Categories     Appetizer     Gift     Party food

Time 10m

Number Of Ingredients 9

1 small log fresh (not aged goat cheese (5 oz, 145g))
2 cups extra-virgin olive oil (more or less, as needed)
1/2 teaspoon red chili flakes
1/2 teaspoon fennel seeds (whole)
1 teaspoon pink peppercorns (optional)

3 sprigs fresh thyme
2 garlic cloves (cut in half lengthwise)

Steps:

  • Cut goat cheese log into 4 equal pieces; form into balls, if desired.
  • Add 1 cup olive oil into a a sterilized wide-necked jar. Add chili flakes, fennel seed and peppercorns. Add the goat cheese balls one at a time, adding a little olive oil between each one so they are fully immersed. Add lemon zest, bay leaves, thyme and garlic to jar. Pour in enough olive oil to fully cover cheese. Seal jar and refrigerate for at least a few hours (we found it best after 2 days). Lasts for up to 2 weeks.

This is a very colorful and tasty appetizer. Because it has such a stunning presentation, it is a great appetizer for the holidays. I take this to every function and gathering we attend - only because everyone else requests it!

Categories     Appetizers and Snacks     Cheese

Time 8h20m

Yield 16

Number Of Ingredients 12

½ cup olive oil
½ cup white wine vinegar
1 (2 ounce) bottle diced pimento, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
3 cloves garlic, minced
1 teaspoon sugar
¾ teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
1 (8 ounce) package Cheddar cheese
1 (8 ounce) package cream cheese, cold

Steps:

  • In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
  • Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
  • To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.

HERBED GOAT CHEESE

Herbed Goat Cheese image

Provided by Ina Garten

Categories     appetizer

Time 1h10m

Yield 8 servings

Number Of Ingredients 7

2 (6-ounce) creamy goat cheese disks, such as Coach Farm
Kosher salt and freshly ground black pepper
Minced fresh dill
Julienned fresh basil leaves
Crushed red pepper flakes
Good olive oil
Bread or crackers, for serving

Steps:

  • Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  • Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

MARINATED GREEK FETA CHEESE

Marinated Greek Feta Cheese image

This is a easy recipe and it makes a great gift. Feta cheese is marinated in olive oil with several herbs (I use fresh out of my herb garden when I can). You can keep it in chunks or drain it and mash to serve as a spread. Put in a decorative jar or covered bowl and give with crisp pita chips for a delicious gift!

Provided by nannie jo

Categories     Spreads

Time 25m

Yield 2 half pints

Number Of Ingredients 7

2 tablespoons olive oil
2 tablespoons assorted snipped fresh herbs (such as dill weed, thyme, basil, oregano, parsley ,dry may be used but use only half of what is call)
2 garlic cloves, minced (I use already chopped)
1 tablespoon lemon juice
1 tablespoon cracked peppercorn
1 teaspoon poppy seed
8 ounces feta cheese, cubed

Steps:

  • Place feta cheese in a bowl.
  • In a jar with a tight fitting lid, add all the other ingredients and cap jar.
  • Shake until well blended.
  • Pour over feta and stir gently as not to break up cubes.
  • Divide mixture between 2 half pint jars with lids.
  • Store in the fridge for up to a week.
  • To serve, let cheese come to room temp for about 30 minutes.
  • Serve with assorted crackers, chips or crisp breads.
  • Makes 2 half pint jars.
  • To serve as a spread, mash cheese with some of the marinade to desired thickness.

  • Thinly slice the goat cheese into thin rounds. I like to use a piece of dental floss wrapped once around and pulled to create thin even slices, about 1/8 inch.
  • Coat the bottom of your dish with oil, and add the minced garlic. I like to use a garlic press to get the garlic really fine. Mix in the garlic to get it evenly distributed.

  • In a mixing bowl combine the onion, garlic, chili pepper, paprika, thyme, peppercorns, allspice berries, salt, and bay leaves. Then add the cheese cubes and stir to coat.
  • Transfer the cheese mixture to a glass jar (24 ounces is perfect but larger is fine) and add enough oil until it’s completely submerged. Seal tightly and marinate in the refrigerator for about 3 to 5 days or up to 2 weeks. The oil will get thick and cloudy when chilled (it may stay liquid until the first time you remove the lid and agitate it, but eventually will thicken).
  • Allow the jar to sit out at room temperature for about 30 minutes before serving to allow the oil to liquify and the cheese to soften. Serve with rye bread (traditional) or any other bread you prefer.
