HEARTY MEAT LASAGNA

One of my family's favorite meals, I make this classic Italian casserole using a blend of Mozzarella, Provolone, Parmesan, Asiago, Fontina, and Romano cheeses. Enjoy!

12 extra-wide lasagna noodles (10+ ounces)
1 lb lean ground beef
3/4 lb Italian sausage
1/2-1 lb fresh mushrooms (sliced and sauteed in butter)
1 (26 ounce) jar thick spaghetti sauce (Your favorite!)
1 (8 ounce) can tomato sauce
1 egg, slightly beaten
1 (16 ounce) container part-skim ricotta cheese
10 ounces shredded Italian cheese blend

Steps:

  • Cook and drain noodles as directed on package; rinse with hot water and drain.
  • In a large skillet or Dutch oven, cook ground beef and Italian sausage until done; drain then add mushrooms, spaghetti sauce, and tomato sauce; simmer 10-15 minutes.
  • In a small bowl, blend egg and ricotta.
  • In the bottom of a 9x13" baking pan, spread layers of 1/3 of the sauce, then 1/3 of the lasagne noodles, then 1/3 of the ricotta mixture, and then 1/3 of the shredded cheese; repeat layers twice.
  • Cover tightly with aluminum foil and bake at 375° for 20 minutes; uncover and bake another 20 minutes; remove from oven and let stand 5-10 minutes before cutting.
  • NOTE: You can get by using 9 lasagne noodles, but I use 12 because I like to overlap them a bit ~ You also may vary the meats and use 1 pound sausage with 3/4 pound beef or whatever combination your family likes.

1 1/2 lbs ground beef or 1 1/2 lbs turkey
1 tablespoon roasted garlic grapeseed oil
1 tablespoon spices (Wildtree Hot & Spicy Fra Diavolo Blend)
1 tablespoon crushed garlic
28 ounces crushed tomatoes
6 ounces tomato paste
2 tablespoons spices (Wildtree Hot & Spicy Fra Diavolo Blend)
1/2 teaspoon salt
16 ounces o frozen 3 cheese tortellini
8 ounces shredded mozzarella cheese

Steps:

  • Preheat oven to 400.
  • Heat a large skillet over medium high heat. Add ground beef or turkey, grapeseed oil, 1 T fra diavolo blend and garlic to skillet.
  • Brown approximately 5-7 minutes. Drain off any excess grease from the ground beef.
  • Add the tomato sauce bag contents to the ground beef skillet. Stir. Simmer uncovered approx 7-8 minutes.
  • In a 2 quart casserole pan, layer tomato meat sauce, frozen tortellini (yes, bake from frozen!), and mozzarella cheese, finishing with a layer of tomato sauce and then cheese. Bake COVERED at 400 for approx 30 minutes, or until center of lasagna is hot. Uncover and cook an additional 5-7 minutes to slightly brown the cheese on top.
  • Serve with salad and garlic bread.

I found this recipe on the back of the label on a package of ground beef! Of all the different ways I've used the same old pasta and sauce combinations, I'd never tried this one - it was a big hit! I'm sure this will adapt itself to using vegetables, different meats, no meat - whatever you like best. I'm including the ingredients for a "lazy" marinara sauce in case you don't have any jars of storebought in the pantry.

1/2-1 lb ground beef
1 -2 minced garlic clove
1/2 cup chopped onion
1 (26 ounce) jar marinara sauce
25 ounces frozen cheese ravioli
1 -2 cup shredded mozzarella cheese (or a blend of mozzarella and parmesan)
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 -2 teaspoon italian seasoning (or a blend of oregano, basil and parsley)
1 -2 teaspoon sugar
crushed red pepper flakes, to taste (optional)
salt, to taste
1 -2 dash wine (just a splash or two) (optional)

Steps:

  • preheat oven to 375.
  • brown ground beef with garlic and onion in large nonstick skillet. Drain off fat if necessary.
  • Mix with prepared marinara and set aside.
  • You can use a jar of storebought marinara or make your own with the ingredients listed above. The ingredients are flexible - I use whatever combination of canned tomatoes I happen to have at the time - crushed, diced, puree, with herbs or garlic already added - whatever. No need to cook before you add to the mix - it will bake along with everything else.
  • Bring 4 qts water to a boil. Cook ravioli just till it floats, about 3-5 minutes. Drain.
  • Place a bit of sauce/beef mixture in bottom of 9x13 pan. Add a layer of half the ravioli, topped by half the sauce, followed by half the shredded cheese.
  • Repeat layers.
  • Bake uncovered for about 30 minutes, till sauce is bubbly and cheese is browned.
  • Let stand 5-10 minutes before serving.

2 cups CLASSICO Tomato and Basil Pasta Sauce
1 pkg. (8 oz.) dried cheese tortellini
1/2 cup KRAFT Parmesan Cheese, divided
1 cup water
1 cup KRAFT Mozzarella Cheese

Steps:

  • Brown meat in large deep nonstick skillet; drain.
  • Layer 1/3 of the pasta sauce in same skillet; cover with half each of the meat, tortellini and Parmesan. Repeat layers. Top with remaining pasta sauce. Pour 1 cup water around edge of skillet; cover.
  • Cook on medium heat 20 min. or until tortellini are tender. Top with mozzarella cheese. Cover; cook until mozzarella is melted.
