Steps:
- Wash and clean the potatoes in cold running water. Using a mandoline, or vegetable peeler, finely slice the potatoes into chips. Drop the chips into a bowl of ice water as you work to prevent them from going brown. This will also remove any excess starch.
- Set a large pot of 75/25 canola and olive oil over medium heat and add the garlic (paper and all) and whole stems of fresh rosemary, sage and thyme. Bring oil up to 375 degrees F. As it heats up the oil will get infused with the garlic and herbs. Once the herbs crackle and get crispy they will go clear and you know they are done. Using a strainer drain the herbs and garlic and set aside on paper towels.
- Fry the potatoes in batches until golden and crispy. Drain the chips, dry well on paper towels and season with salt and freshly ground black pepper. Garnish with crispy fried herbs, garlic and shower with Parmesan.

RICARDO'S HERBED POTATO CRISPS
WOW! These are soooo good and they look so fancy! A bit more work than traditional potato recipes but they look amazing! The original recipe called for 1/2 cup melted butter - but I used about 1/4 cup.

- Using a madoline, cut the potatoes into thin, nearly transludent slices; you should get about 24 slices from each potato. Avoid making the slices too thin, or they will shrink and break during cooking.
- Lay half the slices on the baking sheet. Brush with butter. Place 1 herb leaf in the centre of each slice and cover with another slice. Brush with butter. Sprinkle with salt.
- Bake for 6 to 7 minutes. Turn and bake for another 6 or 7 minutes or until the potatoes are a light golden colour.

- In a small saucepan, heat oil, garlic, thyme, and oregano over medium-low heat for 15 minutes. If garlic starts to bubble, turn heat to low. Remove from heat. Let stand at room temperature until cool. Remove garlic and herb sprigs from the oil. Set aside 2 tablespoons of the oil. (Store the remaining oil in an airtight container in the refrigerator for up to 1 week and use in place of olive oil in recipes.)
- Preheat oven to 425 degrees F. Line two large baking sheets with parchment paper; brush paper with some of the 2 tablespoons herb-infused oil. Scrub potatoes. Use a mandoline to slice potatoes 1/8 inch thick. Arrange russet potato slices in a single layer on one of the prepared baking sheets; arrange sweet potato slices in a single layer on the other prepared sheet. Brush tops of potato slices with the remainder of the 2 tablespoons herb-infused oil.
- Bake potatoes, one sheet at a time, for 24 to 26 minutes or until potatoes are golden brown, turning potato slices once halfway through baking. Check potatoes often during the last 2 to 3 minutes of baking since they will brown at different rates. Transfer any potato slices that are nicely browned to a clean piece of parchment paper on the counter. Sprinkle lightly with salt. Serve immediately.

- Make the herbed potato chip dust by combining the potato chips, celery leaves, parsley, and chives in a food processor. Pulse until the potato chips are ground up into small pieces, then adjust to taste with salt, since the potato chips may already have some salt on them.
- Place the lobsters into the freezer for 30 minutes*, and in the meantime, bring a big pot of water to a boil, about a gallon and a half. Season with 1/4 cup of salt, then add the lobsters to the pot. Cover the pot with the lid slightly open, and adjust the heat so the water is at a gentle boil. Cook the lobsters for 10-12 minutes, until the thickest part of the tail (right where the tail attaches to the main part of the lobster) measures 175 degrees F with a thermometer.
- Remove the meat from the lobster using kitchen shears or a lobster tool, and toss it with the celery, mayonnaise, lemon juice, and minced chives. Season to taste with salt and pepper.
- Spoon the lobster mixture into the toasted buns and sprinkle with the herbed potato chip dust. Enjoy!
