EASY SAUERKRAUT & RICE
Sauerkraut and rice is a healthy and filling side dish or a vegetarian-friendly dinner. It is quick and easy to make. It is also vegan and gluten-free, which makes it excellent for those with allergies and intolerances. Sauerkraut and rice is a good accompaniment to cooked meat, chicken and turkey.

Steps:
- Peel and dice the onion. Heat olive oil in a large pan and sauté the onion until soft.
- Wash the rice and add it to the pan. Saute until the rice is transparent. Keep the lid on to lock the flavours in.
- Rinse the sauerkraut to remove excess saltiness. Cut the sauerkraut into thin slices and add it to the pan. Saute for another 10 minutes with the lid on.
- Add the sweet paprika and bay leaves. Pour some of the sauerkraut juice into the pot to prevent the vegetables from sticking to the pan. Stir and cook for another minute.
- When the sauerkraut is par-cooked, transfer the mixture to an oven dish and cook in the oven for another 15 minutes at 175°C/347°F.
- Garnish with finely sliced fresh leek, parsley and ground black pepper on the top of the cooked dish.

- Prepared rice according to package directions. Meanwhile, in a large skillet, cook the beef, celery and green pepper until the meat is browned and vegetables are tender; drain. Add the rice, salt and pepper. , Transfer to a greased 2-qt. baking dish. Sprinkle with cheese. Bake, uncovered, at 350° for 10-15 minutes or until heated through and cheese is melted.

BEEF NOODLE SKILLET

- Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 1 minute. Add the ground chuck and sprinkle with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Add the tomato paste and cook for about 30 seconds.
- Add the noodles, broth, 1 cup hot water, the mustard, paprika and Worcestershire sauce. Give a big stir and bring to a simmer. Cover and allow everything to simmer, stirring occasionally and adding up to 1/2 cup more water if necessary, until the pasta is al dente and the sauce has thickened, about 12 minutes. Stir in the sour cream and heavy cream and cook for 1 additional minute or until the pasta is tender.
- Remove from the heat. Sprinkle over the chives and serve directly from the pan.
SPICED RICE WITH BEEF

- Blitz the ginger and garlic to a paste in a small food processor. Put the beef in a large bowl and add the ginger-garlic paste, the allspice, cloves, 2 tsp black pepper and 2 tsp salt. Mix to coat the beef, then cover and leave to marinate for 30 mins. Will keep chilled for up to a day.
- Heat the oil in a large ovenproof pan over a medium heat and cook the onion for 8 mins until soft and translucent. Tip the beef and any leftover marinade into the pan and sizzle for 10 mins until the beef starts to caramelise in places.
- Add the cardamom pods, cinnamon sticks, thyme, all- purpose seasoning and stock. Bring to a simmer, then cover and reduce the heat to low. Cook for 1 hr, then remove the lid and cook for another 30 mins. The beef should be tender but still holding together. Heat the oven to 180C/160C fan/gas 4. Leave to cool completely, then seal in an airtight container and freeze for up to two months.
- Tip the rice into the beef mixture with just enough water to cover it by about 1cm. Stir, then dot the butter over the top. Cover and bake in the oven for 30 mins. Fluff the rice up with a fork and serve with Ghanaian gravy (see 'Goes well with').

- Mix sauerkraut and margarine, heating through; set aside.
- Alternate layers of beef, sauerkraut, and rice in a 1 1/2 quart deep casserole that his been greased.
