This cowboy-approved beef-and-bean chili recipe is a hearty dinner worthy of the whole family.

4 lb. ground beef
6 garlic cloves, minced
2 8-ounce cans tomato sauce
1 6-ounce can tomato paste
1/4 c. chili powder, plus more to taste
2 tsp. ground cumin
2 tsp. ground oregano
2 tsp. kosher salt, plus more to taste
1/2 tsp. cayenne pepper, plus more to taste
4 15-ounce cans beans (kidney and pinto), drained and rinsed
1/2 c. masa harina (corn flour) or regular cornmeal
Shredded cheddar, crumbled bacon and sliced jalapeños, for topping

Steps:

  • In a large heavy pot, brown the ground beef with the garlic until it's totally cooked. Drain off most of the excess fat, leaving a little behind for moisture and flavor.
  • Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the liquid level seems low, add up to 1½ cups water to keep the chili from burning.
  • Stir the beans into the chili. In a small bowl, combine the masa harina with 1/2 cup water and stir with a fork until smooth, then stir into the chili. Let simmer for another 10 minutes to thicken. Taste and adjust the seasonings. Top with cheese, bacon and jalapeños.

6 cans (16 ounces each) hot chili beans, undrained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 can (8 ounces) tomato sauce
1/4 cup chopped onion
2 tablespoons molasses
1 teaspoon salt-free Southwest chipotle seasoning blend
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Transfer to a 6-qt. slow cooker. , Stir in the remaining ingredients. Cover and cook on low for 6-8 hours or until heated through.

Steps:

  • COOK beef in skillet until browned. Pour off fat.
  • MIX beef, onion, garlic, soup, tomatoes, water, beans, chili powder and cumin in 3 1/2-qt. slow cooker.

2 pounds ground beef
1 cup chopped onion
1 cup red or green bell pepper
3 cloves garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can red kidney beans, rinsed and drained
2 (14.5 ounce) cans diced tomatoes, drained
1 (8 ounce) can tomato sauce
1 cup tomato juice or vegetable juice
3 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
3 tablespoons Sour cream
2 tablespoons Shredded Cheddar cheese

Steps:

  • Heat vegetable oil over medium heat in a large pot. Add ground beef, onion, bell pepper, and garlic. Cook until ground beef is browned and vegetables are starting to become tender. If desired, drain off fat.
  • Stir black beans, red kidney beans, diced tomatoes, tomato sauce, tomato juice, chili powder, cumin, basil, oregano, salt, and black pepper into pot. Bring to a boil. Reduce the heat to low. Cover and simmer, stirring occasionally, for 30 minutes. Serve with sour cream and cheese.

This is a recipe I found in Cooking Light. Besides being an awesome tasting chili, I really like this recipe because it uses stew meat instead of ground beef. It was very chunky and not overly spicy, a great recipe. The only thing that I did differently was to completely cook up the beef at the beginning and then I just cooked it for 10 to 15 minutes until it was heated at the end instead of simmering it for 1 1/2 hours as directed. Very good chili!!

1 1/2 lbs beef stew meat
3/4 teaspoon salt
1 1/2 cups onions, chopped

2/3 cup cabernet sauvignon wine or 2/3 cup dry red wine
1 1/2 tablespoons brown sugar

1 teaspoon ground red pepper
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/8 teaspoon ground cinnamon
1 (28 ounce) can diced tomatoes, undrained
1 (15 ounce) can dark red kidney beans, rinsed and drained
1 (15 ounce) can hot chili beans

Steps:

  • Heat 1 teaspoon oil in a large Dutch oven over medium-high heat; coat pan with cooking spray.
  • Sprinkle beef with salt.
  • Add half of beef to pan; saute 8 minutes or until browned. Remove from pan and repeat procedure with remaining beef.
  • Add remaining 2 teaspoons oil, onion, and bell pepper to pan; saute 3 minutes.
  • Add garlic and jalapeno; saute 1 minute.
  • Add wine, scraping pan to loosen browned bits; return beef to pan.
  • Stir in sugar and remaining ingredients; bring to a boil.
  • Cover, reduce heat, and simmer 1 1/2 hours or until beef is tender, stirring occasionally.
