1 (2 1/3 ounce) box fat-free sugar-free instant vanilla pudding mix, the 4 serving size box
6 (1 teaspoon) packets artificial sweetener (we highly recommend Splenda)
2/3 cup pumpkin puree
1 teaspoon rum extract
1/2 teaspoon ground nutmeg
1/2 teaspoon pumpkin pie spice
1/4 teaspoon cinnamon
cinnamon (optional)

Steps:

  • In a blender, combine all ingredients and blend on high until mixed thoroughly.
  • Refrigerate for a few hours to allow it to thicken. If you like, top each glass off with a sprinkling of cinnamon. Enjoy!

3 large egg whites (a little more than 1/3 cup)
1/4 teaspoon cream of tartar
1/3 cup granulated sugar
1/3 cup artificial sweetener (Splenda No Calorie Sweetener, granulated)
1/2 teaspoon vanilla extract
32 semisweet mini chocolate chips

Steps:

  • Preheat oven to 200 degrees. Line 2 large baking pans with parchment paper.
  • In a large bowl, combine egg whites and cream of tartar. Using an electric mixer set at high speed, beat until fluffy and slightly stiff, about 3 minutes. Continue mixing with your electric mixer, and gradually add the sugar and Splenda until completely combined. Add the vanilla and continue mixing until blended.
  • Using a spatula, transfer all the meringue mixture to a large plastic bag. Squeeze mixture down toward one bottom corner of the bag. Snip that corner off with scissors. (Ta-da! Makeshift piping bag.)
  • Pipe mixture onto the parchment paper in ghost-like shapes about 3 inches long. (HG Tip! Do each outline first, and then fill it in.) Use the tip of your piping bag to smooth mixture and make sure the ghost shapes are filled in solidly. Continue until the mixture is gone, making 8 ghosts per baking pan.
  • Place 2 mini chips on each ghost for eyes.
  • Bake in the oven for 70 minutes. Do not remove meringues afterwards.
  • Turn oven off and allow meringues to set in the oven for 1 hour.
  • Pull meringues from the parchment paper and chomp away. Just don't eat them all at once!

1 cup whole wheat flour

2/3 cup Splenda granular
1/3 cup brown sugar, not packed
1/2 cup liquid egg substitute, like Egg Beaters Original
1/2 cup unsweetened applesauce
3 tablespoons whipped light butter or 3 tablespoons Brummel and Brown spread
3 tablespoons walnuts, crushed divided
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon nutmeg
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine both types of flour, Splenda, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  • In a separate medium bowl, mix together the zucchini, egg substitute, applesauce, butter, and vanilla extract. Slowly add this mixture to the first bowl, and stir until thoroughly blended. Mix half the crushed walnuts (1 1/2 tbsp.) into the batter.
  • Line 9 cups of a 12-cup muffin pan with baking liners and/or spray with nonstick spray. Evenly distribute batter among the 9 cups. Top each cup with a sprinkling of the remaining 1 1/2 tablespoons crushed walnuts.
  • Bake in the oven for 20 - 25 minutes, until a toothpick poked into the center of a muffin comes out clean. Let cool and then enjoy!

1/3 cup peach baby food (Gerber or another brand of pureed peaches, found in the baby food aisle)
1/4 cup pure canned pumpkin
1/4 cup liquid egg substitute (like Egg Beaters Original)
1 tablespoon golden raisin
1 tablespoon craisins (Ocean Spray original)
2 tablespoons brown sugar, not packed
2 teaspoons coffee mate sugar-free french vanilla powdered coffee creamer
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt

Steps:

  • Preheat oven to 375 degrees.
  • Chop raisins and Craisins into small pieces. Set aside.
  • In a mixing bowl, combine the oats, flour, Fiber One crumbs, Splenda, brown sugar, baking powder, cinnamon, and salt. Mix well.
  • In a separate bowl, dissolve Coffee -mate into 2 tablespoons hot water. Add all other wet ingredients (pureed peaches, pumpkin, and egg substitute), and mix well.
  • Add liquid mixture to the dry ingredients, and stir until completely blended. Slowly sprinkle chopped raisins and Craisins into the batter, making sure they don't all stick together.
  • Spray a large baking pan with nonstick spray, and spoon batter into 4 evenly spaced circles. Spread batter out a bit with the back of a spoon. Place pan in the oven for 12 - 14 minutes (until tops of the treats are just slightly crispy). Remove pan from the oven and allow to cool slightly. Then grab 'n go!
