Delicious marinated bean recipe with vibrant herbs and zesty shallots.

1 small shallot, finely chopped
2-4 tbsp white wine vinegar
1 cup cooked dried beans or canned white beans* (or any mix of beans or chickpeas you prefer)
2-4 tbsp olive oil
1/2 cup finely chopped herbs**
1 pinch fine sea salt
1 pinch black pepper
1/4 tsp crushed pepper flakes

Steps:

  • Add chopped shallot to a small bowl and top with white wine vinegar until just covered. Set aside.
  • Add beans to a medium bowl and cover with olive oil. Add herbs, salt, and peppers and gently mix until blended.
  • Add shallot to bean mixture and gently mix until well combined.
  • Place in an airtight jar or container and keep in fridge for up to 5-7 days.

1 (13-oz) jar kidney beans ((drained and rinsed))
1 medium shallot ((finely chopped))
3 green onions ((sliced thin))
1/2 cup chopped fresh parsley
1/2 teaspoon finely ground real salt
1 teaspoon crushed red pepper flakes
3 tablespoons red wine vinegar
3 tablespoons extra virgin olive oil

Steps:

  • Dump the beans into a medium mixing bowl, and then stir in the shallot, green onions, parsley, salt, and crushed red pepper flakes. Drizzle the vinegar and olive oil over the beans, and stir.
  • Allow the beans to marinate for at least 10 minutes, and then serve. Store any leftovers in a tightly sealed container in the fridge for up to 5 days.

2 cups water
1 pound fresh green beans
2 tablespoons reduced-sodium soy sauce
1 tablespoon cider vinegar
1 teaspoon olive oil
1 teaspoon sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon Chinese five-spice powder
Dash pepper
1 tablespoon sesame seeds, toasted

Steps:

  • In a large saucepan, bring water to a boil. Add beans; cover and boil for 3-5 minutes or until crisp-tender. Drain immediately place beans in ice water. Drain and pat dry. Place in a large bowl., In a small bowl, whisk together the soy sauce, vinegar, olive oil, sesame oil, ginger, five-spice powder and pepper. Pour over beans; toss to coat. Cover and refrigerate for 1 hour or until chilled. Sprinkle with sesame seeds just before serving.

Herby Three-Bean Salad image

Ready for picnics and potlucks, this zippy take on a classically American three-bean salad features crunchy green beans, creamy chickpeas and cannellini beans (and is vegan, too). The marinated vegetables (fennel, celery and onions) add texture and a vinegary kick, while a mix of herbs lend complexity and freshness. Feel free to use whatever combination of canned beans you like; kidney beans are classic, black beans velvety, black-eyed peas earthy. You can prepare this salad up to four hours ahead and keep it at room temperature, or you can make it the day before and refrigerate it. Toss well and add more salt and vinegar, if needed, just before serving.

1 1/2 teaspoons coriander seeds
1 1/4 teaspoons salt, plus more as needed
1/4 cup unsweetened rice vinegar, plus more to taste
2 teaspoons minced fresh thyme leaves
1/2 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil, plus more to taste
1 cup thinly sliced red onion
1 cup thinly sliced fennel, celery or a combination
8 ounces green beans, trimmed and cut into 1-inch pieces (about 2 1/2 cups)
1 (15-ounce) can chickpeas, drained and rinsed
1 (15-ounce) can cannellini or Great Northern beans, drained and rinsed
3/4 cup chopped fresh soft herbs, such as parsley, mint, dill, cilantro or a combination
Flaky sea salt, for serving

Steps:

  • In a dry medium saucepan (one large enough to hold the green beans in Step 4), toast coriander seeds over medium heat, stirring frequently, until fragrant, 2 minutes. Transfer to a small bowl to cool. Once the seeds are cool enough to handle, use a mortar and pestle to crack them, or place them on a cutting board and crack with the flat side of a chef's knife. Set aside.
  • Fill the same saucepan you used for the coriander with salted water and bring to a boil.
  • While waiting for the water to boil, combine 1/4 cup vinegar, thyme, 1/2 teaspoon salt and 1/4 teaspoon black pepper in large mixing bowl. Slowly whisk in olive oil. Add onion along with fennel or celery, or both, and toss. Set aside to marinate for at least 10 minutes while preparing the rest of the salad.
  • To the boiling water, add the green beans and blanch for 2 to 3 minutes, until they turn bright green and are crisp-tender. Immediately drain beans in a colander, then run cold tap water over them to stop the cooking. Once cool, pat them dry.
  • Add the blanched green beans, chickpeas, cannellini beans, herbs and toasted coriander seeds to the marinated onions. Season with remaining salt and pepper, and gently toss to evenly combine. Taste and add more salt and vinegar if needed. (Keep in mind that you'll also be adding flaky salt to finish.) Drizzle with olive oil and flaky sea salt, and serve.

Steps:

  • Combine shallot and vinegar in a small bowl and let sit 5 minutes.
  • Meanwhile, mix herbs and oil in a large bowl to coat herbs. Add beans and red pepper and toss to combine. Season generously with salt.
  • Add shallot mixture to bean mixture and toss gently to combine.

  • Beans can be made 3 days ahead. Cover and chill.

HERB MARINATED BEANS

They're very versatile: try a spoonful on a salad, tuck some into a wrap or warm them up to spoon over a grain bowl. It's worth letting the beans marinate for at least 24 hours to infuse them with deeper flavor. 1/2 cup olive oil
2 tablespoons coarsely chopped fresh sage
2 tablespoons coarsely chopped fresh parsley
2 tablespoons coarsely chopped tarragon
2 tablespoons chopped rosemary
2 tablespoons chopped thyme
6 cloves garlic, coarsely chopped
2 whole chickens (2 1/2 to 3 pounds each), butterflied
Salt and freshly ground black pepper
8 cups homemade chicken stock
1 head garlic, roasted, cloves squeezed in a bowl
2 tablespoons cold butter, cut into tablespoons
1 tablespoon freshly squeezed lemon juice
Salt and freshly ground pepper
1/2 cup cooked fava beans
1 pound celeriac peeled and cut into 2-inch pieces
1 pound baking potatoes, peeled and cut into 2-inch pieces
3 tablespoons unsalted butter
1/2 cup milk or cream, warmed
Salt and freshly ground pepper

Steps:

  • For the Chicken: Whisk together the olive oil, herbs and garlic in a large shallow baking dish. Add the chicken and turn to coat. Cover and let marinate at least 4 hours or overnight.
  • Preheat oven to 400 degrees. Heat a large saute pan or grill pan over high heat until just smoking. Remove chicken from marinade and season with salt and pepper to taste. Sear each chicken on both sides, and place on a sheet pan. Place in oven and bake for 15 to 20 minutes, until cooked through.
  • For the Roasted Garlic-Fava Bean Sauce: Place stock and roasted garlic in a medium saucepan and reduce to 3 cups. Strain into a clean saucepan and bring to a simmer. Whisk in the butter and lemon juice and season with salt and pepper to taste. Add the fava beans and cook for 1 minute.
  • For the Celeriac and Potato Puree: Place the celeriac and potatoes in a large saucepan filled with salt water and cook until soft. Drain, rinse out the pan and run the celeriac and potatoes through a food mill into the pan. Add the butter, warmed milk and beat with a wooden spoon. When the mixture is smooth, season with salt and pepper and fold in the parsley.
