Time 50m

Number Of Ingredients 10

1½ pounds thinly sliced baking apples (about 5 cups | i.e.,Jonagold, Granny Smith, etc. )
¾ cup golden raisins
1 tablespoon fresh lemon zest (zest of one lemon)
¾ cup sugar
2 teaspoons ground cinnamon
½ teaspoon ground ginger
¾ cup almonds (ground)
1 ½ cups fresh breadcrumbs
1¼ cups butter (divided)
12 leaves phyllo pastry (thawed )

Steps:

  • Heat a small skillet over medium heat. Melt ¼ cup of the butter, and then add breadcrumbs.
  • Saute breadcrumbs in melted butter until toasty. Set aside.
  • Mix together sliced apples, raisins, lemon zest, sugar, cinnamon, ginger, and ground almonds.
  • It is very important that you do this immediately before you assemble the strudels. Do not allow the mixture to set after mixing, or it will become too juicy for the delicate phyllo leaves before the strudel bakes.
  • Preheat oven to 400°F | 205°C.
  • Place one phyllo leaf on a kitchen towel and brush with melted butter. Sprinkle with about a tablespoon of breadcrumbs.
  • Place a second leaf on top and brush with butter again. Sprinkle with a tablespoon of breadcrumbs.Repeat until 6 leaves have been used.
  • Spread filling in a 3-inch strip along the narrow end of the phyllo, leaving a 2-inch border on the sides.
  • Lift towel and use it to help you roll up the strudel. Press the ends down to seal. (I don't worry too much about this - some filling may come out, but it always turns out fine.)
  • Brush top of the strudel with butter and sprinkle with toasted breadcrumbs.Repeat to make the second strudel. Bake the strudels at 400°F | 205°C for 20 to 25 minutes, until browned.

Time 1h35m

Number Of Ingredients 14

1/4 cup unsalted butter (melted(55g))
1 1/2 cups all-purpose flour ((200g))
1 pinch of salt
1/3 cup water (lukewarm (80ml))
1/3 cup golden raisins (50g)
2 Tbsp rum
4 medium apples
1 tbsp lemon juice
1 tsp ground cinnamon
1/2 cup granulated sugar ((100g))
1/4 cup slivered almonds (finely chopped (30g))
1 tsp vanilla extract
6 tbsp unsalted butter (melted (90g))
1/4 cup breadcrumbs ((30g))

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment combine melted butter, flour, salt, and lukewarm water. Mix at medium speed about 1 minute until a smooth and elastic dough forms.
  • In a small saucepan (with a lid) bring water to a boil then remove the pot from the heat, empty the pot and dry it with a dish towel. Line the pot with a sheet of parchment paper, put the dough into the pot and put the lid on. Let sit for 30 minutes at room temperature.
  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • Meanwhile, in a small bowl combine raisins and rum. Let sit for 30 minutes. Then discard the rum.
  • Peel, core, and cut the apples into small stripes (batonnets, see image above). Combine apples with lemon juice. Add cinnamon, sugar, raisins, almonds, and vanilla extract. Set aside.
  • Lay a thin kitchen towel preferably with a pattern flat on the counter. Sprinkle with flour. Roll the dough out as thin as you can. Brush it with a little bit of melted butter.
  • Then use your hands to carefully stretch it until it is about 18x12 inches (45x30 cm) big and you're able to see the pattern of the dish towel through the dough.
  • Brush half of the melted butter over the rolled out dough.
  • The long side should be facing you. On the right side of the rectangle, leave a few inches space, then sprinkle the breadcrumbs top to bottom over the dough in a 6-inch thick line. Leave a 2-inch margin at the top and bottom of the strip.
  • Pile the apple filling on top of the breadcrumbs. Use a slotted spoon so the liquid stays in the bowl.
  • Fold the 2-inch margin at the top and bottom of the dough over onto the filling then roll up the strudel from the short side with the help of the towel. Tuck the ends.
  • Carefully transfer the Strudel to the prepared baking sheet, seam side down. Brush with a little bit of melted butter.
  • Bake for about 50 minutes in the lower third of the oven, until lightly golden on top. Brush strudel with remaining melted butter every 20 min while in the oven.
  • Let cool for 10 minutes then sprinkle with powdered sugar and serve warm.

