HEARTY LENTIL SOUP (DUTCH OVEN RECIPE)



Hearty Lentil Soup (Dutch Oven Recipe) image

This comforting Hearty Lentil Soup recipe is easy to make. It's prepared in a Dutch oven on the stove top and is vegan and gluten free.

Number Of Ingredients 12

6 cloves garlic
1 onion
2 stalks celery
4-5 large carrots
2 Tbsp. olive oil
1 tsp. Italian seasoning
1 1/4 cup brown lentils
5 cups low sodium vegetable broth
1 15 oz. can crushed tomatoes
1 tsp. sugar
1/4-1/2 tsp. kosher salt (adjust to taste)
1/4-1/2 tsp. pepper (adjust to taste)

Steps:

  • Mince 6 cloves of garlic, 1 onion (can use white, red, or yellow), and 2 stalks of celery.
  • Chop 4-5 large carrots (about 3 cups) into slices. Make sure the carrots are of uniform thickness to ensure that they cook evenly.
  • Heat cast iron Dutch oven or large soup pan and add 2 Tbsp. olive oil.
  • Add the minced garlic, onions, and celery to the pan and saute for 4-5 minutes, stirring often.
  • Add the chopped carrots along with a generous pinch of salt and pepper. Saute for 5-6 minutes, stirring often.
  • Deglaze pan with 1/4 cup of vegetable stock or water if necessary.
  • Add 1 1/4 cup brown lentils, 1 15 oz. can crushed tomatoes, 1 tsp. sugar, 4 cups vegetable stock, 1 tsp. Italian seasoning, and 1/4 tsp. kosher salt and pepper.
  • Bring soup to boil, cover, and then reduce to a simmer/low boil.
  • Cook for about 45 minutes covered. Stir the soup every so often. Check to see if lentils and carrots have softened around the 45-minute mark. Continue to cook for another 5-10 minutes if necessary.
  • Add more vegetable stock to thin the soup out if necessary.
  • Serve with a warm loaf of gluten free crusty bread (or regular bread if not gluten free) (optional).

Brown lentils are the star of this dish. To boost flavor, we used a classic mirepoix-onion, celery and carrot - as well as thyme, bay and oregano for an herby finish. We found the fresh lemon juice and parsley at the end brightened up the soup and added a nice pop of color.

3 tablespoons olive oil
3 medium carrots, cut into 1/4-inch pieces
1 medium onion, diced
1 large celery stalk (about 2 ounces), cut into 1/4-inch pieces
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 large clove garlic, minced
1 1/2 cups dried brown lentils
4 cups vegetable stock
7 sprigs thyme, leaves stripped (about 1 teaspoon leaves)
1 bay leaf
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1 teaspoon lemon zest, plus the juice of 1/2 lemon (about 2 tablespoons)
1/2 cup flat-leaf parsley leaves, plus more for garnish, roughly chopped

Steps:

  • Heat the oil in a large heavy-bottom pot over medium-high heat. Add the carrot, onion, celery and 1 teaspoon salt and cook, stirring occasionally, until the vegetables are starting to caramelize and take on a dark brown color, 8 to 10 minutes (this step is important as it will add tons of flavor to your soup!).
  • Stir in the tomato paste and garlic and cook, scraping up the brown bits, until the garlic is fragrant and slightly softened, 1 to 2 minutes. Add in the lentils, stock, 4 cups water, thyme, bay leaf, oregano, red pepper flakes, lemon zest, 2 teaspoons salt and a generous amount of black pepper and stir to combine. Bring to a boil then reduce the heat to low. Cover and cook until the lentils are softened with just a bit of bite, 25 to 30 minutes.
  • Remove the bay leaf. Puree 2 1/2 cups of the soup in a blender until smooth then stir back into the pot. Stir in the lemon juice and parsley. Ladle into bowls and garnish with more parsley.

ATK: Lentils du Puy, sometimes called French green lentils, are ATK's first choice for this recipe, but brown, black or regular green lentils work, also. Cooking times will vary depending on the type of lentils used. It's important to note that lentils lose flavor with age (something that has never occurred to me) so it's wise to select from your freshest source. The soup can be made in advance. After adding the vinegar in step 2, cool the soup to room temperature and refrigerate it in an airtight container for up to 2 days. To serve, heat it over medium-low until hot, then stir in the parsley.

1 1/2 cups water
1 1/2 teaspoons balsamic vinegar
3 tablespoons minced fresh parsley leaves

Steps:

  • Fry bacon in large stockpot or Dutch oven over medium-high heat, stirring occasionally, until fat is rendered and bacon is crisp, 3 to 4 minutes. Add onion and carrots; cook, stirring occasionally, until vegetables begin to soften, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in tomatoes, bay leaf and thyme; cook until fragrant, about 30 seconds. Stir in lentils, salt and pepper to taste; cover, reduce heat to medium-low and cook until vegetables are softened and lentils have darkened, 8 to 10 minutes. Uncover, increase heat to high, add wine and bring to simmer. Add chicken broth and water; bring to boil, cover partially, and reduce heat to low. Simmer until lentils are tender but still hold their shape, 30 to 35 minutes; discard bay leaf.
  • Puree 3 cups soup in blender until smooth, then return to pot; stir in vinegar and heat soup over medium-low until hot, about 5 minutes. Stir in 2 tablespoons parsley and serve, garnishing each bowl with some of remaining parsley.

