My Mom's recipe and one of my favorites. Spicy and chewy, they store well and can be frozen. Great for gift giving or shipping.

¾ cup margarine, melted
1 cup white sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground ginger
½ cup white sugar

Steps:

  • In a medium bowl, mix together the melted margarine, 1 cup sugar, and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger; blend into the molasses mixture. Cover, and chill dough for 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto ungreased baking sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until tops are cracked. Cool on wire racks.

1 - stick butter, softened
1/2 cup - sugar
1/4 cup - light or dark brown sugar
1 Tbl. - molasses
1 tsp. - vanilla
1 - egg
2 cups - flour
1 tsp. - cinnamon
1/2 tsp. - pumpkin pie spice
1/4 tsp. - salt
3/4 tsp. - baking powder
30-40 - assorted jolly rancher or life savers hard candies, crushed

Steps:

  • Pre-heat oven to 375°F. Line two baking sheets with parchment paper or Silpat. In a large bowl, using an electric mixer, cream together butter and sugars until fluffy, about 2 minutes. Add molasses and vanilla extract, mixing until incorporated. Add egg and mix until light and smooth, about 1 minute on medium speed. Sift together flour, spices, salt, and baking powder. Fold dry ingredients into wet mixture. Use electric mixer to blend just until flour is incorporated. Divide dough in half and flatten into two disks. Wrap disks in plastic wrap and refrigerate at least an hour and up to 2 days.
  • Remove any wrappers on candies and separate them by color into plastic bags. Use a mallet to crush candies. Place one disk between two large sheets of waxed paper and roll to 1/4-inch thickness. Use cookie cutters to cut dough into desired shapes. Transfer cookies to prepared baking sheets, about 1 inch apart. Using a smaller cookie cutter or a knife, cut shapes into centers of cookies, reserving these center bits to add into extra dough. Use a spoon to sprinkle the crushed candy into the hollowed-out centers of the cookies, filling to the edges. Try to keep the candy within the centers. Any candy specks that fall on the cookie will color the cookie. *If cookies will be hung as ornaments or decorations, poke a small hole in the top of each cookie before baking.
  • Bake 9 to 10 minutes. The candy should be melted and bubbling and the cookies just barely beginning to brown. Remove baking sheets from oven and place on wire racks to cool. Allow cookies to cool on pans at least 10 minutes; otherwise, the candy centers may separate from the dough. When cookies are completely cooled, remove and store in an airtight container. String with ribbon if you want to hang as an ornament. Makes 2 to 4 dozen cookies, depending on how large you make them.

These are my dad's favourite cookies. He says they remind him of the cookies his mom used to make. Chewy and delicious....they scream for an accompanying cold glass of milk or cup of tea. Enjoy!

14 tablespoons butter, melted (I wouldn't substitute margarine for this!)
2 cups white sugar, divided
1/3 cup molasses
1 large egg, lightly beaten
2 1/2 cups all-purpose flour
1 1/4 teaspoons ground ginger
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • In a medium size bowl, mix the melted butter, 1 cup of sugar and the molasses.
  • Add egg and stir until well mixed.
  • In a separtate bowl, mix the flour, ginger, cinnamon, baking soda and salt.
  • Gradually add to the butter mixture, stirring until a soft dough is formed.
  • Shape the dough into 1-inch balls, then roll each ball in the remaining sugar.
  • Bake on an ungreased baking sheet for 10 minutes.

3 cups sifted all-purpose flour
2 teaspoons baking soda
3/4 teaspoon salt
1 tablespoon ginger
1 teaspoon cinnamon
1/2 cup shortening
1/2 cup sugar
1 cup molasses
1 egg, beaten
1/2 cup boiling water
1 tablespoon vinegar

Steps:

  • Preheat oven to 375.
  • Grease baking sheets.
  • Sift together flour, soda, salt, ginger and cinnamon.
  • Cream together shortening and sugar until fluffy.
  • Add molasses and egg and beat well.
  • Add flour mixture to creamed mixture alternately with water and vinegar combined, mixing thoroughly.
  • Drop by tablespoons 2 inches apart on baking sheets.
  • Sprinkle with sugar if desired.
  • Bake in moderate (350) oven 12 to 15 minutes.

1 cup molasses
1/2 cup sugar
1/2 cup margarine
1/3 cup boiling water
1 teaspoon vanilla
1 egg
3 cups flour
1 teaspoon ginger
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup sugar, in small bowl

Steps:

  • In a bowl combine molasses and sugar.
  • Add butter to boiling water; add to the molasses mixture, mix in vanilla and egg.
  • Stir in flour, ginger, salt, cinnamon, baking soda, and baking powder blend well.
  • Refrigerate for 1 hour.
  • Drop by teaspoonfuls into small bowl of sugar roll around, shake off excess; place on greased baking sheets.
  • With flat bottom glass flatten cookies a little.
  • Bake at 375 degrees for 10 to 15 minutes.

3/4 cup shortening (3/4 cup correct amount)
1 cup packed brown sugar
1/2 cup white sugar (reserved for coating raw dough balls)
1 large egg
1/2 cup molasses
2 1/2 cups all-purpose flour
1/2 teaspoon salt (see note below)
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon allspice
1 teaspoon nutmeg

Steps:

  • Cream together shortening and brown sugar.
  • Stir in egg and molasses and mix well.
  • Fold in dry ingredients and stir.
  • Cover and chill till firm (1-2 hours).
  • Preheat oven to 350°.
  • Roll dough into small balls and roll in white sugar.
  • Place on lightly greased cookie sheet.
  • Bake at 350° for 9-10 minutes.
  • Leave on sheet one minute until set.
  • I changed the amount of salt in here. My original recipe calls for 1 tsp of salt but that may be too much for some. A few people have made it as is (the majority) with no complaints on salt, however a few commented it was too much. I think 1/2 tsp can be used with no alterations to the recipe. I will leave it up to you either way you still WIN !
