HG'S TOP BANANA BREAD - WW POINTS = 2

Hg's Top Banana Bread - Ww Points = 2 image

From Hungry Girl: "Go Bananas! Banana bread typically has pretty horrific nutritionals, so we set out to create a guilt-free version. And (tada!) here it is. FYI, if you're looking for a cake-tastic sweet treat with a POINTS® value of 2*, a fat slice of this stuff topped with Cool Whip Free is the way to go..." Serving Size: 1 (thick!) slice Calories: 140 Fat: 0.5g Sodium: 267mg Carbs: 31g Fiber: 3.75g Sugars: 7g Protein: 5g POINTS® value 2* NOTE: On 3/1/2009, I decided to make these into muffins instead of bread. The batch made 9 muffins which I baked for exactly 28 minutes. I calculated the points and they are 2 points for each muffin. :-)

Time 28m

Yield 4 cups, 4 serving(s)

Number Of Ingredients 8

1/3 cup liquid egg substitute (like Original Egg Beaters)
1/2 cup fat-free evaporated milk
1/2 cup fat-free half-and-half
3 tablespoons brown sugar, not packed
1 teaspoon brown sugar, not packed
1 1/2 teaspoons sugar-free french vanilla powdered coffee creamer
1 1/4 teaspoons vanilla extract
4 teaspoons granulated sugar

Steps:

  • Preheat oven to 325 degrees. In a medium pot, combine milk, half & half, and brown sugar. Bring to medium heat on the stove. Stir and cook until the sugar has dissolved and mixture is hot. Stir in the powdered creamer, blending well. Remove from heat.
  • In a large bowl, mix the egg substitute and vanilla extract together. Gradually whisk in the hot milk mixture. Set four 4-ounce baking ramekins or custard cups in a deep baking dish. Evenly distribute the custard mixture into the cups.
  • Carefully pour hot water into the baking dish, around the cups, being careful not to splash any water into the custard (or on yourself!). The water should come about halfway up the outsides of the custard cups. Carefully transfer pan to the oven, and bake for about 28 minutes, until custards are set.
  • Remove from the oven, allow to cool, and then refrigerate custard cups until completely chilled. Once ready to serve, top each custard cup with 1 teaspoons white sugar. Using a hand-held butane kitchen torch, caramelize the sugar (in other words, blast with fire 'til browned).

HG'S TOP BANANA SPLIT - WEIGHT WATCHERS = 4 POINTS

Serving Size: 1 banana split (entire recipe) Calories: 237 Fat: 0.5g Sodium: 72mg Carbs: 56.5g Fiber: 6.5g Sugars: 32.5g Protein: 4g POINTS. value 4*

Provided by senseicheryl

Categories     Frozen Desserts

Time 10m

Yield 1 banana split, 1 serving(s)

Number Of Ingredients 8

1 small banana
2 strawberries, ripe, roughly chopped
1/4 cup breyers double churn free creamy fat free vanilla ice cream
1/4 cup breyers double churn free fat free chocolate ice cream
3 tablespoons Cool Whip Free, thawed
2 teaspoons light chocolate syrup, Hershey's
4 tablespoons fat free Reddi-Wip topping
1 teaspoon artificial sweetener (like 1 packet of Splenda!) (optional)

Steps:

  • Mash the strawberries until a puree is achieved (warming them for a few seconds in the microwave, if needed, will help).
  • In a small dish, mix the puree with the Cool Whip until completely blended.
  • For a sweeter flavor (optional), mix in half or all of a no-calorie sweetener packet. Place mixture in the freezer until just frozen (do not over-freeze, or it will be hard to scoop).
  • Peel the banana, and then cut it in half lengthwise. Place halves in a long dessert dish with the flat sides facing inwards.
  • Scoop the frozen strawberry/Cool Whip mixture into the center of the banana "boat".
  • Place the chocolate ice cream on one side of the strawberry scoop and the vanilla ice cream on the other side.
  • Drizzle chocolate syrup over the entire banana split, and then squirt the Reddi-wip over the whole dessert as well. Now dig in!

MOIST & DELICIOUS BANANA NUT BREAD

Moist & Delicious Banana Nut Bread image

I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

Provided by sktaggart

Categories     Quick Breads

Time 1h20m

Yield 18 muffins, 18 serving(s)

Number Of Ingredients 10

1/2 cup butter (or margarine)
1 1/4 cups sugar
1 teaspoon vanilla
2 eggs (beaten)
3 ripe bananas, smashed (about 1 cup)
1/4 cup milk
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2-1 cup chopped pecans (optional) or 1/2-1 cup walnuts (optional)

Steps:

  • Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
  • *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!
