BRIT'S CHEESY ONION HOME FRIES

Steps:
- Microwave potatoes as you would for a baked potato, but cook until*slightly* underdone- 4 take 12-14 minutes on my microwave (or use leftover baked/cooked potatoes).
- When cool enough to handle, quarter potatoes and then cut into about 1 inch pieces (we leave the skins on).
- Heat 2 tbl of butter or oil in a large non-stick skillet (or if you just cooked bacon in the pan, you can reserve some of the bacon grease and use that to fry in).
- On medium heat, add onions and cook until 1 or 2 minutes before adding potatoes, salt and pepper, stirring to combine.
- Let cook for a few minutes, flipping or stirring gently, until onions are tender and potatoes are to desired crispness.
- If necessary, add additional butter or oil to prevent sticking.
- Remove home fries from pan and transfer into microwavable casserole dish.
- Sprinkle with one cup of cheese and fold in gently.
- Sprinkle remaining cup of cheese on top and microwave for 1 to 2 minutes until cheese is melted.
- Sprinkle a bit of parsley on top, if desired.

Steps:
- Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
- Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
- Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. HOME FRIES
When I bake potatoes I make extra for home fries, I bake them in foil so they will be soft on the outside. Make sure to use plenty of butter when making these and fry them slowly and resist the temptation to flip them constantly, you want them to brown but not burn. Baking time is not included in prep. time.

HOME FRIES WITH ONIONS
The recipe has been handed down at least three generations and it always gets oohs and aahs from my family when I decide to make it. I either serve it with steak or ham chops. Be careful when cooking the potatoes as they sometimes pop right out of the skillet. One of those screen covers would work really well.
