- Toast 2 teaspoons five-spice powder in a small saucepan over medium heat with 1 tablespoon peanut oil, about 1 minute. Add 1 cup hoisin sauce, 3 tablespoons each honey and rice vinegar, 1 tablespoon soy sauce and 1 cup water. Boil and reduce to 1 1/2 cups, about 5 minutes.
HOISIN GLAZED HOT DOGS
This recipe is from the National Hot Dog & Sausage Council. Hoisin is a type of chinese bbq sauce that has a very molasses type flavor. You will not like this if you do not like molasses. Also do not use normal bbq sauce for the hoisin.

Steps:
- Heat hoisin, honey, gingerroot and garlic in a small saucepan over medium heat.
- Allow sauce to simmer for 2-3 minutes then remove from heat.
- Reserve ¼ cup of sauce.
- Lightly score diagonal cuts across the hot dogs.
- Liberally brush hot dogs with sauce.
- Preheat a gas or charcoal grill for the direct grilling method, using medium heat.
- Place hot dogs on grill rack, about 4 to 5 inches from the heat. Cook hot dogs over direct medium heat to an internal temperature of 165 degrees F for 10-12 minutes, basting often with the sauce.
- During last 3 to 4 minutes, open hot dog buns and lightly toast them over indirect heat.
- Brush buns with reserved hoisin sauce.
- Place hot dogs into heated buns.
- Sprinkle chopped green onions atop hot dogs.

Steps:
- Preheat oven to 4oo degrees.
- Cut scallions diagonally into 2-inch pieces.
- Whisk remaining ingredients except pork in a large bowl Add scallions and pork, turning pork to coat.
- Arrange pork in 1 layer in shallow baking dish. Spoon remaining sauce with scallions over pork and roast 15-20 minutes.
- Turn on broiler and broil pork 5-6 inches from heat until top is slightly caramelized, 2-5 minutes. Let stand, uncovered, 5 minutes.
- Serve pork topped with pan juices.

HOISIN-GLAZED CORNISH HEN
Asian influenced flavor. Another recipe from Big Daddy's House on the Food Network. Everything he makes looks SO delicious! I can't wait to try this! On the show, he only prepared one Cornish hen, so adjust your times accordingly for multiple hens. Cooking time includes deep-frying and baking time.

Steps:
- Pre-heat oil in a pot large enough to fit a Cornish hen comfortably, to about 350 degrees.
- Thoroughly wash and pat Cornish hen dry to avoid unnecessary spatter, and carefully ease into hot oil.
- Cook for 8-10 minutes on each side until you see that it is turning slightly golden brown around the edges and crispy.
- Remove and place on cooling rack.
- In a small bowl, prepare glaze by mixing together first 4 ingredients, adding red pepper flakes to your heat preference. Baste entire hen liberally with the glaze.
- Pop in pre-heated oven at 350 degrees for about 8 minutes or until it gets crispy.
- Flip over, and re-baste bottom of hen, and put back in oven for another 8 minutes to crisp up the other side.
- Let rest before serving. You can cut into quarters for 2 servings, or serve whole.
- Serve alongside steamed veggies and/or Jasmine rice for a complete meal!

HOISIN-GLAZED BEEF TENDERLOIN WITH SHIITAKE MUSHROOMS
Long name, easy recipe. I found this in the Food Network Kitchens Cookbook and made it for my husband and daughter (me too!). We loved it...the hoisin gives the mild beef tenderloin an exciting sweet and spicy flavor around the edges of the slices. The recipe, as written in the cookbook, said to roast to 125° (on a thermometer inserted in the center of the meat) for medium rare. I accidentally let it go to 127 and it did make a difference as it came out slightly more than medium-rare, though it was still really tasty. I don't think I'd let this go to medium, medium-well, or well-done. I used rice wine in place of the sherry. This quickly became a family favorite and one I will do whenever I find 2-lb. tenderloin roasts on sale. I served the beef and mushrooms simply, with a side of roasted sweet potatoes....it was a memorable meal!

- Preheat oven to 400°.
- Heat a large skillet over medium-high heat. Season the beef all over with salt and a generous amount of pepper. Add the oil to the skillet and heat until shimmering, then sear the beef on all sides until it is a mahogany brown, about 8 minutes in all (any longer and you're cooking the beef too much, that may have been why my roast came out almost medium, instead of medium-rare).
- Transfer the roast to a shallow roasting pan. Don't clean out the skillet! Leave everything in the skillet as you'll need it for the mushrooms.
- Brush the tenderloin all over with the hoisin sauce, just bathe the thing with the sauce. Roast until an instant-read thermometer inserted in the center registers 125° for medium-rare, about 30-40 minutes. Transfer the roast to a cutting board and tent loosely with foil. Let it rest while you do the mushrooms.
- Heat the skillet (that you saved) over medium-high heat. Add the mushrooms and the scallion WHITES, garlic, ginger, the 1 1/2 teaspoons salt and red pepper flakes and cook until soft, about 8 minutes. Add the scallion greens and sherry (or rice wine) and cook until almost all the liquid has evaporated, about 2 minutes.
- Slice the roast and serve with the mushroom mixture.
- **I think this would also be good with a mixture of different mushrooms, especially wild mushrooms.