APFELSTRUDEL (CLASSIC APPLE STRUDEL)

Apfelstrudel (Classic Apple Strudel) image

Provided by Food Network

Categories     dessert

Time 2h5m

Yield about 16 servings

Number Of Ingredients 15

3 cups bread flour
1 egg
1/4 cup soft, unsalted butter
1/2 teaspoon salt
1 cup cold water
Vegetable oil
Bread flour
3/4 cups coarse white bread crumbs
1/2 cup, melted unsalted butter
1 1/2 pounds, 14 ounces peeled, cored and thinly sliced Granny Smith, Pippin or other cooking apples
1/3 cup granulated sugar
3/4 cup dark raisins
3/4 cup coarsely crushed nuts
2 teaspoon ground cinnamon
5 ounces firm, unsalted butter

Steps:

  • To make the dough: Place the flour, egg, soft butter and salt in the bowl of an electric mixer. Mixing with the dough hook on low speed, add enough of the cold water to make a soft dough. Knead the dough in the electric mixer at medium speed until it is smooth and elastic, about 5 minutes. Form the dough into a ball and coat it with oil. Cover and let rest at room temperature for about 1 hour.
  • For the filling: To make the coarse bread crumbs, toast slices of white bread in the oven until crisp, about 10 minutes. Break into pieces and place in a food processor. Pulse the processor until the bread resembles large bread crumbs. In a saute pan, over medium heat, saute the bread crumbs in 1/4 cup of the melted butter until they are golden brown. Reserve the sauteed bread crumbs and the remaining melted butter separately. Combine the sliced apples, granulated sugar, raisins, nuts, ground cinnamon and about half of the bread crumbs. Cut the firm butter into chunks and gently toss together with the apple mixture.
  • To Assemble: Cover a work surface approximately 4 feet by 4 feet with a clean piece of cloth. The cloth is used to facilitate stretching and rolling the dough. Make sure that the cloth is securely fastened to the table. Dust the cloth lightly with the flour. Place the rested dough in the center of the cloth. Using a rolling pin, roll the dough into a large, thin rectangle. When the dough is as thin as it will go with the rolling pin, it is time to begin stretching and pulling the dough. To stretch and pull the dough, place your hands under the dough, and, using your thumbs and the back of your hand, gently begin pulling and stretching the dough. Pull and stretch the dough until it is a rectangle approximately 3 1/2 feet by 2 1/2 feet. Be very careful when you are pulling and stretching not to tear the dough. After it is pulled to the proper size, let the dough relax on the table for a few minutes. There will be a thick edge around the edges, trim this away. You also want to trim off any parts of the dough that hang over the edges of the table. Place the apple filling next to the long edge of the dough closest to you. Form the filling into a thick log. Brush some of the reserved melted butter generously over the remainder of the dough. Sprinkle the remaining bread crumbs over the dough. Using the cloth to help lift the dough, roll the strudel as you would a jelly roll, starting from the filling side. Place the strudel, seam side down, in a horseshoe shape on a sheet pan lined with parchment paper. Brush the strudel with the last of the melted butter. Bake in a preheated 375 degree F oven for about 35 minutes, Remove the pan from the oven and cool. Slice the the strudel into individual servings and serve either warm or at room temperature.

Time 1h5m

Yield 7 servings

Number Of Ingredients 12

1 1/4 cups apple juice
2 tablespoons cornstarch
1 1/2 pound apples, peeled, cored and sliced 1/4-inch thick (about 5 cups)
1/2 cup dark seedless raisins
3 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/3 cup chopped pecans
4 sheets phyllo dough
1/3 cup (5 1/3 tablespoons) melted butter
3 tablespoons fine dried breadcrumbs
Confectioners' sugar, for garnish
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • In a small bowl, create a slurry by combining 1/4 cup of the apple juice with the cornstarch. Mix until smooth and set aside.
  • In a large saucepan over medium heat, cook the apples with the remaining 1 cup apple juice, raisins, sugar and cinnamon until the apples are tender, 8 to 10 minutes. Stir the cornstarch slurry (it may have settled) and add it to the apple mixture, stirring constantly until smooth and lump free. Simmer for 1 minute more, stirring constantly. Remove from the heat and cool. Stir in the pecans, cover and chill.
  • Lay out 1 phyllo sheet on a clean, flat, lightly floured surface. Brush with some melted butter and sprinkle with 1 tablespoon breadcrumbs. Repeat this procedure with two more layers of phyllo, butter and breadcrumbs. Top with the fourth sheet of phyllo. Spread the apple filling evenly onto the phyllo surface, leaving a 1/2-inch clean edge on all sides. Roll into a log, folding the edges at each end beneath the log and brush with some melted butter. Carefully place the strudel on the prepared baking sheet, seam-side down. Bake the strudel until golden brown, 15 to 18 minutes. Remove from the oven and cool for 15 minutes before cutting into 2-inch slices. Sprinkle with confectioners' sugar just before serving. Serve plain or with ice cream.

