HERBED GOAT CHEESE

Herbed Goat Cheese image

Provided by Ina Garten

Categories     appetizer

Time 1h10m

Yield 8 servings

Number Of Ingredients 7

2 (6-ounce) creamy goat cheese disks, such as Coach Farm
Kosher salt and freshly ground black pepper
Minced fresh dill
Julienned fresh basil leaves
Crushed red pepper flakes
Good olive oil
Bread or crackers, for serving

Steps:

  • Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  • Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

Fresh white bread crumbs
2 tablespoons good cider vinegar
2 tablespoons good Champagne vinegar
Pinch sugar

1 cup good olive oil
Enough mixed salad greens for 6 servings

Number Of Ingredients 10

4 ounces goat cheese (log)
1 cup breadcrumbs
1 teaspoon thyme, dried (or Italian seasonings)
salt

16 cups mixed salad greens (or arugula)
1/4 cup balsamic vinaigrette (or to taste)
1 pear, peeled, cored and sliced

TOMATO STEAK WITH BAKED GOAT CHEESE AND HERB SALAD

Tomato Steak with Baked Goat Cheese and Herb Salad image

Provided by Michael Chiarello : Food Network

Categories     appetizer

Time 27m

Yield 4 servings

Number Of Ingredients 9

1/4 cup fine dried bread crumbs
Gray salt
Freshly ground black pepper
1 large egg
4 rounds fresh goat cheese, about 2 ounces each
4 thick, ripe beefsteak tomato slices
2 tablespoons extra-virgin olive oil, plus more for the salad
2 cups lightly packed mixed tender fresh herb leaves such as basil, chervil, tarragon, Italian flat-leaf parsley, chives (1-inch lengths), or young cress
Red wine vinegar

Steps:

  • In a small, shallow bowl, mix the bread crumbs with salt and pepper, to taste. In another small, shallow bowl, beat the egg just until blended. Dip each goat cheese round in the egg, and then in bread crumbs, patting the crumbs in place. Cover and refrigerate the coated cheese rounds for about 15 minutes.
  • Center the tomato slices on 4 salad plates and season with salt and pepper.
  • Heat a large nonstick skillet over moderately high heat and pour in 2 tablespoons olive oil. When the oil is almost smoking, add the cheese rounds. Cook until lightly browned, about 45 seconds. Turn them over and cook on the other side until the cheese just feels quivery, about 45 seconds longer, depending on the thickness of the rounds. Place a cheese round on each tomato slice.
  • In a bowl, toss the herbs with a light drizzle of olive oil, a splash of red wine vinegar, and salt and pepper, to taste. Mound the herbs on top of the cheese, dividing them evenly. Serve immediately.
  • Michael's Notes: This salad looks best when the tomato slice and the goat cheese slice are about the same size. So if you can only find goat cheese in small logs, you may want to serve 2 goat cheese rounds to each diner and perch them on slices of smaller tomatoes.
  • Be sure you take all the stems off the herbs carefully so your guests can enjoy just the soft leaves.

  • To prepare the warm goat cheese croutons: set a small pot with about 1/2-inch of oil over medium-high heat. While the oil heats, cut the cheese log into 8 rounds. Quickly dip each round into the beaten egg, then into the breadcrumbs. When the oil reaches 350 degrees (if you don't have a thermometer, put a pinch of breadcrumbs into the oil — if the oil sizzles and the crumbs immediately brown, the oil is ready) add two or three of the goat cheese rounds, being careful not to overcrowd the pot. Cook for 10 seconds, then flip and cook for 10 seconds on the other side. Remove from the oil and let rest on a plate lined with a paper towel.
  • To make the dressing: Roll the lemons back and forth between the counter and your pal, pressing firmly, to help release the juices. Slice in half and juice the lemons — you should have about 1/4 cup of juice. Add the lemon juice, shallot, honey, mustard, and oil to a jar. Put the lid on and shake vigorously to combine. Stir in the poppy seeds.
  • To plate, combine the salad mix with the cilantro. Toss with about half of the dressing (refrigerate the rest for next time)!. Top with the blueberries and 2 goat cheese croutons.
