RICHARD'S CHICKEN BREASTS
These are the plumpest, juiciest chicken breasts ever! You can change the recipe by changing the sauces (for example, add fruit jams or jellies, or hot peppers; everything I like goes well with this recipe!)

Steps:
- Season flour with poultry seasoning. Dredge the chicken breasts in the seasoned flour. Melt the butter with the oil in a medium skillet over medium-high heat. Working in batches, fry the chicken in the hot butter mixture for about 5 minutes each side, depending on the thickness. Remove the chicken and set aside (keep warm.)
- Deglaze pan with Marsala wine (deglazing is swirling or stirring a liquid in a pan to dissolve cooked food particles remaining on the bottom). Add the chopped mushrooms, chopped onions and rosemary. Saute for 5 minutes over high heat.
- Return the chicken breasts to the skillet, baste with drippings, put cheese on the breasts and cook for another 2 1/2 minutes with the lid on tightly. Don't touch the lid! Remove from heat and let stand for 10 minutes, until the breasts cook through. Check the seasoning and adjust. You will have the plumpest, juiciest chicken breasts you can imagine!

THE BEST BAKED CHICKEN BREASTS
The downfall of most baked chicken breast recipes is the long time in the oven that dries out the lean meat before it can fully cook through. We've solved that problem with a couple of secret weapons. The first is white wine added to the baking dish, which creates steam. (While we think it's worth using wine, you could substitute stock or even water.) The second is a piece of parchment paper placed directly on top of the chicken to lock in the moisture during baking. The result is the best boneless, skinless chicken breasts that are plump and juicy, with a minimum of hands-on time. A bunch of parsley and lemon slices infuse the dish with fresh flavor and the seasoning is neutral enough that the chicken can be used for a variety of different meals. Serve it alongside vegetables and grains, shredded into soup, spiced up for tacos or chopped on top of salad. Feel free to switch up the herbs and citrus if you have leftovers in the fridge to use up.

- Preheat the oven to 350 degrees F.
- Place the parsley in the center of a 9-by-13-inch baking dish and top with the lemon slices. Pour the wine around the parsley. Brush the tops of the chicken with the olive oil and season with the paprika, 1 teaspoon salt and a few grinds of black pepper. Arrange the chicken breasts on top of the lemon slices. Cut an 8-by-10-inch piece of parchment and place it on top of the chicken.
- Bake until the chicken registers 165 degrees F on a digital thermometer, 40 to 45 minutes. Let sit for 5 minutes before serving. The chicken can be refrigerated in an airtight container for up to 5 days.
SOUS VIDE CHICKEN BREAST
Since the dish is tightly sealed and cooked in a controlled temperature water bath, it helps foods retain their natural juices and allows the cook to effectively add flavor. In a professional kitchen, the food is vacuum sealed and cooked in an immersion bath. This equipment is still too expensive for most home cooks, but there are several ways around it. You can use a large heavy duty cooler with a lid - that's right, cooler - with a probe thermometer. All you have to do is preheat the cooler with hot tap water for about 10 minutes, then empty and fill with water the temperature you desire. Keep extra boiling water on hand to add if the temperature in the cooler cools. You need food grade plastic to vacuum seal the food. If you don't have a vacuum sealer, guess what? You can still do it. Freezer safe plastic storage bags are safe up to 195 degrees F. Since even if you squeeze out all the air, they do not make a very tight seal, it is best if you include some oil or flavoring liquid in the bag. You can also use food grade plastic wrap. Your food can even be cooked on the stovetop, but it is more difficult to maintain the even temperature required for this type of cooking method; but it can be done with vigilance. This recipe is for one, but six of more can be cooked at the same time in one water bath. Just watch the temperature and add more hot water as needed to maintain temperature.

- Preheat (see description) and prepare a 165 degree F water bath.
- For best results leave as much skin on the chicken as possible, but trim any extra fat; season all sides with a small pinch of salt.
- Allow the chicken to come to room temperature before sealing in the plastic.
- To effectively encase in plastic wrap, you should use several layers and fold over the edges to give you something to grip because you will need to put pressure on the wrap to eliminate any air pockets to get a good seal.
- Once in the plastic, shape the chicken into a cylinder, then tie off the ends.
- Cook in the water bath for 45 minutes, maintaining a temperature of 165 degrees F.
- Remove the chicken from the water and insert a probe thermometer to ensure the chicken has reached a temperature of 165 degrees F (if it is not done, return it to the water, hole and all, until it is).
- Once done, let chicken rest 10 minutes; cut one end of the plastic and slide chicken out.
- Remove excess moisture with paper towels.
- Heat a pan with a film of canola oil and sear to crisp the skin; slice and serve.
