Sharon Rose Ristich of Rochester, New York creates a tasty fruit topping for convenient refrigerated biscuits. "I usually double this recipe and put it in two pie plates to serve a crowd," she says. "It really isn't hard to make the topping, but in a pinch, you can substitute canned apple pie filling instead," she suggests.

- In a large saucepan, combine the apples, sugar, tapioca, lemon juice, cinnamon, salt and nutmeg. Let stand for 15 minutes. Cook over medium heat for 8-10 minutes or until apples are tender. , Transfer apple mixture to a greased 9-in. pie plate. Place biscuits over apples. Bake at 375° for 18-20 minutes or until biscuits are browned. Immediately invert onto a serving plate.

- In a small bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Combine the egg, milk and molasses; stir into flour mixture just until moistened. Stir in apple. Turn onto a lightly floured surface; knead 8-10 times., Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a baking sheet coated with cooking spray. Bake at 425° for 6-8 minutes or until golden brown. Serve warm.

HOMEMADE APPLE BISCUITS
Steps:
- Preheat oven to 425 degrees.
- In a medium bowl, combine the flour, baking powder, baking soda, sugar, salt, cinnamon, nutmeg, ginger, and cloves.
- Cut in the cold butter and apple using two forks or a pastry blender.
- Once crumbs have formed, stir in the buttermilk.
- Sprinkle flour on your working surface as well as on top of the dough in the bowl.
- Turn the dough onto your floured working surface and begin to knead it. Add more flour if needed to prevent sticking.
- Work dough until its about 1 inch thick, then fold in half and continue working dough a few times, ending with it about 1 1/2 inches thick.
- Cut the biscuits using a biscuit cutter or something circular that will cut them around 3 inches.
- Place biscuits into a cast iron skillet or nonstick baking pan.
- Bake for about 15-20 minutes in oven, or until slightly golden brown.
- Remove and serve!

- In bowl, stir together sugar, chopped nuts and cinnamon. Set aside. Stir together biscuit mix, cheese and applesauce. Make a well in center of cheese mixture and add apple juice all at once, stirring just until moistened. Form into a ball. Flatten dough out on a floured surface. Divide into 18 pieces and shape each into a ball. Roll in melted butter or margarine and then in sugar mixture. Arrange in a greased 9" round baking pan. BISCUITS WITH APPLE CRISP JAM

- Preheat the oven to 375 degrees F.
- Core and peel the apples, then cut them each in half and each half into thin slices. Put them in a bowl with the molasses, cinnamon, ginger, lemon zest and juice, 1 tablespoon brown sugar and 1/2 teaspoon salt. Toss to blend.
- Combine the flour, nutmeg, remaining brown sugar and remaining 1/2 teaspoon salt in another bowl. Add cubed butter and break it up with your fingers, integrating the flour with the butter.
- Grease the bottom and sides of a shallow rectangular 6-by-12-inch baking dish with the remaining tablespoon butter. Layer the apples in the dish evenly with the flour mixture. Place the dish in the center of the oven and bake until the apples are tender when pierced with the tip of a knife, 35 to 40 minutes. Let cool.
- Break up Cream Biscuits into large chunks. Layer into a bowl or large jar, so that layers of fruit, topping and biscuits are stacked on top one another.
- Preheat oven to 350 degrees F.
- Sift together the flour, baking powder, granulated sugar and salt in a large bowl. Add the cream to the dry ingredients. Use your hands to mix the dough, taking care that all ingredients are well blended. Turn the dough out onto a lightly floured surface and pat down with floured hands until it is about 1-inch thick. (If the outside edges start to show cracks, cup the outer edge with your hands and push the dough towards its own center.)
- Lightly flour a knife (to avoid sticking as you cut) and slice the dough into 1 1/2-inch squares. Reflour the knife each time you make a cut.
- Arrange the biscuits with some distance between each on a nonstick baking sheet or one lined with a sheet of parchment. Bake until they start to brown lightly, 15 to 18 minutes.