ALTWIENER APFELSTRUDEL (TRADITIONAL VIENNESE APPLE STRUDEL)

Altwiener Apfelstrudel (Traditional Viennese Apple Strudel) image

I found this recipe on the internet, submitted by caterer Jennifer McGavin. Strudel is a traditional Austrian pastry, usually topped with whipped cream, vanilla sauce, or vanilla ice cream to make it a sweeter treat.

Provided by Northwestgal

Categories     Low Protein

Time 2h30m

Yield 1 studel loaf, 16 serving(s)

Number Of Ingredients 17

2 1/2 cups all-purpose flour
1 pinch salt
2 tablespoons canola oil
1 teaspoon canola oil
13 tablespoons lukewarm water
7 tablespoons butter
1 cup plain breadcrumbs
1/2 cup raisins
6 tablespoons rum (or more, if needed) or 6 tablespoons orange juice (or more, if needed)
6 -8 cups chopped baking apples (5-6 Gala or Granny Smith)
3/4 cup granulated sugar
1 -2 teaspoon lemon zest
4 tablespoons lemon juice (about 1/2 large lemon)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter, melted
powdered sugar, for dusting

Steps:

  • To make the dough: Place the flour in a bowl with the salt and add the water, then the oil. Stir with a spoon until it comes together and you can work it with your hands. Knead the dough until it is smooth and tacky, but not sticky, about 5 minutes. If you need to add more flour, only add it 1 teaspoon at a time, and rework the dough after each flour addition (before adding more). Form the dough into a smooth ball, brush it with a little oil and place it back in the bowl for about 1 hour at room temperature. Covering the dough with plastic wrap is fine, too.
  • To Make the First Filling: Heat the butter in a pan until foaming and add the breadcrumbs. Toast them, stirring constantly, until they are medium brown. Let cool.
  • To Make the Second Filling: Heat the raisins for 30 seconds in microwave oven. Then soak raisins in rum (or orange juice); set aside until ready to use.
  • Peel, core and chop the apples into small pieces. Add the sugar, lemon juice, lemon zest, cinnamon and nutmeg. Place raisins in colander to allow excess liquid to drain. Add to apple mixture, and mix well.
  • Roll out the dough on a lightly floured board to about 9 inches by 13 inches. Lightly flour a clean towel with no nap, place it over the dough, grab both (towel and dough) and flip over so towel is on bottom and dough is on top. Straighten both, as necessary. Using your hands, gently stretch the dough thinner on all sides, working your way around the sheet of dough. Stretch it until it starts to look translucent in spots. Let it rest a minute and stretch the areas you think are too thick, again. Brush dough with melted butter.
  • Spread the first filling (toasted breadcrumbs) over 2/3 of the dough and pat down evenly. Spread second filling (apple/raisin mixture) over the other 1/3 of the dough. With kitchen shears, snip off any thick edges of dough, so dough is more uniform. Using the towel, fold one side of the dough over the filling. Brush exposed dough with melted butter. Fold in ends of dough like a burrito. Fold other side of dough up and over filling to form a loaf. Brush with butter.
  • Use the towel to lift the strudel to a parchment-lined baking sheet. Gently roll strudel onto parchment paper so that the seam-side is down.
  • Brush melted butter over the dough. Bake at 400° for 20 minutes. Reduce heat to 350° and bake for 40-60 minutes longer.
  • Remove strudel from oven, brush with melted butter again, then sprinkle with powdered sugar while still warm. Transfer to a serving platter with a large spatula (or two). Cut into 1 1/2 inch wide slices with a bread knife or serrated knife. Serve with your choice of whipped cream, vanilla sauce, or vanilla ice cream.

