ALMOST AS SIMPLE PASTA WITH PARMESAN, HERBS, AND FRESH GARLIC
Another family favorite that lends itself to easy variations -- tweak the taste to complement the day's main dish by your choice of herbs. You probably have all these ingredients handy in your pantry and refrigerator. I swear the kids would eat this every day if I'd make it that often. I can't personally vouch for freezing it, but I know that it reheats well in the microwave after being refrigerated. Cooking time is mainly cooking the pasta.

Steps:
- Saute garlic in butter or olive oil with herbs until garlic is soft but not browned.
- Toss with hot pasta, Parmesan, salt, and pepper.
- Herb suggestions: Italian seasoning. Fresh or dried basil. Fresh or dried Rosemary. Herbs de Provence. Fresh or dried basil and oregano in combination. Fresh or dried parsley. Fresh or dried parsley, oregano, and basil. Italian seasoning with a pinch of crushed, red pepper. Fresh chives. Fresh parsley and fresh chives.
- Tip -- Dried herbs, especially rosemary, may benefit from being re-hydrated in a tablespoon of water or white wine.
GARLIC-HERB PITA TOASTS

- Cooks Tip: For the best results, use a baking sheet that is not too dark for this recipe; otherwise, watch the pita bread carefully as it burns easily.
- Preheat oven to 500°F.
- Separate each pita quarter into 2 pieces.
- Arrange in a single layer, rough side up, on an ungreased baking sheet.
- Brush evenly with the oil.
- In a small bowl, combine the parsley, chives, and garlic.
- Using your fingers, distribute the herb mixture evenly over the pita quarters.
- Sprinkle evenly with coarse salt.
- Bake on the top rack of the oven for 3 to 5 minutes, or until the pita quarters are nicely toasted.

Steps:
- Heat oven to 375°F Mix eggs and cheeses in a large bowl until well blended. Stir in the broccoli, mushrooms, tomatoes, and onions.
- Unroll the crescent dough and separate into 16 triangles. Arrange on cookie sheet, covered in parchment paper, in an 11" circle with short sides of triangle overlapping in center and points of triangles toward outside.
- Spoon cheese mixture onto dough near center of circle. Bring outside points of triangles up over filling, then tuck under dough in center of ring to cover the filling.
- Bake 35 - 40 min, or until crust is golden brown and filling is heated through.
GREEK SPINACH & HERB PIE (WITHOUT CHEESE) A.K.A. SPANAKOPITA
Spanakopita can be made with or with out cheese. The no cheese version is as popular with Greeks as the version with cheese, and is a popular Lenten dish. Although the name for this dish is often used for the spinach pie with cheese, traditional spanakopita does not include cheese.**Cooking time does not include the 30 minutes it needs to sit before serving.**

- Coarsely chop spinach and place in a colander. Salt lightly and let drain for 10 minutes. Press or squeeze to remove all excess liquid.
- In a large mixing bowl, combine spinach, dill, parsley, garlic, onions, leek, pepper, and mix well until ingredients are well blended.
- Preheat the oven to 350°F (175°C).
- Spray 9" round or square pyrex plate with cooking spray. When laying the sheets in the pan, leave an overlap of phyllo outside the pan rim all the way around. Lay half the phyllo sheets on the bottom, spraying each one lightly with Pam cooking spray.
- Spoon in the spinach mixture and spread evenly. Fold the extending phyllo in over the mixture. Lay the remaining phyllo sheets on top, spraying each with cooking oil except the top sheet. Tuck or tim eadges. I like to kind of ruffle mine.
- Bake at 350°F (175°C) for 45-50 minutes in the middle of the oven. When done, remove from the oven and allow to cool 1/2 hour before serving.

Steps:
- Sift dry ingredients into a bowl, rub in butter.
- Stir in herbs, cheese and egg yolk, press mixture firmly together with hand. Knead gently on lightly floured surface until smooth, cover, refrigerate for 30 minutes.
- Preheat oven to 180°C.
- Roll dough between sheets of greaseproof paper until 3mm thick. Cut dough into 4cm squares, then cut again to make triangles.
- Place triangles about 1cm apart onto greased oven trays.
- Bake for about 10 minutes or until lightly browned, cool on trays.
