It was at the very first Thanksgiving I spent with my husband's family that I tasted this for the first time. My mother-in-law shared the recipe. I serve it for special occasions, plus it's a main-stay at the potlucks we have at work. 3 egg yolks, beaten
3 tablespoons water
3 tablespoons white vinegar
1/2 teaspoon salt
2 cups heavy whipping cream, whipped
3 cups miniature marshmallows
2 cups halved green grapes
1 can (20 ounces) pineapple tidbits, drained
1 can (11 ounces) mandarin oranges, drained
1 jar (10 ounces) red maraschino cherries, drained and sliced
1 cup chopped pecans
3 tablespoons lemon juice

Steps:

  • In a large saucepan, combine egg yolks, water, vinegar and salt. Cook over medium heat, stirring constantly, until mixture thickens and reaches 160°. Remove from the heat and cool; fold in whipped cream. , In a large bowl, combine remaining ingredients. Add dressing; toss to coat. Cover and refrigerate for 24 hours.

16 ounces plain yogurt
1/2 teaspoon ground nutmeg
1/4 cup brown sugar
1 teaspoon vanilla extract
6 -8 Red Delicious apples, cored and cut into 1/2 inch cubes
1 cup green grape

Steps:

  • Combine yogurt, nutmeg, sugar and vanilla, mixing well.
  • Pour over prepared fruit, tossing to cover the apples and grapes.
  • Chill.
  • Before serving, dust with a little extra nutmeg.

We enjoy this during Thanksgiving and Christmas. Traditionally this is made with cherry Jell-O, however, to be a bit healthier I now make it with "no sugar added" fruit juice. Feel free to substitute cherry gelatin and water (made to package directions) in place of the unflavored gelatin and fruit juice. While many enjoy the addition of pecans, I omit due to personal preference. If you have young children, I recommend peeling the apple. If using an unpeeled apple, use a red apple for the best color.

1 (1/4 ounce) package unflavored gelatin (Knox brand)
1 cup cranberry-raspberry juice or 1 cup other red juice, chilled
1 cup cranberry-raspberry juice or 1 cup other red juice, boiling
2 cups fresh cranberries, chopped in a food processor
1 (15 ounce) can pineapple tidbits, drained (if the tidbits are large you may want to cut in half)
1 cup red seedless grapes, halved
1 apple, cored and chopped (peeled or unpeeled)
3/4 cup mini marshmallows
1/2 cup toasted pecans, chopped

Steps:

  • In a medium bowl, sprinkle unflavored gelatin over the 1 cup chilled juice. Let stand for 1 minute.
  • Meanwhile, heat remaining 1 cup juice to boiling. (I heat the juice in a glass measuring cup in the microwave for 2 minutes.).
  • Stir the boiling juice into the gelatin mixture. Stir until the gelatin is completely dissolved.
  • Refrigerate until chilled but not set.
  • Remove from the refrigerator. Stir in the chopped cranberries, pineapple tidbits, grapes, chopped apple, marshmallows, and chopped pecans (optional).
  • Chill until set, about 3 hours.

You could try other Jell-o flavors, but we are traditionalists and stick with lime. Some family members enjoy the addition of chopped pecans but I prefer without.

1 (3 ounce) box lime Jell-O gelatin
1 cup boiling water
2/3 cup cold water (or reserve pineapple juice and use in place of water)
1 cup whipping cream
4 ounces cream cheese, room temperature
1 (15 1/4 ounce) can crushed pineapple, drained (approximately 1 cup pineapple)
1 cup red seedless grapes, halved (or more to taste)
3/4 cup mini marshmallows (optional)

Steps:

  • In medium bowl, combine lime gelatin and boiling water. Stir in cold water or pineapple juice. Chill slightly in refrigerator but don't allow to completely set.
  • Remove from refrigerator. Whip jello until fluffy like egg whites.
  • In separate bowl, whip cream to soft peak stage; add cream cheese and whip. Add to jello, mix well.
  • Stir in crushed pineapple, grapes, and marshmallows. Chill until set.