Number Of Ingredients 14

1 1/2 cups all-purpose flour
1 large egg
1/4 teaspoon salt
1 1/2 tablespoons corn oil
1/3 cup warm water
1/4 cup unsalted butter, melted, for brushing
1/4 cup fine dry breadcrumb
1/2 cup sugar
1 teaspoon ground cinnamon
5 large tart apples, peeled cored, and thinly sliced (such as granny smith)
1 tablespoon lemon juice
1/4 cup raisins
1 cup finely chopped walnuts
1 tablespoon confectioners' sugar, for dusting baked strudel

Steps:

  • TO MAKE THE STRUDEL DOUGH, measure the flour into a large bowl and make a well in the center of it.
  • In a small bowl, beat the egg, salt, oil, and water until blended.
  • Pour the liquids into the well in the flour and mix until a soft dough forms.
  • Pick up the dough with one hand (coat your hand lightly with oil to prevent sticking) and slap the dough into the bowl or onto a lightly oiled surface about 100 times.
  • (Or place the dough into an electric mixer with dough hook and beat at high speed for 10 minutes.) The dough will be sticky at first, but then will become elastic and will leave the board and hands clean.
  • Divide the dough into 2 lightly oiled bowls and let rest, covered, for 10 minutes.
  • Cover a table with a smooth, plastic tablecloth and rub very lightly with an oil-soaked cloth.
  • Dust one of the parts of dough lightly with flour and invert the bowl onto the plastic tablecloth-covered surface.
  • Dust the top with flour.
  • Pat the dough down as flat as possible, then with a lightly floured rolling pin, roll out to make a circle about 10 inches across.
  • Working from the underside of the dough with palms up, gently and slowly stretch the dough until measure 30 inches each way and is paper thin.
  • Brush the dough with 2 tablespoons of the melted butter.
  • Using the plastic tablecloth really makes it so much easier.
  • MAKE THE FILLING.
  • In a small bowl, mix the crumbs, 1/4 cup of the sugar, and 1/2 teaspoon of the cinnamon.
  • Sprinkle the dough evenly with 2 tablespoons of this mixture.
  • In a large bowl, mix the apples with the lemon juice, the remaining sugar, and cinnamon.
  • Sprinkle the dough with half the apple mixture and half the raisins and the chopped walnuts, leaving about one-quarter of one end of the dough uncovered, and 6 inches from 2 OPPOSITE ENDS uncovered.
  • Lift the 2 OPPOSITE SIDES of unfilled edges up over the filling.
  • Brush the fold edges with 1 tablespoon more of the melted butter.
  • Starting from the FILLED EDGE of the dough, lift the plastic cloth so that the strudel will roll up, rolling toward the UNFILLED EDGE of the dough, forming a roll.
  • Place the roll on a buttered baking sheet with the seam side down.
  • Brush the roll with 1 tablespoon more melted butter.
  • REPEAT the stretching, filling and rolling procedure with the SECOND HALF of the dough and the remaining filling ingredients.
  • Preheat the oven to 400 F.
  • Bake for 35 to 45 minutes or until golden brown.
  • Dust with confectioners' sugar.

  • The day before you plan to bake, place the raisins and rum in a small nonreactive bowl and cover. Set aside for 24 hours.
  • The day of baking, make the dough. Combine the flour and salt in a small bowl. Pour the oil into the flour mixture, and then slowly add the water, using your index finger to stir. The mixture will be very wet. Continue to stir with your fingers, and as soon as the dough has come together, dump it out onto a work surface (you may lightly flour it if needed, but once you get started with kneading, you won’t need to add more) and start kneading the dough. Knead for 10 minutes (set a timer; the time will pass faster than you think). At the end of the kneading, the dough should be soft, supple, and silky to the touch. Form it into a ball and place it on the work surface. Invert the bowl over the dough and let it rest for 30 minutes.
  • While the dough is resting, prepare the apple filling: Peel, quarter, and core the apples. Slice the quarters thinly, and then cut the slices in half crosswise. Place in a large bowl and toss with the lemon juice, sugar, and cinnamon. Add the plumped raisins and any rum left in the bowl.
