Yield Makes 6 servings, 1-1/3 cups each.

Ingredients

3 cups farfalle (bow-tie pasta), uncooked
1 lb. lean ground beef
2 carrots, sliced
4 green onions, chopped
2 cups milk
1 cup frozen peas
1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes
1 cup KRAFT Shredded Cheddar & Monterey Jack Cheeses

Steps:

Cook pasta as directed on package. Meanwhile, brown meat in large deep skillet or Dutch oven on medium-high heat; drain. Return meat to skillet. Add carrots and onions; cook 5 min., stirring occasionally.
Drain pasta. Add to meat mixture with milk, peas and VELVEETA; stir. Cook on medium-low heat 5 min. or until VELVEETA is melted and mixture is heated through, stirring occasionally.
Sprinkle with shredded cheese.

This recipe was from my Junior High Home Ec class. I can't believe my mom has saved the recipe sheet for so many years. However, I am glad because we are still enjoying this easy recipe. The original recipe calls for Penne pasta but we like this with a types of pasta.

Ingredients

500 g round steaks, cut into thin thins
1 tablespoon oil
1 clove garlic, crushed
1 small onion, finely chopped
10 fresh mushrooms, sliced
1 green pepper, chopped
1 teaspoon basil
1 teaspoon thyme
1 teaspoon oregano
2 cups tomatoes, pureed or 2 cups tomato sauce
1/2 teaspoon pepper
300 -400 g pasta, cooked
1/2 cup parmesan cheese (optional)

Steps:

In a large skillet or a wok, stir fry beef strips in hot oil over high heat for 2 minutes.
Add garlic, onion, and spices and cook for 2 minutes longer, until beef is no longer pink.
Drain and then return to pan.
Stir in tomatoes and simmer for 10 minutes.
Add mushrooms and green pepper and cook for 5 minutes.
Serve over cooked pasta and top with Parmesan cheese if desired.

Ingredients

1 tablespoon butter
2 leeks, white parts only, cleaned, cooked and sliced
1 boneless skinless chicken breast, cut into strips
1/2 cup dry white wine
1 tablespoon fresh tarragon, chopped
1 1/2 cups chicken stock, heated
1 tablespoon cornstarch
3 tablespoons cold water
1 tablespoon fresh parsley, chopped
salt, to taste
black pepper, to taste
cooked penne (enough to serve 4) or rigatoni pasta (enough to serve 4)

Steps:

melt butter in saute pan over meduim heat, add leeks and chicken, season with salt and pepper, cover and cook for 5 minutes over low heat.
remove cover and add wine and tarragon, cook for 3 minutes over low heat.
add chicken stock and correct seasoning, simmer for 3 minutes longer.
dissolve cornstarch in cold water, incorporate into sauce and bring to a boil for 1 minte.
pour sauce into large bowl, add parsley and pasta.
mix well and serve.
