CHOCOLATE ICEBOX COOKIES
Steps:
- In a medium bowl, mix flour, cocoa powder, cinnamon, baking powder, and salt.
- In a large bowl, beat butter and sugar with an electric mixer at low speed for 30 seconds. Increase speed to high and beat for 3 minutes until the mixture is fluffy.
- Reduce mixer speed to low and add the egg and vanilla. Beat for about 20 to 30 seconds, just until combined.
- Add the flour mixture into the butter mixture, and stir gently until combined.
- Divide the dough in two and roll each into a 2-inch-wide cylinder. Wrap the cylinders in wax paper, twisting the ends to seal them. Chill the dough until firm, at least 2 hours.
- Place baking racks at the top and bottom thirds of the oven. Preheat the oven to 350 degrees Fahrenheit. Line two sheet pans with parchment paper.
- Slice the dough into 1/4-inch rounds. Place the cookies on the sheet pans 1 inch apart.
- Bake the cookies in the preheated oven for 5 to 6 minutes. Switch the sheet pans so that the top pan is now at the bottom, and vice versa. Bake for another 5 to 6 minutes, until the cookies are golden brown around the edges.
- Allow the cookies to cool on the sheet pans for 1 minute. Transfer them into a wire rack and let them cool completely.
- Store the cookies in an airtight container at room temperature for up to 5 days.

- Stir in the flour, baking soda, baking powder, salt and chopped nuts. Shape dough into 2 inch to 2 1/2 inch diameter sized logs. Wrap logs and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.
- Slice logs very thing and place cookies on the prepared sheets. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes.

An old-fashioned treat that first gained popularity in the 1940s, I believe. Prep time includes overnight chilling time.

Steps:
- In bowl, cream butter with sugar until light; then add vanilla and egg, mixing well.
- In a small bowl, combine flour, baking powder and salt; stir this mixture into the butter mixture.
- Stir in cherries and nuts.
- Shape into a 2-inch diameter roll; wrap with plastic wrap or wax paper and chill thoroughly, overnight if you wish.
- When ready to bake, preheat oven to 400F degrees.
- Cut chilled cookie dough into 1/4-inch slices and place on a lightly-greased cookie sheet, leaving a little bit of room between each cookie.
- Bake for 5 to 8 minutes, or until almost firm.
- Remove to a rack to cool.

GREAT GREAT AUNT JESSIE'S 1940'S ICE BOX COOKIES
Found this scribbled on a slip of paper in Great Great Aunt Jessie's recipes from the 40's and 50's. I am copying her scribblings here for preservations sake. I have not made these so I do not have exact times to share.

Steps:
- Work 1/2 cup butter till creamy, 1 cup brown sugar- cream 1 cup or scant cup granulated sugar.
- Mix well and add 1/2 teaspoon vanilla.
- Sift 2 cups flour, 1/2 teaspoon soda and 1/2 teaspoon cream of tarter.
- Add to first mixture.
- Then add 1/2 cup broken nut meats.
- Pack in bowl and put in refridgerator to cool slightly- then make out in rolls.
- When very cold, slice and bake in temperature of 400*.
- 8 minutes.
- Aunt Jessie then scribbled"probably 15" to which I have no clue what that is referencing.

- In a large mixing bowl, beat the butter with an electric mixer for 30 seconds. Gradually add oil, beating on low speed until well combined and scraping sides of bowl. Add the powdered sugar, 1/2 cup granulated sugar, baking soda, cream of tartar and salt. Beat until combined. Beat in egg and vanilla. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour.
- Shape dough into 1-inch balls. Roll balls in 1/3 cup granulated sugar. Place 3 inches apart on ungreased cookie sheets. Using the bottom of a glass dipped in granulated sugar, flatten dough to 2 1/2-inch rounds.
- Bake cookies in a 350 degree F oven about 9 minutes or until tops are slightly cracked and edges are set (do not let edges brown). Transfer cookies to wire racks and let cool. Makes about 48 cookies.
