6 pounds prime rib (bone-in (with bones cut off and tied back on))
1/2 cup butter (softened)
6 garlic cloves (minced)
1 tablespoon kosher salt
1 teaspoon finely chopped fresh thyme
1 teaspoon finely chopped fresh rosemary
1 teaspoon black pepper
1 onion (quartered (if making the red wine au jus))
1/4 cup drippings from prime rib pan (make sure to separate the fat from the drippings)
2 cups beef broth
1 1/2 cups red wine
Optional: 1 tablespoon cornstarch or arrowroot powder (in a slurry) to thicken

Steps:

  • Remove the prime rib from the fridge 2-3 hours before cooking, and allow it to come to room temperature.
  • Preheat your oven to 450F/230C. In a small bowl, mix together the butter, garlic, salt, thyme, rosemary, and black pepper.
  • After the prime rib has come to room temperature, pat it down with paper towels to make sure it's dry. Then rub the entire outside of the prime rib with the herb butter mixture.
  • Place the prime rib in an oven-safe pan or roasting tray with the bones-side down, fat-side up. Place the onion slices in the pan around the meat, if you're making the red wine au jus. If not, you can omit the onions.
  • Cook the prime rib in the center of the oven for 20 minutes at 450F. It should get a nice sear on the outside. If not, cook it a few minutes longer. Then reduce the temperature of the oven to 325F and continue cooking until the internal temperature reaches 120F (about an hour and a half), for medium-rare. But go by temperature, not time, as it will depend on the size of your prime rib and your oven.
  • Remove the prime rib from the oven and let it rest for 20-30 minutes. You can tent it with aluminum foil to keep it warm. Then, remove the string and bones, and slice it up into thick 1/2" slices.
  • After you've removed the fat from the pan, add up to 1/4 cup of drippings back in along with the beef broth and red wine. If you have leftover herbs, you can toss those in as well.
  • Simmer this for about 15 minutes, or until the liquid has reduced by half. It's meant to be a thin sauce, but if you'd like to add a little bit of a thickener, you can do that as well. Strain the au jus to remove the onion and any browned bits, then drizzle over the prime rib.

One 10- to 12-pound prime rib roast, at room temperature
1/2 cup fresh parsley leaves, chopped
1/2 cup fresh rosemary leaves, chopped
1/2 cup fresh tarragon leaves, chopped
1/4 cup fresh thyme leaves, chopped
2 tablespoons salt
1 1/2 tablespoons ground pepper
1/4 cup vegetable or grapeseed oil

Steps:

  • Preheat the oven to 325 degrees F.
  • To prepare rib roast, remove the excess fat from the bottom of the roast, and then trim the layer of fat from the top rounded side. Save the trimmed fat.
  • In a bowl, mix all the herbs well, and then add the salt and pepper and mix again. Next, add the oil, whisk to mix, and then apply to the exterior of the roast evenly on all sides. Top with the reserved trimmed fat. Roast until the internal temperature reaches 120 degrees F for medium-rare, about 2 1/2 hours. Then allow to rest for 10 minutes before carving.
  • Serve with the pan drippings or sauce if preferred.

6 cloves garlic, minced

4 lb Standing rib roast (trimmed weight 10 lbs)
3 t black peppercorns
1 1/2 Bay leaves, crumbled
2oz Butter, softened
1/4 cup + 1 T Flour
2 t White pepper, coarsely ground
4 Cloves garlic, minced
1 t Salt
1 lb Shallots, peeled leaving ends intact
2 Garlic heads, separated into cloves but unpeeled
SAUCE
1/2 c Dry Red wine
2 c beef broth
1/2 c Sercial Madeira
1T Cornstarch

Steps:

  • 1. Let roast come to room temperature for at least one hour. In a spice grinder grind fine the peppercorns and bay leaves. In a small bowl combine well the butter, flour, white pepper, salt & bay leaf mixture. Rub paste onto the roast. 2. In roasting pan, roast meat rib side down at 500 degrees for 20 minutes. Reduce heat to 350 and roast 1 hr 45 min (or 13 minutes per lb) to internal temperature of 115. 1 1/2 hrs before roast is done add shallots and garlic to the pan. 3. Transfer roast to a cutting board cover with foil for 30 - 45 min. Drain shallots & garlic and keep warm in a bowl. 4. Make sauce Skim the fat from drippings. Add red wine and deglaze pan scraping up browned bits. Boil till reduced by 1/2. Transfer to saucepan. Add broth and 1/4 cup Madeira and boil 5 minutes. In small bowl dissolve cornstarch and remaining Madeira. Add to the pan whisking and bring to a boil for 1 minute. Season with salt and pepper and transfer to a sauceboat. 5. Surround roast with shallots and garlic and pass the sauce.

