- Caramelize Onions:
- Heat 2 tablespoons vegetable oil in a medium skillet over medium heat and cook 2 thinly sliced large onions, stirring often and adding water as needed to prevent burning, until deep golden brown and very soft, 20-25 minutes.
- Make & Cook Patties:
- Gently mix 1/4 small onion, finely chopped, 1 pound ground beef chuck (20% fat), 1 tablespoon ketchup, 1/2 teaspoon garlic powder, 1/4 teaspoon freshly ground black pepper, and 1 teaspoon kosher salt in a medium bowl. Divide into 4 portions and press each between 2 pieces of parchment or waxed paper until about 1/4 " thick (you want them roughly the same dimensions as the bread you're using).
- Heat 1 tablespoon vegetable oil in a large skillet, preferably cast iron, over medium-high. Working in 2 batches, cook patties, pressing gently, until browned but still pink in the center, about 2 minutes per side. Transfer to a plate. Do ahead: Patties can be formed 8 hours ahead. Cover and chill.
- Assemble & Press Melts
- Wipe out skillet; reduce heat to medium. Top 4 slices seeded rye bread with 4 ounces thinly sliced aged sharp cheddar, then patties, onions, 4 ounces thinly sliced Swiss cheese, and another 4 slices bread; spread tops with 1 teaspoon mayonnaise each. Cook, mayo side down and weighted with a foil-covered heavy pan, until golden brown, about 3 minutes. Remove pan; spread top of each melt with 1 teaspoon mayonnaise. Flip; weight with pan. Cook until bread is golden brown and cheese is melted, about 3 minutes.
HEARTY RYE MELTS
When we moved from the Midwest to Kentucky, we were invited to a neighborhood gathering, where this appetizer was served. Hanky panky-as it's often called around here-is traditionally served at Derby Day parties, but at our home it's become a year-round favorite.

- In a large skillet, cook the beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add chili powder and cheese; cook and stir until cheese is melted. Spread a heaping tablespoonful on each slice of bread. Place on a baking sheet. , Bake at 350° for 12-15 minutes or until edges of bread begin to crisp. Garnish with parsley. Serve warm.

THE ULTIMATE PATTY MELT BURGER
I used to work at Friendly's, a family restaurant chain where patty melts were a major feature of the menu. The ordinary patty melt is a grilled swiss on rye with a hamburger and some grilled onions inside. But its even better with bacon and mushrooms. My DH's absolute, favorite burger. The prep work takes a little time as you cook each element but if you have the bacon, onions, and mushroom ready ahead you can assemble the patty melts as fast as you can cook a hamburger. Good for race day, game day, or any time you've got a crowd of hearty eaters at your table.

- Cut the bacon strips in half. Fry to preferred doneness (I like mine moderately soft).
- Fry onions in a little butter over medium to medium-high heat until cooked and browned.
- Fry mushrooms in butter or bacon grease until nicely cooked and a little browned.
- Form ground sirloin into 6, slightly oval patties. Fry or grill to preferred doneness (I like medium-well).
- While patties are cooking, make 6 sandwiches of rye bread and cheese. Butter the outsides and cook like a normal grilled-cheese sandwich -- in restaurant-speak this is a "set-up".
- When set-ups are ready them pry them open and set them on the individual plates.
- Put cooked patties on one side of the set-up. Top with bacon strips, onions, and mushrooms.
- Close sandwiches, pin with frilly toothpicks, and cut in half.
- Offer mayonnaise and/or mustard (preferably brown or Dijon), at the table.
- I prefer to offer coleslaw (try Recipe #209944 ), or a green salad but really crisp french fries and a pickle on the side are customary.

OLD-FASHIONED PATTY MELTS

- In a large skillet or grill pan over medium-high heat, melt 1 tablespoon butter; saute onion 6 to 8 minutes, or until it starts to brown. Remove to a bowl and cover.
- Shape beef into 2 oval patties; sprinkle with salt and pepper to taste.
- In the same skillet over medium heat, cook patties 5 to 7 minutes per side, or until no longer pink in center. Remove from skillet and keep warm.
- Spread remaining butter over one side of each slice of bread. Place in skillet buttered side down, and toast until lightly browned.
- To assemble a sandwich, place a slice of cheese on a piece of toast, top with a beef patty, half the onion slices, and half the salad dressing. Top with another slice of cheese and piece of toast; repeat with second sandwich, then serve immediately.
PATTY MELTS WITH SWISS ON RYE

- Heat the olive oil in a large skillet over medium high heat. Add the onions and cook for 20 minutes, until they have caramelized. Remove the onions from the skillet and set aside.
- Heat the olive oil in a large skillet over medium high heat. Add the beef patties to the hot skillet and season with salt and pepper.
- Cook on each side for 2 minutes, or until beef is cooked through. Remove the patties from the skillet and wipe the pan if needed.
- Butter each slice of bread on one side. Place one slice of bread butter side down in the hot skillet. Add 1 beef patty to the top of the bread slice along with ¼ of the onions and a slice of cheese.
- Top each sandwich with the 2nd slice of bread. Cook for 3-4 minutes or until the bread is toasted. Flip the sandwich over and cook 3 minutes more, until bread is toasted and the cheese has melted.
