My kids had this at their summer camp. My version's a bit easier, they had to peel the potatoes with their teeth!

1 large potato, peeled & diced
1 large carrot, peeled & diced
1 medium onion, sliced
1 frozen hamburger patty
1 teaspoon seasoning salt, to taste

Steps:

  • Place veggies and hamburger pattie in middle of large sheet of aluminum foil.
  • Sprinkle with seasoned salt.
  • Bring up the two long sides of the foil to meet above the food, fold (crimp) the foil several times until it is snug against the food.
  • Fold (crimp) the short ends of the foil several times until snug against the food.
  • This will seal the food in and prevent leakage.
  • Place package directly on hot charcoal and cook for about 15 to 20 minutes each side (or, you can place package in a 350-degree oven for 45 minutes to 1 hour).
  • Make as many packages as needed.

From hobo to the noblest monarch, everyone will love this incredible beef hobo dinner! A simple recipe that sees beef, potatoes, and carrots cooked to perfection in a foil pouch either in the oven or over a fire, this dinner is easy to make and even more delicious!

1 medium onion, peeled and sliced
1 lb. lean ground beef
4 medium potatoes, peeled and sliced
4 medium carrots, peeled and sliced
Salt and pepper to taste
Garlic salt to taste
Seasoned salt to taste
Butter, optional

Steps:

  • Lay out 4 sheets of 12″ heavy duty foil.
  • Slice 1 medium onion into several slices.
  • Place onion slices on the center of foil, making a base for your hamburger patty to go.
  • Place 1 lb. lean ground beef in a bowl. Add small amount of water to beef so that it will effectively steam the vegetables while cooking.
  • Shape the ground beef into four hamburger patties.
  • Place the hamburger patties on top of the onions.
  • Peel and slice 4 medium potatoes.
  • Place the sliced potatoes on top of the burger and onion.
  • Peel and slice 4 medium carrots.
  • Add salt and pepper, garlic salt, and seasoned salt. Also add butter if desired.
  • Take the pouches and bring opposite sides of the foil together above the food and fold them over once to make a 1' crease at the top. Fold the foil over 2 more times, but leave several inches of space between the food and the top of the foil pack, like a tent. Fold or roll the ends of the pack together toward the center to make tight seals.
  • Bake in preheated 350 degree oven for 20 to 30 minutes. Enjoy!

These hobo dinners are a delicious and easy dinner cooked up in foil. Great cooked over a campfire, or in your oven at home. Packed full of flavor and customizable so everyone will love them!

1 can cream of chicken soup
1 1/2 cups thinly sliced golden potatoes ((this was about 4 potatoes for me))
1 lb ground beef
1/2 cup fresh green beans
1/2 cup baby carrots
1/2 cup onion slices
salt and pepper to taste

Steps:

  • Spray for sheets of heavy duty foil with nonstick spray.
  • Spread a small amount of cream soup on the bottom of each piece of foil.
  • Divide the potatoes evenly between the foil pieces.
  • Create four patties (approx. 1/4 pound each) with the ground beef. Place on top of the potatoes.
  • Top with remaining veggies, divided evenly.
  • Sprinkle each with salt and pepper.
  • Spoon remaining soup evenly over the entire dish.
  • Foil foil over the food and seal edges well.
  • Place the packets on warmed coals. Cook for 45- 60 minutes, turning every 10 minutes or so, or until the meat is cooked through and veggies are cooked to desired doneness.**

1 package (14 oz) smoked sausage, ((beef, chicken or pork) cut into coins)
3 cups thinly sliced Yukon gold potatoes
2 cups (3-4 large) thinly sliced carrots
1 large thinly sliced yellow onion
2 tablespoons olive oil
1 teaspoon EACH: Italian seasoning, dried basil, dried parsley
1/2 teaspoon garlic powder
1 teaspoon paprika
1/4 teaspoon dried thyme
4 tablespoons unsalted butter, (separated)
Serve with: ketchup, fresh herbs (optional)

Steps:

  • PREP: If you are using the oven, preheat it to 400 degrees F. If grilling, prepare the grill by heating to medium-high heat (425-450 degrees F.) Tear off four sheets of heavy-duty foil and lightly spritz with cooking spray. If you aren't going to be cooking this meal in foil packs (See Note 1), line a large sheet pan with parchment paper and set aside.
  • PREP VEGGIES: Cut the sausage into coins. Thinly slice the potatoes (about 1/8th inch thick). Thinly slice the carrots and cut large carrot slices in half. Thinly slice the yellow onion. Add the sausage, potatoes, carrots, and onion to a large bowl.
  • SEASON: Drizzle in 2 tablespoons of oil and all of the seasonings (Italian seasoning, dried basil, dried parsley, garlic powder, paprika, dried thyme, and salt and pepper). Add salt and pepper to personal preference (I add 1/2 teaspoon salt and 1/4 teaspoon pepper). Toss everything together until well combined.
  • DIVIDE: Divide the mixture evenly among the four prepared sheets of foil. Cut the butter into 1 tablespoon pieces and cut each tablespoon piece into 4 smaller pieces. Add four pieces of butter to the foil packs (1 tablespoon per foil pack). Seal the foil packs tightly so no air escapes, but do not double wrap the foil (use only one sheet of foil per pack, or the cooking time will be off). To seal the foil packet, bring the short sides together in the middle and gently fold down to completely seal. Then, roll up the ends.
  • COOK: Grill for 20-30 minutes or until veggies are fork tender (flip the foil packs at the halfway point). To bake foil packs, place foil packs on a sheet pan and bake for 30-35 minutes or until veggies are fork tender. Campfire cooking: add to hot coals and cook for 20-30 minutes. Be aware they can take up to 40-45 minutes depending on the actual temperature of the coals, actual thickness of cut veggies, outside temperatures, how many foil packs are on the coals, etc. There is great variance in cooking these over coals.
  • GARNISH: Carefully open the foil pack, watching for steam to be released. If desired, garnish with fresh herbs (we like fresh thyme) and serve with ketchup drizzled over everything or on the side.