1 tablespoon olive oil
6 medium onions, peeled, quartered
2 1/2 cups canned beef broth
1 3/4 cups madeira wine
1 1/4 cups dry red wine
4 large fresh thyme sprigs
4 large fresh parsley
3 large fresh rosemary
1 bay leaf
2 tablespoons butter, room temperature
2 tablespoons all-purpose flour

Steps:

  • Position rack in center of oven and preheat to 450°F Place beef, fat side up, on heavy large rimmed baking sheet. Rub with oil; sprinkle generously with salt and pepper. Roast beef 20 minutes. Reduce oven temperature to 350°F Place onions around beef. Continue to roast until thermometer inserted into center of beef registers 125°F for medium-rare, stirring onions occasionally, about 2 hours 5 minutes.
  • Meanwhile, combine broth, Madeira, wine, thyme, parsley, rosemary, and bay leaf in medium saucepan. Boil until mixture is reduced to 2 cups, about 25 minutes. Remove from heat. Discard herbs.
  • Transfer beef to platter. Using slotted spoon, transfer onions to same platter; tent with foil. Let stand 30 minutes.
  • Pour off and reserve fat from baking sheet for Herbed Yorkshire Puddings. Scrape juices and browned bits from baking sheet into sauce; bring to boil. Mix butter and flour in small bowl to blend. 3 1/2 pounds beef rib roast
1/4 cup Worcestershire sauce
1 tablespoon seasoned pepper, salt free
1 (3-pound) box kosher salt
2 packets Italian dressing mix
2 large egg whites
1/2 cup water
1 (14-ounce) can low-sodium beef broth
1 packet onion soup mix

Steps:

  • Preheat the oven to 500 degrees F. Line a roasting pan with aluminum foil.
  • Rinse the roast, pat it dry, and bring it to room temperature. Sprinkle with the Worcestershire sauce and seasoned pepper.
  • In a bowl add the kosher salt, Italian dressing mix, and egg whites and stir to combine. Sprinkle water over the top of the salt mixture until it is well-moistened, but not wet.
  • Place a 1/2-inch layer of the salt mixture in the middle of the roasting pan, slightly larger than the diameter of the roast. Place the roast, fat side up, on top of the salt. Insert a meat thermometer into the center of the roast. Carefully pack the remaining salt mixture onto the meat, covering it completely.
  • Place the roast in the oven and reduce the temperature to 425 degrees F. Roast for 14 to 16 minutes per pound, or until the thermometer reads 5 degrees F less than desired temperature. Final temperature for rare will be 130 degrees F; 135 degrees F for medium rare; 140 degrees F for medium.
  • Remove the roast from the oven and let it rest for 5 minutes.
  • For jus, in a small saucepan over medium heat, add the beef broth and bring it to a boil. Reduce the heat, add the soup mix, and simmer for 5 minutes. Remove from the heat.
  • Remove the salt crust from the roast by breaking it and peeling it away. (You will probably need a hammer to do this.) Slice the meat to desired thickness and transfer slices to a platter. Ladle a small amount of jus over the top of the meat; serve remainder of jus on the side.
  • Cook's note: Have your butcher remove the ribs from the roast.

1 medium carrot, roughly chopped
2 stalks celery, roughly chopped
1 medium yellow onion, roughly chopped

1 cup dry red wine
1/4 cup balsamic vinegar
2 bay leaves

1 (5 lb) boneless beef rib roast, trimmed of excess fat
extra virgin olive oil
2 tablespoons herbes de provence

Steps:

  • Make the sauce: in a large saucepan over high heat, warm the olive oil; add in carrots, celery, and onion; cook until the vegetables begin to brown, 6-8 minutes, stirring occasionally.
  • Add in garlic; cook for 2 more minutes, stirring occasionally.
  • Decrease heat to medium, add in tomato paste; cook about 2 more minutes, stirring occasionally.
  • Add in broth, wine, vinegar, bay leaves, rosemary, and ½ teaspoon pepper; mix well.
  • Bring to a boil over high heat, then decrease heat and let simmer 45 minutes.
  • Strain sauce through a sieve into a medium saucepan, pressing down on the solids with the back of a spoon.
  • Continue to simmer until about 3/4 cup of liquid remains, about 45 more minutes.
  • Add the butter 1 tablespoon at a time, whisking to melt them.
  • Season with salt and pepper to taste; remove sauce from heat.

  • Let the rib roast stand at room temperature for 1 hour. In a small bowl combine well the butter, flour, peppers, salt & bay leaf and rub the meat with the paste.In a roasting pan rast the eat, rib side down, in a preheated 500F oven for 30 men; reduce the heat to 325 and roast for 1.5-2 hrs more until 130F for medium rare. 40 min before roast is done ad the shallots and 30 min before the roast is done add the garlic. Transfer the shallots and garlic to paper towels to drain and keep warm, covered loosely. Let the roast rest 20-30 min before carving. Make the sauce: Skim the fat from the pan drippings (reserving for yorkshire pudding if desired); add red wine and deglaze the pan over moderately high heat. Boil the liquid unit redued by half and transfer to a saucepan. Add broth and 1/4 cup Madeira and boil for 5 min. In a small bowl dissolve the cornstarch in the remaining 4 teaspoons Madeira and add the mixture to the pan in a stream, whisking. Bring sauce to boil, whisking for 1 minute. In a small bowl dissolve the cornstarch in the remaining 4 teaspoons maderia and add the mixture to the pan in a steam, whisking. Bring the sauce to a boil, whisking, and boil it for 1 minute. Season the sauce with salt and pepper and transfer it to a heated sauceboat. Arrange the shallot, the garlic and the parsley around the roast and serve the roast with the sauce.

salt and ground black pepper to taste
½ cup Dijon mustard

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Make slits all over the roast by pricking with a small knife. Insert slivers of sliced garlic. Season the roast with salt and pepper, then spread generously with mustard. Place on a rack in a roasting pan, and cover.
