Steps:
- Preheat oven to 350 degrees.
- In a large bowl, combine both types of flour, Splenda, baking powder, salt, and cinnamon (in other words, all dry ingredients).
- In a separate bowl, mix together the mashed bananas, egg substitute, applesauce and vanilla extract (all the wet ingredients).
- Add this mixture to the bowl with the dry ingredients, and stir until just blended.
- Spoon batter into a large loaf pan (about 9" X 5") sprayed with nonstick spray.
- Bake for about 50 minutes, or until a knife inserted in the middle comes out clean.
- Allow to cool slightly, and then cut into 8 slices.
- If you like, spritz with some spray butter or spread on some Cool Whip Free.
- UPDATE: For muffins - prepare 9 muffin cups. Bake for 28 minutes.

I recently purchased the new Hungry Girl Cookbook and found this recipe for banana pudding. I just love banana pudding and would love to try a healthier version. Cook time listed is for refrigeration time.

- Combine pudding mix and milk in a bowl. Beat with a whisk for 2 minutes or until thoroughly blended. Set aside.
- In a medium bowl or casserole dish, arrange a layer of wafers and then top with a layer of banana slices. Continue alternating layers until all wafers and banana slices are in the dish.
- Top dish with the pudding and let it seep down in between the wafer and banana layers. Refrigerate 2 to 3 hours. If desired, add whipped topped before serving.

- Preheat oven to 325 degrees. In a medium pot, combine milk, half & half, and brown sugar. Bring to medium heat on the stove. Stir and cook until the sugar has dissolved and mixture is hot. Stir in the powdered creamer, blending well. Remove from heat.
- In a large bowl, mix the egg substitute and vanilla extract together. Gradually whisk in the hot milk mixture. Set four 4-ounce baking ramekins or custard cups in a deep baking dish. Evenly distribute the custard mixture into the cups.
- Carefully pour hot water into the baking dish, around the cups, being careful not to splash any water into the custard (or on yourself!). The water should come about halfway up the outsides of the custard cups. Carefully transfer pan to the oven, and bake for about 28 minutes, until custards are set.
- Remove from the oven, allow to cool, and then refrigerate custard cups until completely chilled. Once ready to serve, top each custard cup with 1 teaspoons white sugar. Using a hand-held butane kitchen torch, caramelize the sugar (in other words, blast with fire 'til browned).

- Mash the strawberries until a puree is achieved (warming them for a few seconds in the microwave, if needed, will help).
- In a small dish, mix the puree with the Cool Whip until completely blended.
- For a sweeter flavor (optional), mix in half or all of a no-calorie sweetener packet. Place mixture in the freezer until just frozen (do not over-freeze, or it will be hard to scoop).
- Peel the banana, and then cut it in half lengthwise. Place halves in a long dessert dish with the flat sides facing inwards.
- Scoop the frozen strawberry/Cool Whip mixture into the center of the banana "boat".
- Place the chocolate ice cream on one side of the strawberry scoop and the vanilla ice cream on the other side.
- Drizzle chocolate syrup over the entire banana split, and then squirt the Reddi-wip over the whole dessert as well. Now dig in!

MOIST & DELICIOUS BANANA NUT BREAD
I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

- Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
- *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!

- Preheat oven to 350. Spray a 4 x 8 1/2 inch nonstick loaf pan with nonstick spray.
- With a wooden spoon, beat the sugar, and butter in a large bowl until creamy. Add the eggs, bananas, buttermilk, and vanilla; beat until combined. Combine the flour wheat germ, baking powder, baking soda, cinnamon, and salt in another bowl. Add the flour mixture to the banana mixture; stir just until blended.
- Scrape the batter into the pan. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool in the pan on a rack 10 minutes, remove from the pan and cool completely on the rack.