These mini pot roast pockets are easy and delicious. And my favorite part...they require very little cleanup! Can be done in the oven, on the grill, or over the campfire on camping trips.

1 lb ground beef
4-5 med carrots
2-3 med potatoes
4 tbsp butter
2 packets of onion soup mix
1 onion, Optional. I don't use onions as I'm not a big fan but they would make a nice addition.
4 pieces of aluminum foil, 1.5 feet each

Steps:

  • Preheat oven to 350
  • Divide ground beef into 4 even hamburger patties about 1 inch thick. If you are feeding children you may want to make their portions smaller.
  • Wash your veggies. Cut carrots into 1 inch pieces and potatoes into 1-2 inch pieces.
  • Place hamburger patties in the center of each piece of aluminum foil. Surround each patty with pieces of carrots, potatoes, and onions if you choose.
  • Place 1/2-1 tbsp butter on the center of each patty. Sprinkles approx 1-2 tbsp of onion soup mix over the ingredients.
  • Gather the corners of the foil up and scrunch together to seal each pocket. Place sealed pockets onto a baking sheet in case any sauce leaks out during baking.
  • Bake at 350 for 40-60 minutes. Carefully unwrap one pocket keeping face away as steam escaping will be hot. Poke carrots and potatoes with a fork to check for doneness. Once vegetables are done the meat should be cooked through as well. You can check with a meat thermometer. Meat should read 140 degrees or more.

  • Form the beef into four patties and set aside.

12 ounces country-style bulk sausage
1/2 cup chopped yellow onions
1/2 cup sliced fresh mushrooms
1/4 cup vegetable oil
3 cups fresh hash browns
6 large eggs, whisked together
1 cup shredded Cheddar

Steps:

  • In a large skillet over medium-high heat, brown the sausage. If desired, drain the fat.
  • Add the onions and mushrooms and cook until tender, then set aside in a separate bowl.
  • In the same skillet, add the oil and hash browns over medium-high heat and cook until golden brown on 1 side. Once golden brown, add the eggs, sausage and the mushroom mixture. Scramble together until desired consistency and top with the Cheddar.

This version of hobo dinner is one my mom and dad made when we were growing up. It uses smoked dinner sausage slices (Hillshire Farms, etc.) instead of ground beef or other meats. Everyone loves it. It only takes one dish to make this in, and it's an entire meal by itelf in my house. Amounts can be easily increased if more servings are needed. Keeps well in the refrigerator for 2-3 days, and is delicious reheated. Not sure if it can be frozen for later....

These Steak Foil Packets (sometimes called Hobo Dinners) are so easy you will not believe it! Fold rice, steak, and onion soup mix into some foil, bake, and voila. Deliciously tender steak and rice, ready to pair with whatever vegetables you want!

4 cups cooked rice
1 (1-oz) packet onion soup mix
1 pound steak (cube steak or top round steak)
1/2 cup evaporated milk (divided)
carrots, zucchini, asparagus, bell peppers, green beans, etc. ((optional)*)
heavy duty foil

Steps:

  • Preheat the oven to 350 degrees F. (Or see notes for camp fire or grill instructions.)
  • Tear off 4 large sheets of heavy duty foil, about 10-12 inches across. Regular foil will work too, just be careful not to tear it. You can double wrap if you're worried about it.
  • Add 1 cup of cooked rice to the center of each sheet of foil.
  • Top rice with about 1-2 teaspoons of onion soup mix.
  • Use a sharp knife to slice the steak into 12 thin strips, about 1 inch across. See photos.
  • Place 3 strips of steak on top of each mound of rice.
  • (At this point, you can add chopped vegetables around the edges of the rice. Season with salt and pepper. See notes.)
  • Pour 2 tablespoons of evaporated milk over the top of each mound of steak and rice.
  • Sprinkle the remaining onion soup mix evenly over the rest of the steak in each packet.
  • For each sheet of foil, bring the short ends of the foil together over the rice and steak. Press together and fold down securely over the food. For each end, fold the corners in, and then continue folding until you have a nice secure packet. See photos!
  • Place the 4 packets on a large baking sheet.
  • Bake at 350 for 1 hour.
  • Remove from the oven and carefully open each packet, being very careful not to burn yourself with the steam.
  • Serve hot!
