 1 T. mix to a cup of hot water for a cup of soup or broth.
  • Use in any recipe calling for commercial bouillon cubes or granules.
  • This makes 1-2/3 cups of mix.

What a find! For dietary reasons, using purchased bouillon cubes are not an option for me. This is from Angela Papaiz who contributed to the Brazilian Children's Fund Cookbook. Prep time depends on how fast you chop. LOL I will over estimate on my timing.

3 cups carrots, minced
2 onions, minced
2 tablespoons salt
1/2 lb ground beef

Steps:

  • Combine all ingredients in a saucepan without any liquid.
  • Cook over very low heat, covered, for 1 hour.
  • Place contents into a blender or food processor and process until smooth.
  • Pour into ice cube trays and freeze.
  • Use a cube of bouillon to enhance the flavor of gravy or soup.

  • Bring 32 ounces of broth to a boil and then reduce to a soft simmer on medium low heat. It will take 25-30 minutes and as the liquid gets low in the pan, you will want to watch it and stir occasionally to keep it from burning to the bottom of the pan. Reduce until you have a thick sauce.
  • Add the sauce onto a jelly roll tray and let it dry overnight on the meat setting (145-155 degrees) until you are able to pick it up and break it into pieces. You want it brittle.
  • Put the pieces in a spice grinder until they make a powder. If it doesn't break down into a powder but clumps instead, put the pieces back into the dehydrator to dry a bit longer.
  • Add 8 cups of coarsely chopped vegetables to the food processor and pulse into smaller pieces. Add these to the dehydrator on the vegetable setting and let dry completely.
