HOG CHOPS
These chops are so juicy and delicious! The ginger really adds some great flavor without being too overpowering. The black pepper gives the perfect amount of heat. Not only are they delicious, they are also super easy to prepare.

Steps:
- 1. In a gallon Ziploc bag, combine all ingredients except the pork chops. Close the bag and shake or mix well. Add the pork chops to the marinade and let marinate 4-5 hours.
- 2. Preheat grill on high. When heated, turn to medium. Place pork chops on the grill and cook about 9-14 minutes on each side depending on your grill. Be sure not to over cook or you will get very dry hog chops.

- Sprinkle the pork chops all over with salt and the Cajun seasoning. Pour the flour into a shallow bowl. Dredge the chops in the flour, turning to coat, and tap off any excess. Reserve the remaining flour. Heat the olive oil in a large skillet over medium-high heat. Add the chops; cook until browned, 2 to 3 minutes per side. Transfer to a plate. Add the butter, onion, thyme and a pinch of salt to the skillet. Cook, stirring occasionally, until the onion is golden brown, 8 to 10 minutes. Add 2 tablespoons of the reserved flour to the skillet and cook, stirring, 1 minute. Add the chicken broth, bring to a boil and cook until reduced by one-third, about 2 minutes. Add the buttermilk and return the chops to the skillet. Bring the sauce to a simmer, then reduce the heat to medium low and cook until the sauce is thickened and the chops are just cooked through, 10 to 12 minutes. Serve with biscuits.
HOGBACK PORK CHOPS

Steps:
- Brown chops in a greased skillet over medium heat.
- Arrange chops in a shallow 2 quart baking dish.
- Pour apple juice over chops and sprinkle with raisins and salt.
- Cover and bake at 350 degrees for 45 minutes; turn chops.
- Combine brown sugar, nutmeg and cinnamon and coat apple wedges with this mixture.
- Arrange apples around chops.
- Sprinkle apples with the remaining sugar mixture and pour water over all.
- Cover and bake an additional 15 minutes.

Steps:
- salt and pepper the chops.
- place chops in roomy, non-metal container so each chop lays flat.
- whisk all ingredients (sans chops) for marinade.
- pour marinade over chops.
- cover and refrigerate at least (4) hours, turning every hour or so.
- prepare grill/fire for direct heat on hi.
- sear chops on both side for 2 minutes.
- turn heat down or place chops on cooler part of grill for remaining cooking.
- Close lid and cook about (5) mins on each side for medium rare.
- let chops rest at room temp for (10) mins before serving.

- Pork Butt (or Boston Butt) Despite what its name might indicate, the pork butt, also called the Boston butt, comes from the upper shoulder of the hog. Consisting of parts of the neck, shoulder blade, and upper arm, the pork butt is a moderately tough cut of pork with a good deal of connective tissue.
- Pork Shoulder (Picnic Shoulder) Another tough cut, the pork shoulder (also called the picnic shoulder) is frequently cured or smoked. Pork shoulder is also used for making ground pork or sausage meat.
- Pork Loin. Hogs are bred to have extra long loins so they can have up to 17 ribs, unlike beef and lamb which have 13. The entire pork loin can be roasted or it can be cut into individual chops or cutlets.
- Ham. The back leg of the hog is where we get fresh, smoked, or cured hams. Serrano ham and prosciutto are made from hams that are cured, smoked, and then air-dried.
- Pork Side (Pork Belly) The pork side (also called the pork belly) is where pancetta and bacon come from. Pork belly meat can also be rolled and roasted or even cut into steaks.
- Pork Spareribs. Taken from the belly side of the ribs where they join the breastbone, pork spareribs are often prepared by grilling very slowly over low temperatures.
