1 lb bulk pork sausage
1 container (8 oz) refrigerated prechopped onions
1 container (8 oz) refrigerated prechopped tricolor bell peppers
1 bag (30 oz) frozen country-style shredded hash brown potatoes
2 cups shredded sharp Cheddar cheese (8 oz)
1 cup sour cream
1 can (10 3/4 oz) condensed Cheddar cheese soup

Steps:

  • Heat oven to 375°F. Spray 3-quart casserole with cooking spray.
  • In 10-inch skillet, cook sausage over medium-high heat 3 minutes, stirring to crumble. Add onions and peppers. Cook 5 minutes longer or until sausage is no longer pink and vegetables are tender. Place mixture in large bowl. Add hash browns, 11/2 cups of the cheese, the sour cream and soup; stir to coat. Spoon mixture into casserole. Top with remaining 1/2 cup cheese.
  • Bake uncovered 50 minutes or until potatoes are tender and top is golden brown.

2 tablespoons butter
3 medium sweet Spanish onions, sliced
8 ounces fresh mushrooms, sliced
1 cup shredded Swiss cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (5 ounces) evaporated milk
2 teaspoons soy sauce
6 to 8 slices French bread (1/2 inch thick)
6 to 8 thin slices Swiss cheese (about 4 ounces)

Steps:

  • In a large skillet, melt butter over medium-high heat. Saute onions and mushrooms until tender. Place in a 11x7-in. baking dish or 2-qt. baking dish. Sprinkle shredded cheese on top. Combine the soup, milk and soy sauce; pour over cheese. Top with bread and cheese slices. Cover and refrigerate 4 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Loosely cover with foil and bake at 375° for 30 minutes. Uncover and bake 15-20 minutes longer or until heated through. Let stand for 5 minutes before serving.

1 ½ cup water
¾ tsp. chili powder
½ tsp. salt

8 corn tortillas
1 cup shredded cheddar cheese
½ cup chopped and unpeeled tomato
¼ cup sour cream

Steps:

  • Cook chicken and dice, set aside. Sauté mushrooms, onion, bell pepper, & minced jalapeno pepper until tender.
  • Remove skillet from heat; stir in chicken and green chilies.
  • Set aside. Combine milk and flour in a small saucepan.
  • Gradually stir in water; place on medium heat-cook & stir until thick & bubbly.
  • Stir in chili powder, salt, cumin, & pepper.
  • Add to chicken mixture and set aside.
  • Wrap tortillas in damp paper towels & then in foil & bake at 350 degrees for 10 min.
  • Arrange half of the tortillas in a 12x8x2 dish.
  • Top with half of chicken mixture.
  • Repeat with rest of tortillas and chicken mixture.
  • Cover and bake at 350 degrees for 25 min.
  • Uncover and sprinkle with cheese; let stand 10 min.
  • Top serving with tomato and sour cream.
  • Garnish with additional jalapeno pepper slices.

1 pound lean ground beef or turkey
1 packet dry ranch dressing mix (3 Tbsp)
3 cups water + 1 Tbsp better than bouillon beef base (or 3 cups beef broth)
1 (12 oz) package egg noodles
1 (8 oz) package cream cheese
1 (24 oz) jar favorite spaghetti sauce (I used Classico brand 4 cheese pasta sauce)
1 (8 oz) block monterey jack cheese, shredded

Steps:

  • Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for about 5 minutes. Drain off any excess grease. Stir in the ranch dressing mix.
  • Pour in the water and bouillon and scrape bottom of pot so nothing is sticking. Turn off Instant Pot.
  • Dump in the egg noodles and press to submerge as many as possible. They all won't be under liquid and that's okay.
  • Dump the cream cheese on top of noodles.
  • Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let the pot sit for 5 minutes and then move valve to venting. Remove the lid.
  • Stir well to coat the noodles with the cream cheese.
  • In a 9 x 13 inch pan layer half of the noodles mixture, half of spaghetti sauce and half of cheese. Repeat.
  • Bake for 20 minutes in a 350° F oven.
  • Scoop onto plates and serve.

This is another recipe handed down from my husband's family. During the stressful meeting-of-the-parents times over the course of our relationship, this hash brown casserole was perhaps one of the only things I could look forward to without some level of hesitation! We still make it as often as we can justify it, which sadly is less often than we wish it were. (Stupid calories.) We have tried making it with low-fat ingredients and it does work nicely, but full-fat ingredients will make it shine. Note that the sizing of frozen hash brown bags doesn't always allow for you to buy a two-pound bag, so you may need to mix and match until you get that amount. We usually have some frozen hash browns left over when we make it, which can be used in any number of other recipes as desired. Also note that the topping is technically optional, but we highly recommend using it. It adds a wonderful texture that we would miss if it weren't included. If you have any casserole left over (no promises!) then this reheats well too.

HEAVENLY "CHICKEN" (FRICHIK) CASSEROLE

A great vegetarian comfort food that also makes a great holiday dish. This recipe is a favorite among many that have discovered the deliciously tasting Worthington FriChik. You can also use real chicken, mayonnaise, milk and even add some cheese if you're not vegetarian. Before becoming vegetarian I made a casserole very similar to this one regularly. I got this recipe from a good friend that got it from another friend's cookbook. Worthington FriChik has egg white in the ingredients and there is cream in the mushroom soup, so its not vegan. I've been trying to use as little dairy as possible so I use soy milk and vegenaise (the yummiest soy mayonnaise).

2 cups vegetarian chicken substitute, diced (Use Worthington FriChik & include the gravy it comes in!!!)

1/3 cup soymilk
1/2 cup soy mayonnaise (I use Vegenaise. A friend of mine uses sour cream instead and of course it tastes great that way too)
1/2 teaspoon salt
paprika, for topping
sliced almonds, for topping

Steps:

  • Saute celery and onion in a very small amount of oil or water.
  • Put into mixing bowl and add remaining ingredients, mixing well.
  • Sprinkle top with paprika and sliced almonds.
  • Put in oiled casserole dish and bake at 350 degrees F about 45 minutes. (The 1 1/2 passive work time listed includes the time to cook the two cups of brown rice ahead).

1 med to large chopped onion, i use large as we are onion fans
2 tsp minced garlic
1/2 tsp salt
1 tsp italian seasoning
29 oz tomato sauce
8 oz cream cheese, room temperature
16 oz sour cream
1 lb egg noodles
2 c shredded mozarella

Steps:

  • 1. Cook the noodles according to package directions, drain and set aside (I add a bit of butter to mine afterwards to keep them from sticking, or you can rinse it in cold water instead). Meanwhile, cook the ground beef, onion and minced garlic in a skillet until browned; drain off fat. Add in salt, italian seasoning and tomato sauce. Simmer for 30 minutes on low. In a separate bowl mix together the cream cheese and sour cream. In a 13×9″ greased baking dish layer 1/3 of the sauce, 1/2 of the noodles, 1/2 of the cream cheese mixture, 1/2 of the mozarella. Repeat again, ending with 1/3 of the sauce on top, or I end with cheese, makes a prettier dish. Bake at 350 degrees for 30-45 minutes, uncovered

Steps:
