HEALTHIER OATMEAL COOKIES

Healthier Oatmeal Cookies image

I have been searching for a healthier cookie treat for my girls. I experimented with other recipes and used whole wheat flour and coconut oil in place of white flour and butter or vegetable oils. The result is a yummy, chewy treat for your family!

Low-Fat, High Fiber Oatmeal Raisin Cookies image

I adapted Quaker Oatmeal's "Vanishing Oatmeal Raisen Cookies" recipe to lower the fat and increase the fiber (and my husband didn't even notice!) For less sugar and even lower fat, I sometimes substitute Splenda for the granulated sugar and EnerG egg substitue for the eggs.

NEECE'S DELICIOUS LOW CARB HIGH FIBER OATMEAL COOKIES

Neece's Delicious Low Carb High Fiber Oatmeal Cookies image

These cookies are DELICIOUS and Healthy too! My husband and I are on a low carb diet and really missed cookies, so it took awhile for me to come up with this recipe. Even if you aren't on a low carb diet, you'll love these.

Provided by Neece

Categories     Dessert

Time 25m

Yield 16 serving(s)

Number Of Ingredients 13

1 cup butter, at room temperature
1 1/2 cups sugar substitute (I recommend Splenda)
1 tablespoon molasses
1 teaspoon pumpkin pie spice
2 eggs
1 cup almonds, ground
1/4 cup oat bran
1 cup vanilla protein powder
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons flax seed meal
2 cups oats (oatmeal, old fashioned)
1 cup raisins

Steps:

  • Mix together butter, Splenda, molasses and pumpkin pie spice until creamy.
  • Add eggs and beat until smooth.
  • In a separate bowl mix together ground almonds, oat bran, vanilla protein powder, baking soda, salt, flaxseed meal and oatmeal.
  • Add slowly to butter mix and blend well.
  • Add raisins and mix again.
  • Preheat oven to 350 degrees.
  • Spray 2 cookie sheets with cooking spray and drop dough onto them.
  • These cookies do not spread out very much so you may want to press them down a little bit.
  • The less you press them out the fatter and chewier they are.
  • Bake 8-10 minutes.
  • Be careful not to overbake.

IS OATMEAL CONSIDERED A HIGH FIBER FOOD? - FROM HUNGER …
Some foods such as raisins and dates are high in fiber, but they don’t have much nutritional value. On the other hand, oatmeal has a high fiber content. Oatmeal is a good source of fiber, very similar to barley. I should point out that barley isn’t considered high fiber, but it only has 3 grams of fiber per 100 grams.
