2 pounds large red bliss or Yukon gold potatoes, peeled and cut into 1/2-inch
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1/2 onion, chopped
1/2 teaspoon paprika
1 clove garlic
1/4 cup fresh parsley
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the potatoes, cover and cook over medium-high heat until just tender, about 6 minutes; drain.
  • Heat the butter and olive oil in a large cast-iron skillet over medium heat; add the potatoes and spread into a single layer. Cook, undisturbed, until they start browning on the bottom, about 5 minutes. Add the onion and sprinkle with the paprika; flip the potatoes and cook 5 more minutes. Stir once, then continue cooking until the potatoes are mostly golden brown, about 5 more minutes.
  • Meanwhile, roughly chop the garlic, pile the parsley on top and sprinkle with 1 teaspoon salt. Chop and mash together until finely minced. When the potatoes are done, add the garlic mixture to the skillet and toss to coat; cook until heated through, about 2 minutes. Season with salt and pepper.

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
  • Heat 1 tablespoon of the bacon fat and 1 tablespoon of the vegetable oil in a large cast-iron skillet over medium-high heat. Add the onion and cook, stirring, until golden brown, about 10 minutes. Transfer to a bowl.
  • Wipe out the skillet and return to medium-high heat. Heat the remaining 3 tablespoons bacon fat and 2 tablespoons vegetable oil. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on one side, about 8 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, until well-browned, about 12 minutes. Stir in the onions, heat through, and sprinkle with the cayenne, if desired. Transfer to warm platter and serve.

4 tablespoons (1/2 stick) butter
1 tablespoon extra-virgin olive oil
6 ounces fresh shiitake mushrooms, stemmed, large mushrooms quartered
6 ounces fresh oyster mushrooms, large mushrooms quartered
1/4 cup minced fresh parsley

Steps:

  • Cook potatoes in large saucepan of boiling salted water until just tender, about 12 minutes. Drain potatoes. Cool. (Can be made 1 day ahead. Cover; chill.)
  • Melt 2 tablespoons butter with oil in heavy large skillet over medium-high heat. Add potatoes; sauté until golden, turning occasionally and adding 1 tablespoon butter halfway through cooking, about 18 minutes.
  • Melt 1 tablespoon butter in medium skillet over medium-high heat. Add all mushrooms; sauté until golden, 6 minutes.
  • Add mushrooms and parsley to potatoes; toss to combine. Season with salt and pepper.

When I bake potatoes I make extra for home fries, I bake them in foil so they will be soft on the outside. Make sure to use plenty of butter when making these and fry them slowly and resist the temptation to flip them constantly, you want them to brown but not burn. Baking time is not included in prep. time.

Steps:

  • Melt 2 Tbl. butter in skillet on medium heat and cook the onions until just soft.
  • Add the potatoes that have been cut into small chunks,garlic salt and pepper to taste and another 2 tbl. butter. Cook on medium heat browning slowly and adding butter 2 tbl. at a time until browned.

2 tablespoons margarine or 2 tablespoons butter
1/2 teaspoon salt

Steps:

  • Preheat oven to 400 F.
  • Melt margarine/butter over medium heat in a large heavy bottomed fry pan which has a heat resistant handle(I use cast iron)
  • When butter starts to sizzle add potatoes and let fry for 2 minutes.
  • Turn with a spatula and cook for another 2 minutes.
  • Continue until all sides of potato cubes are browned.
  • Place in preheated oven for 15-20 minutes until potatoes are tender.*.
  • (Cooking time will depend on the type of potato used. Yukon Gold/Katahdins/Red Norlands take less time to cook than Shepradies/Russett/BellRus. Use your own judgement.).

2 1/2 pounds small Yukon gold potatoes
Coarse salt
3/4 pound thick-sliced bacon, cut into 1/2-inch pieces
1 small red bell pepper, cut into 1/2-inch dice
1 small yellow bell pepper, cut into 1/2-inch dice
1 red onion (about 10 ounces), cut into 1/2-inch dice
1 tablespoon fresh thyme leaves
2 tablespoons roughly chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Place potatoes in a medium saucepan. Cover with water; bring to a boil over high heat. Salt the water. Reduce heat to medium-high; cook until potatoes have softened but are still slightly firm, 12 to 15 minutes. Drain in a colander. When cool enough to handle, peel potatoes; cut into 1-inch pieces. Set aside.
  • Cook bacon in a large skillet set over medium heat until all fat has been rendered and bacon is crisp and brown, about 15 minutes. Remove bacon with a slotted spoon; set aside on a paper towel to drain. Pour off all but 2 tablespoons of the bacon fat. Add reserved potatoes; cook over medium heat, stirring occasionally, until golden on all sides, about 10 minutes. Add reserved bacon, peppers, onion, and thyme; cook until vegetables have softened, 5 to 7 minutes. Stir in parsley, and season with salt and pepper. Remove from heat, and serve.

  • Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
  • As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.