1 cup dry lentils, rinsed and drained
1 tablespoon vegetable oil
1 large onion, chopped
2 cloves garlic, chopped, or to taste
1 cup sliced celery
½ cup sliced carrots
2 potatoes, peeled and cubed
1 (8 ounce) can crushed tomatoes
¾ cup chopped fresh parsley
1 tablespoon red wine vinegar
1 teaspoon ground cinnamon
salt and ground black pepper to taste

Steps:

  • Place lentils in a pot with water to cover; bring to a boil. Drain, reserving water.
  • Heat oil in a skillet over medium-high heat. Saute onion until translucent, about 5 minutes. Add garlic; cook for 1 minute. Add celery and carrots; cook and stir until slightly tender, about 5 minutes. Add the partially cooked lentils, potatoes, tomatoes, parsley, vinegar, cinnamon, salt, and pepper; cover with water and bring soup to a boil.
  • Reduce heat to low; partially cover and let simmer until liquid is almost gone, 35 to 45 minutes.

1 tablespoon olive oil
2 brown onions (medium 300g, chopped)
2 garlic cloves (quartered)
2 stalks celery (200g, trimmed, chopped coarsely)
2 carrots (240g, peeled, chopped coarsely)
2 parsnips (500g, chopped coarsely)
1 kumara (500g, peeled, chopped coarsely)
1 tablespoon curry paste
2 cups vegetable stock (salt reduced 500ml)
1 liter water (4 cups)
1 cup red lentil (200g)
1 1/2 cups boiling water (extra 375ml)
2 slices bread (Low GI Burgen, toasted, to serve)
200 g low-fat yogurt
1/4 cup fresh coriander (coarsley chopped)

Steps:

  • Heat oil in a large saucepan, cook onions, garlic, celery, carrots, parsnip and kumara for about 10 minutes or until vegetables start to soften. Add curry paste and cook until fragrant.
  • Add stock, the water and lentils, bring to the boil.
  • Reduce heat, simmer for about 25 minutes or until vegetables and lentils are soft.
  • CORIANDER YOGHURT - Meanwhile blend half the yogurt with the coriander until smooth; stir in remaining yogurt. Refrigerate until required.
  • Blend or process soup in batches until smooth. Return soup to a clean pan, stir in extra boiling water and bring to the boil. (If using a stick/immersion blender you can do it in the pot and then had extra boiling water.).
  • Ladle soup into serving bowls, top with Coriander Yoghurt and a little freshly ground black pepper, if desired.
  • Serve with toasted bread cut into six servings.

2l vegetable or ham stock
150g red lentils
6 carrots, finely chopped
2 medium leeks, sliced (about 300g)
small handful of chopped parsley, to serve

Steps:

  • Heat the stock in a large pan and add the lentils. Bring to the boil and allow the lentils to soften for a few minutes.
  • Add the carrots and leeks and season (don't add salt if you use ham stock as it will make it too salty). Bring to the boil, then reduce the heat, cover and simmer for 45-60 mins until the lentils have broken down. Scatter over the parsley and serve with buttered bread, if you like.

2 tablespoons olive oil
2 cups finely diced onions
3 large garlic cloves
salt

3 tablespoons tomato paste
1/2 cup diced celery
1/2 cup diced carrot
2 bay leaves
1/2 cup chopped parsley (I use dried)
1 1/2 cups french green lentils or 1 1/2 cups brown lentils, washed
1 tablespoon Dijon mustard
1 tablespoon red wine or 1 tablespoon sherry wine vinegar

Steps:

  • In soup pot, sauté onion in oil until soft.
  • Work minced garlic into 1 teaspoon of salt to form a paste and add to onions.
  • Mix in tomato paste. Add celery, carrot bay leaves and parley. Cook 3 minutes.
  • Add lentils, 2 quarts of water and 1/2 tsp of salt and bring to a boil.
  • Lower heat and simmer 25-30 minutes till everything is tender.
  • Stir in mustard and vinegar. Garnish with celery leaves and parsley if desired.

2 cups brown lentils
1 onion
2 carrots
3 leaves cabbage
4 tablespoons vegetable oil
1 (1 ounce) package dry onion soup mix
1 teaspoon ground cumin
½ teaspoon ground black pepper
½ teaspoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
salt to taste
1 lemon

Steps:

  • Place lentils, onion, carrots and cabbage leaves in a pressure cooker and cover with 1 1/2 inches of water and 4 tablespoons oil. Cook about 10 to 15 minutes and then cool until pressure reduces, then open.
  • In a food processor or blender, puree soup until smooth. Add cumin, black pepper, cinnamon, all spice, cloves and nutmeg. Transfer to a stock pot and return to heat. When soup is just beginning to boil, stir in onion soup mix. Simmer until thickened and then just before serving season to taste with lemon juice and salt.

6 bacon strips, chopped
1 pound red potatoes (about 3 medium), chopped
