- Bring water to boil, add leaves, and remove from heat.
- Steep for 5 minutes.

HIBISCUS SORBET
Red beverages made from strawberries (which grow in abundance in states where slavery proliferated, like Louisiana) and hibiscus, a plant native to West Africa, are particularly popular during Juneteenth celebrations. This hibiscus sorbet is flavored with spices and citrus that are reminiscent of bissap, a hibiscus-infused beverage enjoyed in countries like Guinea, or Sorrel, a festive beverage enjoyed during the holidays in Jamaica. Though bissap is typically tart, this sorbet toes the line between just-sweet-enough and barely-tart, thanks to the lime juice and the steeped hibiscus flowers. The steeped hibiscus flowers also provide a rich, deep and vibrant red color.

Steps:
- Place the hibiscus flowers if using, ginger, cinnamon sticks, cloves and 2 1/2 cups water in a small saucepan and bring to a simmer over medium-low heat, about 10 minutes. Remove from the heat, cover and steep for 15 minutes.
- Strain the liquid and discard the solids. Stir in the hibiscus syrup, corn syrup and lime juice. Cool to room temperature and then refrigerate until chilled, 2 to 4 hours.
- Freeze the mixture in an ice cream machine according to the manufacturer's instructions. Transfer to a 9-by-5-inch loaf pan and store, covered, in the freezer. If the sorbet is too hard when serving, let soften in the refrigerator for 10 to 15 minutes.
HIBISCUS APPLE HERBAL TEA SORBET
A refreshing sorbet experience of a delicious, healthy herbal tea blend (apple, hibiscus, cinnamon, ginger, chamomile & orange peel) and sweet grapes. Steps:
- Boil water with tea bags in a saucepan for 3 min then turn heat off and let steep for 2 minute Squeeze out and remove tea bags and set on medium heat.
- Add sugar/honey/agave nectar until dissolved.
- Add orange juice & grape puree and stir.
- Let cool down completely.
- Transfer liquid to a lasagna glass baking dish and place in freezer for about 6 hours (or overnight).
- When frozen solid, break up with a fork or knife, into large pieces. In 2 batches, puree in a food processor until completely smooth, 2 to 3 minutes per batch. Transfer to an airtight container; freeze until ready to serve (sorbet will be soft).

The prototype for this wonderfully tangy sorbet was discovered in Hua Hin, Thailand, where we tasted a hibiscus sorbet made by chef David Bedinghaus at the Anantara Resort & Spa.

- Bring water to a boil in a small saucepan. Stir in hibiscus and remove from heat, then let steep 15 minutes.
- Pour hibiscus tea through a fine-mesh sieve into a metal bowl, pressing hard on and then discarding solids. Return tea to saucepan and bring to a boil with sugar and a pinch of salt, stirring until sugar is dissolved. Transfer mixture to a metal bowl, then set bowl in a larger bowl of ice water and stir until cold, 10 to 15 minutes. 3Stir in lemon and lime juices and freeze in ice cream maker. Transfer sorbet to an airtight container and put in freezer to harden, at least 2 hours.

HIBISCUS ORANGE TEA
This is easy to make with yummy results. I got my hibiscus flowers from my bulk heath food store. This turns a beautiful red color! Adapted from Easy Entertaining with Michael Chiarello.

- Bring water to boil, turn off heat add the hibiscus flowers and cinnamon sticks.
- Cover and steep for about 20 minutes.
- Strain tea into a pitcher, add sugar to taste.
- Add orange slices and serve over ice.
- Garnish each glass with a lemon slice and serve. Enjoy!
ORANGE SORBET
My best sorbet recipe. Sweet, smooth, and very refreshing. This was one of the things my mother frequently asked me to make for her when she was in assisted living. It is the first to go at ice cream socials. Everyone loves it. I serve it with my Recipe #83963. I found this in the newspaper years ago and adapted it to suit my style. For the best dessert ever, serve it in the Recipe #327004. The flavors are wonderful when combined!

Steps:
- Combine sugar and water in saucepan.
- Stir and cook over high heat until sugar is dissolved.
- Boil without stirring for 1 minute.
- Remove from heat and set aside.
- Grate the zest and set aside.
- Squeeze Oranges into 4 cup glass measure (strain, or remove seeds).
- Stir in sugar syrup and zest.
- Add water to make 3 1/2 cups total, stirring well.
- Chill in refrigerator about one hour.
- Transfer mixture to ice cream maker and proceed according to manufacturer's directions.
- May serve at once, or place in covered container until desired consistency is reached.
- Garnish with mint leaves.
