3 cups all-purpose flour
1 teaspoon salt
1 tablespoon sugar
1 (.25 ounce) package active dry yeast
1 ¼ cups warm water
2 tablespoons shortening
3 teaspoons dried parsley
½ teaspoon dried rosemary
¼ teaspoon dried thyme
1 teaspoon margarine, melted

Steps:

  • Combine 2 cups flour, salt, sugar, and yeast in a large bowl. Stir in the water, shortening, parsley, rosemary, and thyme. Use an electric mixer to beat on low speed for 1 minute, scraping bowl frequently. Turn mixer to medium, and beat for an additional 1 minute, scraping bowl frequently. Stir in remaining 1 cup flour; mix until smooth. Scrape batter from sides of bowl. Cover, and let rise in warm place for 35 to 40 minutes.
  • Grease a 9x5 loaf pan. Stir down batter by beating about 25 strokes. Scrape batter into greased pan; pat down with floured hands. Cover pan. Let dough rise in warm place until doubled, about 30 minutes. Do not allow dough to over-rise.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven until the loaf sounds hollow when tapped on the bottom, 40 to 45 minutes. Brush top with margarine. Remove from pan, and cool on wire rack.

1 large egg (beaten)
1 1/2 cups UNBLEACHED all-purpose flour ((bleached flour toughens baked goods) )
1 tsp. sea salt
1 tsp. baking powder
1 tbsp. fresh minced parsley
1 tbsp. finely minced fresh chives
1 tsp. fresh thyme (minced)
1 tsp. fresh oregano (minced)
1 1/2 cups Colby Jack or Cheddar cheese (shredded (divided use))
1/4 cup unsalted butter (melted (1/2 stick))

Steps:

  • Grease a 9" round baking dish.
  • Mix egg with half-and-half.
  • Add flour, salt, baking powder, parsley, chives thyme, oregano and 1 cup cheese.
  • Stir to combine.
  • Spread mixture into prepared baking dish.
  • Sprinkle remaining ½ cup cheese over top.
  • Drizzle melted butter over all.
  • Bake at 350° for 30-40 minutes or until golden brown and a toothpick inserted in center comes out clean.

1/2 cup shredded swiss cheese
1/2 cup shredded cheddar cheese
2 tablespoons sugar

2 cups non-alcoholic beer or 2 cups regular beer

Steps:

  • Preheat oven to 375°F Grease and flour a 9x5-inch loaf pan.
  • Mix together flour, cheeses, sugar, baking powder, baking soda, oregano, parsley, thyme and salt.
  • In a small bowl, combine beer and oil.
  • Make a well in center of flour mixture.
  • Add beer all at once, tossing with fork until dry ingredients are just moistened.
  • Spread batter in prepared pan; smooth top.
  • Bake bread until golden and a toothpick inserted in center comes out clean, about 50-55 minutes.

No kneading required (my favorite kind of bread making). This makes 2 loaves - one for now & one to freeze for later. Prep time includes rising time.

4 tablespoons unsalted butter
3/4 cup buttermilk
3/4 cup water
1 (1/4 ounce) package active dry yeast
3 large eggs
1 teaspoon hot pepper sauce
4 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 cup grated parmesan cheese
1 cup shredded sharp cheddar cheese or 1 cup swiss cheese, divided
2 garlic cloves, finely minced
1 teaspoon dried parsley flakes or 1 tablespoon fresh parsley, minced
1 teaspoon dried oregano or 1 tablespoon fresh oregano, minced
1 large egg yolk
1 tablespoon water

Steps:

  • Lightly butter (2) 8 X 4 X 2-inch loaf pans.
  • Heat butter over medium heat. Add the buttermilk and water; heat till warm to touch (105-115ºF)
  • Pour into a large bowl & sprinkle the yeast on top. Let stand for 5 minutes.
  • Whisk to dissolve yeast then whisk in 3 eggs & the hot sauce.
  • Sift together flour, sugar, baking powder, baking soda & salt.
  • Gradually stir into the liquid mixture to make a thick batter.
  • Stir in Parmesan cheese, 3/4 cup shredded cheddar, garlic & herbs.
  • Pour batter into prepared pans, spreading evenly.

  • Generously grease 1 1/2 or 2 quart casserole dish or 9x5" loaf pan.

2 teaspoons dry mustard

2 cups beer, at room temperature
1/2 cup tomato juice
1 tablespoon Worcestershire sauce
2 eggs, beaten
2 cups gruyere cheese
1 cup parmesan cheese

Steps:

  • 1. Preheat oven to 350 degrees F. Grease two 9×5-inch loaf pans.
  • 2. Grate all of the cheese.
  • 3. In a large bowl whisk together the flour, baking powder, salt, dried mustard and Italian herbs.
  • 4. Remove a 1/ 2 cup of the white cheddar and 1/2 cup of the Gruyere cheese and a 1/4 cup of the Parmesan and set aside for the topping of the bread. Add the rest of the cheeses to the flour mixture. Using your fingers mix in the cheese so all the cheese is coated in flour.
  • 5. In a separate bowl whisk together the beer, sour cream, tomato juice, eggs and worcestershire sauce until thoroughly combined.
  • 6. Add the liquid mixture to the dry ingredients and mix with a spatula just till mixed. Do not over mix.
  • 7. Divide the batter between the two greased loaf pans and press down with a spatula. Sprinkle the top with the cheese that was set aside earlier.
  • 8. Bake for 50 -55 minutes or until done. Allow to cool in the pans for 15 minutes before removing them from the pans. Place on a wire rack to cool.

1 cup old-fashioned oats

4 to 4-3/4 cups all-purpose flour

Steps:

  • In a small bowl, combine boiling water and oats; cool to 110°-115°. In a large bowl, dissolve yeast in warm water. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top.
