1 package (12 ounces) frozen bulk sausage, thawed and crumbled
1 medium onion, chopped
2 packages (10 ounces each) frozen chopped collard greens, unthawed
2 cans (15.5 ounces each) cannellini beans, drained, rinsed, and slightly mashed
Coarse salt and ground pepper
1 tablespoon red-wine vinegar (optional)
8 slices toasted French bread (optional)

Steps:

  • Cook sausage and onion in a large saucepan over medium heat, covered, stirring occasionally, until fat renders, 8 to 10 minutes. Uncover and continue cooking, stirring occasionally, until browned, 5 to 7 minutes more. (If bottom of pan starts to burn in spots, sprinkle with water and scrape up blackened bits.)
  • Add collard greens, beans, and 4 cups water; season with salt and pepper. Bring to a boil, reduce heat, and simmer until soup is slightly thickened, 5 to 7 minutes. Adjust consistency of soup with water, if necessary. Stir in red-wine vinegar, and serve with toasted bread slices, if desired.

This delicious collard greens & white bean soup recipe is a quick and easy way to use dark, leafy green vegetables that contain anti-cancer nutrients. Eaten with a chunk of wholegrain bread, this soup is a complete meal and is the perfect comfort food during cancer treatment and beyond. It can also be used over several days, or frozen for when you need a light supper.

1 large bunch young collard greens or 2 small ones, leaves stripped from the hard stems and washed 1 to 2 tablespoons olive oil 1 sprig plus 1 teaspoon of fresh rosemary, leaves stripped and chopped 1 medium onion, finely diced 1 large carrot, cut into a small dice 1 medium Yukon Gold potato or other waxy potato, cut into a small dice 1 clove garlic, chopped 2 cups cooked baby lima or other white beans (cannellini or Great Northern), plus their broth or 1 (14-ounce) can, drained and rinsed well, plus ½ cup fresh water 2¼ quarts (9 cups) low-sodium vegetable or chicken stock, or water 1 tablespoon chopped flat-leaf parsley

Steps:

  • Pull the leaves from their stems. Cut the leaves into bite-sized pieces. Set aside.
  • In a large Dutch oven, heat the oil over a medium-high flame until it starts to ripple. Add the rosemary. Let it sizzle for a moment, then add the onion, carrot, and potato. Mix well.
  • Turn the heat down to medium-low. Cover and sweat the vegetables for 8-10 minutes or until they are soft and the onion is slightly golden. Stir every so often to prevent sticking or burning.
  • Turn the heat up to medium high. Add the chopped garlic. Stir and cook for another 2 minutes until you start to smell its aroma. Add the collard greens and stir-fry until they start to wilt and soften.
  • Add the stock and beans, plus their liquid if home-cooked. The beans and vegetables should be well covered with liquid but not drowned. Add a little extra water if needed. Bring the soup to a boil. Partially cover and turn the heat down to low. Simmer, stirring from time to time, for 20-25 minutes or until the greens are very tender.
  • Adjust seasoning, then cook 5 minutes more. Mash some of the beans against the sides of the pan to thicken the soup slightly. Stir in the chopped parsley and remaining rosemary. Cook 1 minute, then turn off the heat. Let the soup sit, covered, for 5 minutes. Serve drizzled with a little olive oil, if desired.

This collard greens and bean soup is now in my daily meal rotation, especially in the fall and winter! Serve with cornbread or biscuits.

1 (1 pound) package smoked sausage, sliced
4 cups low-sodium chicken broth
2 pounds frozen chopped collard greens
2 (15.8 ounce) cans great Northern beans, rinsed and drained
2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL®)
1 (1.4 ounce) package dry vegetable soup mix (such as Knorr®)
2 dashes hot sauce, or to taste
salt and freshly ground black pepper to taste

Steps:

  • Heat a skillet over medium-high heat. Add sausage and saute until browned, 5 to 7 minutes. Remove from heat.
  • Combine browned sausage, chicken broth, collard greens, beans, diced tomatoes with chiles, soup mix, hot sauce, salt, and pepper in a large pot. Bring to a rolling boil over high heat. Reduce heat to low and let simmer, stirring often, until greens are tender and flavors have melded, about 30 minutes.

