HOLIDAY OATMEAL COOKIES
This recipe was given to me by my sister. I made a few minor adjustments. The oatmeal cookies are bursting with fruit and nuts. They are absolutely delicious. They are nice soft and chewy. I made two batches of these to Freeze for Christmas.

Steps:
- 1. Beat softened butter and sugars together in a bowl until smooth.
- 2. Add in the eggs and vanilla. Mix well and set aside.
- 3. In another bowl. Whisk together baking soda, salt, flour and cinnamon together.
- 4. Mix flour mixture with the sugar butter mixture. Mix well to combine.
- 5. Add oatmeal, fruit and nuts. Mix well. ( optional refrigerate dough for one hour prior to baking)
- 6. Drop by tablespoons onto parchment lined sheet pan.
- 7. Bake at 350 degree's bake 10-15 minutes or until edges are light golden brown. Remove to wire rack to cool.
HOLIDAY OATMEAL COOKIES WITH DRIED FRUIT AND NUTS
These have just about everything in them, oil takes the place of butter to create a crispy outside with a chewy inside and whole wheat flour for extra flavor, they will make a wonderful addition to your holiday baking tray! --- servings is only estimated, these may also be baked in baking pan then sliced as bars.

- Set oven to 350 degrees F.
- Grease a large cookie sheet/s.
- In a large bowl combine oil with eggs, both sugars and extract; beat well using an electric mixer on medium speed.
- In a small bowl combine whole wheat flour with baking soda, salt and cinnamon (if using) add to the oil mixture and mix just until combined.
- In a bowl combine the rolled oats with coconut, cranberries, cherries, almonds and chocolate chips (if using) add to the batter and mix until combined.
- Roll into about 1-inch balls then place onto greased baking sheet.
- Flatten slightly with a fork.
- Bake about 8-10 minutes or until golden brown.
- Cool 2 minutes then remove to a rack to cool completely.
HOLIDAY OATMEAL COOKIES
These cookies can also be given as a gift. To create a cookie kit, layer dry ingredients in a mason jar, cover the lid with gingham fabric, attach a wooden spoon and a copy of the recipe, and tie with raffia.

- Preheat oven to 350 degrees. On waxed paper, combine flour, baking soda and salt.
- In large bowl, with mixer on medium speed, beat butter and brown and granulated sugars until creamy, occasionally scraping bowl with spatula. Beat in egg and vanilla.
- Reduce speed to low; gradually beat in flour mixture just until blended, occasionally scraping bowl. With spoon, stir in oats, raisins and chocolate chips.
- Drop dough by heaping tablespoons, 2 inches apart, on ungreased large cookie sheet. Bake cookies 13-15 minutes or until tops are golden. Transfer cookies to wire racks to cool.
- Repeat with remaining dough. Store cookies in covered container at room temperature for up to 1 week or in freezer up to 3 months.

CHRISTMAS OATMEAL COOKIES
The recipe for these cookies was on a box of store brand oatmeal. When making them, we ran out of raisins and ended up substituting with craisins (i.e. cranberry raisins). The result was a Christmas classic for our household... Recipe developed by cookbook author Marlene Sorosky Gray.

Steps:
- Place racks in upper third of oven and preheat to 350°F.
- In a large bowl with electric mixer, beat butter, brown sugar and vanilla until light and fluffy, about 1 minute.
- Add eggs and mix until thoroughly incorporated.
- Add oats, flour, baking powder, cinnamon, nutmeg and salt. Mix on low speed until blended.
- Add craisins (i.e. cranberry raisins) and nuts, if using, and mix on medium speed until incorporated.
- Drop batter by heaping tablespoons 1 1/2 inches apart onto greased baking sheets.
- Bake for 10 to 13 minutes or until golden brown. Cookies will feel soft but will firm up as they cool.
- Let stand on baking sheets 2 minutes before transferring to racks to cool.

- In a medium bowl, combine oats, flour, baking soda and brown sugar. Stir to blend. Cut in shortening with a pastry blender until mixture resembles corn meal. Spoon about 1/2 cup mixture into each of 8 small containers or ziplock bags. Seal bags tightly. Label with date and contents.
- Store in a cool dry place. Use within 12 weeks.
- Makes 8 packages of Children's Cookie Mix.
- Each package makes 9 cookies.

- To Use: Mix 3/4 teaspoon water and stir to form dough. Form into 1/2 inch balls. Place on ungreased baking pan and press down slightly on each to flatten out a bit. Cook for 5 minutes.

- Combine the first five ingredients; cut in shortening until crumbly. Add oats and mix well. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 5 batches (10 cups total). , To prepare cookies: In a bowl, combine 2 cups cookie mix, egg, milk and vanilla; mix well. Fold in chocolate chips and pecans if desired. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks to cool.

This is a cookie mix I make every Christmas. When time is at a premium...being prepared is always a good thing. I got this from a Christmas edition of Pillsbury's Cookbook. Using the baking mix you can make several different cookies for your Christmas cookie trays. The beauty of this is you have the mix in the refrigerator to use whenever you have short time to whip up a lovely cookie! I will add the cookie recipes asap.

- Lightly spoon flour into measuring cup;level off.
- In a 4-quart bowl, combine 1/2 each of the flour, sugar,baking powder, salt.
- Using a fork or pastry blender, cut 1/2 of the butter into flour mixture until mixture resembles coarse crumbs.
- Place in a large, tightly covered container.
- Repeat with remaining half of ingredients.
- Store in refrigerator or freezer.
- Use within 4 weeks.
- Measure by dipping cup into mix;level off.
- Return unused mix to refrigerator or freezer.
- *Allow measured mix to come to room temperature before adding ingredients to make any of the recipes in this collection.
- Makes 22-23 cups cookie mix.
- "TIP".
- To prepare cookie mix in food processor, place 1/4 of each ingredient in food processor bowl with metal blade.
- Process until mixture resembles coarse crumbs.
- Place in tightly covered container.
- Repeat with remaining ingredients.
- If desired, recipe can be cut in half.
- Makes 11-12 cups cookie crumbs.