Number Of Ingredients 10

1 pound dried beans (such as cannellini or great Northern), picked through for stones or debris, soaked* for at least 6 hours in cold water and drained
½ pound andouille sausage links, halved lengthwise and sliced crosswise (I used a 12-ounce package of Applegate Farms chicken apple sausage)
1 large onion, chopped
2 stalks celery, chopped
4 sprigs fresh thyme
8 cups low-sodium or unsalted chicken or vegetable broth, preferably homemade
1 bunch collard greens, stems discarded and leaves cut into-bite-size pieces (about 8 cups)
1 Tablespoon apple cider vinegar or red wine vinegar
sea salt and black pepper to taste (salt will vary based on what stock or sausage you use)
unrefined olive oil for drizzling (optional)

Steps:

  • In a 4-6 quart slow cooker (mine is a 6.5 quart and it turned out great), combine the beans, sausage, onion, celery, and thyme. Add the broth and stir to combine.
  • Cover and cook until the beans are tender, on LOW for 7 to 8 hours or HIGH for 4-5 hours.
  • minutes before serving, remove and discard the thyme sprigs and add the collard greens. Cover and cook until the greens are tender, about 15 to 20 minutes. Stir in the vinegar and salt and pepper to taste.

400 g small dried white beans, such as French navy beans or 400 g cannellini beans, soaked overnight
2 medium onions, 1 cut in half, 1 thinly sliced
1 small carrot
1 thyme, sprig
1 rosemary sprig
1 bay leaf
1500 ml water
1 vegetable stock cube
2 tablespoons butter
1 tablespoon olive oil
3 garlic cloves, thinly sliced
300 g collard greens, stems cut, leaves coarsely torn into small pieces
300 g quality smoked sausage, cut into smaller pieces
1/2 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
1/2 teaspoon ground black pepper

Steps:

  • Place beans, onion halves, carrot, thyme and rosemary sprig and bay leaf in a large pot; cover the beans with 1500 ml of water. Crumble in the vegetable cube, cover and bring to a boil. Reduce the flame; simmer about 30 minutes over low heat until the beans are nearly tender. Drain the beans and reserve the cooking liquid. Discard all of the other solids. Set aside.
  • Sauté sliced onion and garlic in butter and olive oil for 6 minutes over moderately high heat, stirring occasionally.
  • Add the collards and cook, tossing, until slightly wilted.
  • Add half of the reserved bean cooking liquid, cover and cook over low heat, stirring occasionally, until the collards are tender, about 50 minutes.
  • Add the beans, sausage and the remaining bean cooking liquid to the pot and cook for 15 minutes. Just before serving, stir in the lime zest and juice. Season with pepper.

This is a recipe from my father who was from Louisiana and loved his greens with bacon! He ended up being a Navy cook during the war and served a version of this soup on his ship. I add other vegetables such as corn, green beans, squash, etc. This soup is better the second day!!

1 lb Italian sausage (I use turkey)
2 tablespoons olive oil
1 tablespoon fennel seed
1/4 cup bacon, ends (I use Hempler's)
1 onion, chopped
2 -3 garlic cloves, chopped
1/2 lb mushroom, sliced
3 cups chicken broth
1 cup cannellini beans, drained
other vegetables (corn, green beans, etc.)
1/4 cup pasta (some small shape)
1 cup water (may need more)
2 bunches mixed greens, chopped (collards,chard,baby bok choy, etc.)

Steps:

  • Saute Italian sausage and fennel seeds in olive oil.
  • When browned, pour into soup pot.
  • Saute the bacon until brown.
  • Pour into soup pot.
  • In same skillet, saute onion and garlic.
  • When lightly brown, pour into soup pot.
  • Saute mushrooms until tender and pour into soup pot.
  • Add beans to soup pot.
  • Add chicken stock to soup pot.
  • Add enough water to cover contents and bring to boil.
  • Add pasta,cover, and simmer for 7 minutes.
  • Add chopped greens and more water if needed to come to about two inches below greens.
  • Cover and simmer for 20 minutes until greens are tender.
